CHERRY DELIGHT
Cherry delight is a classic crowd-pleaser that's sweet and simple. It's made with a buttery graham cracker crust, amazing cream cheese filling, and luscious cherry pie topping. This easy no-bake dessert recipe is perfect for sharing with your loved ones and is a great make ahead treat for potlucks, holidays and other celebrations!

Steps:
- Combine all crust ingredients and firmly press with fingers into a 9x9-inch pan or 9-inch pie dish.
- Using a stand or hand-held electric mixer, whip softened cream cheese until fluffy. Stir in the Cool Whip, confectioners' sugar, lemon juice and vanilla with the cream cheese until smooth.
- Spread cream cheese mixture over graham cracker crust.
- Pour cherry pie filling over cream cheese mixture and spread in an even layer. Refrigerate until firm, at least 1 hour or overnight. I chill mine overnight for best results. The longer this dessert is refrigerated, the better it will set up.
- Cut into squares and serve!

EASY CHERRY DELIGHT DESSERT (NO-BAKE)
This is a really great dessert, plan ahead this needs to chill for a minimum of 3 hours or overnight is even better.

Steps:
- Prepare a 9 x 9" baking pan.
- In a bowl, mix the graham cracker crumbs, melted butter and 1 tbsp sugar; spread on bottom of prepared baking pan to form a crust.
- Mix the Dream Whip topping according to directions on the package, then beat in the softened cream cheese into the Dream Whip a little at a time.
- Add the remaining sugar and vanilla until well blended.
- Smooth on top of the crust.
- Top with the cherry pie filling.
- Chill at least 3 hours (overnight is even better) if storing in the fridge overnight, cover with plastic wrap.

- Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
- Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
- Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
- Refrigerate for at least 2 hours before serving. I like to leave it overnight.
- Refrigerate leftovers.
"CHERRY DELIGHT SQUARES"
I would like to dedicate this recipe to my special ladies group of "SCARLET FLOOZIES" we belong to the OFFICIAL RED HAT SOCIETY CLUB. This is my original recipe and a combination of a cookie and a bread recipe,that I have in my recipe box.. Then I added my little touches and came up with this sweet little red (hat)cherry cookie, on my second baking attempt. I believe it is perfected....and now a sweet little bit of heaven! My ladies enjoyed it! They even asked for the recipe!

- Pre-heat oven to 350F. Line a 9x13 baking pan with buttered wax paper or parchment paper. Beat egg whites until foamy. Gradually add sugar and beat until whites form stiff peaks. again.Add salt and beat.
- Combine pecans, cherries melted butter and vanilla...and fold into whites, slowly and alternately with the combined flour.
- Spread into the baking pan, and smooth the top with a wet spatula. Bake till dry...about 35 minutes. Cool in pan. Remove,the cookie block, and cut into strips. **Be sure the waxed papr is removed from bottom of cookie. Then into little squares.
- Arrange on a pretty serving plate... Enjoy with company. These freeze well... if there is any left!....LOL
- NOTE: Here is the recipe to make your own CAKE FLOUR, from regular white flour. In a bowl mix 6 cups flour and add 12 Tablespoons of corn starch. Mix well...then only use what your recipe calls for.

CHERRY DELIGHT
This is my mom's recipe. It is a family requested recipe that she usually makes for Christmas. She's even added green food coloring to the cool whip to give it the festive look.

Steps:
- Melt butter, pour into a 9 x 13 dish add graham cracker crumbs.
- Press in bottom of 9 x 13 forming a crust.
- Bake 350 degrees for 8 10 minutes.
- Let cool.
- Beat cream cheese and powdered sugar with a mixer until smooth and creamy.
- Pour on top of cooled cracker crust smooth out.
- Pour cans of cherries on top of the cream cheese mixture then top the cherries with cool whip.
CHERRY DELIGHT
Steps:
- Preheat oven to 350°F. Stir together graham cracker crumbs, melted butter, granulated sugar, and salt in a large bowl until combined. Press mixture evenly into bottom of an 11- x 7-inch baking dish. Bake in preheated oven until crust is toasty and edges are golden, 12 to 14 minutes. Transfer baking dish to a wire rack; let crust cool completely, about 45 minutes.
- Beat heavy whipping cream in a medium bowl with an electric mixer on medium-high speed until stiff peaks form, about 1 minute. Set whipped cream aside. Beat cream cheese and sour cream in a large bowl with an electric mixer on medium speed until smooth, about 1 minute. Add powdered sugar and vanilla; beat until light and fluffy, about 2 minutes.
- Fold half of whipped cream into cream cheese mixture using a rubber spatula until just combined; repeat with remaining whipped cream. Spoon cream cheese mixture into cooled crust; smooth top using a small offset spatula. Pour cherry pie filling over cream cheese layer, spreading to edges of cream cheese mixture. Cover and chill until filling is firm, about 2 hours. Cut into 10 bars, and serve immediately.

- Preheat oven to 325 degrees. Coat a 9-by-13-inch baking dish with cooking spray. Line dish with parchment, leaving a 2-inch overhang on both long sides, then spray parchment.
- Sift flour, cocoa powder, baking soda, and salt into a large bowl. Cream butter and granulated sugar with a mixer until smooth. Add 2 eggs and 2 teaspoons vanilla, and beat until smooth, scraping down sides of bowl. Reduce speed to low; add flour mixture. Increase speed to medium; beat until incorporated.
- Reserve 1 cup of dough; cover, and refrigerate. Press remaining dough into bottom of prepared dish. Refrigerate for 30 minutes. Bake until base is set and edges are puffed, about 25 minutes. Let cool in dish on a wire rack.
- Mix cream cheese, confectioners' sugar, and remaining egg and 1/2 teaspoon vanilla in a medium bowl. Spread over cooled base; crumble reserved dough on top. Bake until filling is set, 25 to 30 minutes. Let cool in dish on wire rack, then lift out using overhang. Cut into 24 squares.
PINK LADY SQUARES
This is another of our family favorites that makes for an excellent addition to the serving tray. Looks very appealing on the holiday platter and great for special occasions. I often substitute the graham crumbs with crushed Nillas. Just as good untinted - but as my mom reminds me " always make the icing using the juice from a real lemon" - realemon will work but she's right ... that lemon juice makes for awesome!

- BASE: In large bowl mix graham wafer crumbs, butter and flour and press into a greased 9x9 inch pan.
- Bake at 275 degrees five minutes, take out of oven and cool.
- TOPPING: Mix the Eaglebrand condensed milk, coconut and pecans and spread over base.
- Bake at 325 for 20 to 25 minute (ovens may vary) being careful not to over bake.
- Cool and ice with Lemon Icing.
- Lemon Icing: In medium bowl beat together the butter, cream and lemon juice.
- Add in the icing sugar, adding more if needed for desired consistency and add just a small amount of food coloring to make for pale pink.

- Preheat oven to 375°. In a large bowl, cream the butter, sugars and extract until light and fluffy. Combine flour and salt; gradually add to creamed mixture and mix well.
