BRILLIANT BANANA LOAF
A cross between banana bread and a drizzle cake, this easy banana loaf recipe is a quick bake that can be frozen. It's great for using up overripe bananas, too.

Steps:
- Heat oven to 180C/160C fan/gas 4.
- Butter a 2lb loaf tin and line the base and sides with baking parchment.
- Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
- Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
- Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
- Cool in the tin for 10 mins, then remove to a wire rack.
- Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
- Drizzle the icing across the top of the cake and decorate with a handful of banana chips.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, stir in the mashed bananas.
- In a large bowl, sift together flour, baking powder, baking soda, salt. Blend the banana mixture into the flour mixture; stirring just to combine. Fold in the nuts.
- Bake in preheated oven for 60 minutes, until a toothpick inserted into center of the loaf comes out clean.

- Heat oven to 325 degrees. Butter an 8x4x2 1/2 inch loaf pan; dust with flour; tap out excess.
- Whisk flour, baking powder, salt and nutmeg in a small bowl until blended.
- In another small bowl, mash bananas with lemon zest and juice; stir in rum.
- Microwave chocolate and 2 T butter, stirring every 10 seconds, until melted and blended.
- Beat remaining butter with mixer on medium speed 3 minutes or until creamy. Add sugars; beat 2-3 minutes until light and smooth.
- Add eggs, 1 at a time. Beat in vanilla (batter will look curdled).
- Reduce mixer speed to low and beat in 1/2 the flour mixture just until blended. Beat in milk until combined, then remaining flour mixture. Scrape down bowl; beat in banana mixture (batter will look lumpy).
- Stir a little less than 1/2 the batter into melted chocolate to blend. Drop alternating spoonfuls of both batters into prepared pan. Using a table knife, swirl batters together, taking care not to overdo it.
- Bake 1 hour and 20 to 30 minutes (check cake after 45 minutes and cover loosely with foil if it's getting too brown), until a wooden pick inserted in center comes out with moist crumbs attached.
- Cool in pan on a wire rack 15 minutes before inverting on rack, turning right side up and cooling completely.

HEALTHY & DELICIOUS BANANA LOAF
This is probably the best banana loaf you'll ever taste! It's nice and moist, and flavorful too! And for all you nutrition ninjas like me out there, it's super healthy :) Hope you enjoy! PS I use ground rolled oats here because one day I ran out of flour, so I improvised, and it turned out great! ALSO: I have a VERY old oven, so for some reason the food cooks quicker, so I'd keep an eye on the loaf once you reach the 40 minute mark. AND raisins are totally optional. I use organic because conventional ones are sprayed with tons of nasty chemicals.

- Preheat oven to 350°F.
- Mix dry ingredients.
- Mash bananas with a potato masher (if you have a fancier or better tool, go for it).
- Mix with wet ingredients. (not raisins).
- Mix wet ingredients into dry ingredients.
- Fold in raisins. Try not to mix too much.
- Pour into a 8x5 or 8x4 or 8x3 pan. Whatever you have on hand.
- Cook about 45 minutes. I think it's closer to 1 hour, but my oven is really old and doesn't cook normally.
- *Once the top is set, I usually mix about 1 tbsp honey, 2 tbsp brown sugar and cinnamon and glaze the top. You can sprinkle some oats on there too!

BLACK SESAME AND LIME CAKE
This light, refreshing loaf cake uses oranges as well as limes to make it more citrusy. The black sesame seeds add flavour and a little crunch.

- Preheat the oven to 350°F (180°C). Butter a 9- by 5-inch (23- by 13-cm) or 8 1/2- by 4 1/2-inch (22- by 12-cm) loaf pan and line it with parchment paper.
- In a small skillet over medium heat, dry roast the sesame seeds until fragrant, 2 to 4 minutes. Transfer to a mortar and crush them lightly with the pestle.
- In a large bowl, combine the butter, sugar, flour, baking powder, eggs, zest, and juice, and mix with a hand mixer until the batter is light and creamy, about 2 minutes. Take care not to overbeat the batter as this can result in your cake sinking during baking. Add the crushed sesame seeds.
- Pour the batter into the prepared pan and bake until a skewer inserted into the center of the cake comes out clean, 35 to 40 minutes. Leave the cake to cool in the pan for 10 minutes, then turn out onto a wire rack and leave to cool completely.
- In a small bowl, mix the confectioners' sugar with the lime juice and zest to produce a runny paste. If necessary, stir in more lime juice to achieve the desired consistency.
- Spoon this mixture over the cake, then sprinkle some sesame seeds and lime rind strips on top to finish. This cake will keep in an airtight container for up to 5 days.

- Preheat the oven to fan 160C/ conventional 180C/gas Grease a 20 x 13cm loaf tin with non stick cooking spray.
- In a large bowl, whisk together the margarine and brown sugar with an electric beater or with a fork.
- Beat in the eggs.
- Stir in the mashed bananas, chocolate chips, craisins and yogurt.
- Fold in flour and baking soda until evenly mixed.
- Spoon the mix into the greased tin and level the top
- Bake for 1 hour, 10 minutes or until middle is only slightly moist - check this using a toothpick or skewer.
- Once you remove the loaf from the oven let cool on a cooling rack for at least 10 minutes before removing from tin.
