This recipe for a classic hot fudge sauce came to The Times in 2004, from Kay Rentschler. "A well-constructed homemade hot fudge sauce moves forward with dark smoky accents and arrives with plenty of chew," she wrote. Here, bittersweet chocolate and high-fat Dutch process cocoa bring that smokiness, while heavy cream, butter and sugar mellow it out. It's a perfect contrast to the milky sweetness of a sundae loaded with vanilla ice cream and whipped cream.

Number Of Ingredients 8

2 cups heavy cream
4 tablespoons unsalted butter
1/2 cup light brown sugar
3/4 cup granulated sugar
1/4 teaspoon fine sea salt
2 ounces bittersweet chocolate in small pieces
1 1/4 cups sifted high-fat Dutch-process cocoa like Valrhona, Pernigotti or Droste (sift, then measure)
1/2 teaspoon vanilla extract

Steps:

  • In medium saucepan, combine cream, butter, sugars and salt. Bring to a simmer over medium-low heat. Simmer 45 seconds. Add chocolate, and whisk to dissolve. Remove from heat, add cocoa, and whisk until no lumps remain.
  • Return pan to low heat, and simmer sauce until glossy, whisking constantly, 20 seconds. Remove from heat, and stir in vanilla. Serve warm. To reheat sauce, warm in a saucepan over low heat, stirring constantly. Do not boil.

24 ounces semisweet chocolate, coarsely chopped
8 ounces unsweetened chocolate, coarsely chopped
3 1/2 cups half-and-half or 3 1/2 cups light cream
1 3/4 cups sugar
1 teaspoon vanilla
vanilla ice cream

Steps:

  • In a 4-quart Dutch oven combine the chocolates, half-and-half or light cream, and sugar.
  • Bring to boiling; reduce heat.
  • Simmer mixture, uncovered, over low heat about 2 minutes or until mixture is creamy, stirring frequently.
  • Remove from heat; stir in the vanilla.
  • Pour the hot sauce into 7 or 8 hot, clean half-pint jars or 16 (4-ounce) jars, leaving a 1/2-inch headspace.
  • Place metal lids on jars.
  • Screw metal bands onto jars following manufacturer's directions.
  • Store chocolate sauce in the refrigerator for up to 3 weeks.
  • (The sauce must be stored in the refrigerator after placing in jars. Even though the hot sauce may cause the lids on the jars to seal, this is not a secure canning seal. Do not store at room temperature.) Serve sauce warm* over ice cream, eclairs, or fresh berries.
  • Makes eight 1/2-pint or sixteen 1/2-cup jars (128, 1-tablespoon servings)*Note: To reheat, place 1/2 cup sauce in a 1-cup glass measure.
  • Microwave, uncovered, on 100% power (high) for 1-1/2 to 2 minutes or until heated through, stirring once.
  • Or, place in a small saucepan.
  • Cook and stir over medium heat about 5 minutes or until heated through.

  • Place mixture over medium heat and stir until sugar is dissolved. Add butter.

1 cup sugar
1 cup Dutch process cocoa
1 1/4 cup lowfat (1 percent) buttermilk
1 teaspoon vanilla extract

Steps:

  • Combine the sugar and cocoa in a heavy bottomed medium saucepan. Whisk in just enough buttermilk to form a smooth paste. Whisk in the remaining buttermilk. Cook over medium heat until the mixture simmers and begins to boil, stirring constantly with a wooden spoon, scraping the sides and bottom of the pan. Boil gently for 3 minutes, stirring constantly to prevent burning. Remove from the heat and stir in the vanilla. Cool. Serve at room temperature or slightly warm. Sauce may be stored in the refrigerator up to one week.

1/2 cup butter, cut into small pieces
4 ounces best-quality chocolate, coarsely chopped (semisweet works too)
3/4 cup sugar
4 egg yolks, room temperature
1 tablespoon instant coffee, dissolved in
1 tablespoon rum
1 teaspoon vanilla
1/4 cup all-purpose flour
5 egg whites, room temperature
1 pint premium-quality vanilla ice cream
2 tablespoons rum

Steps:

  • Position rack in center of oven and preheat to 450°F.
  • Butter a 1-quart soufflé dish and sprinkle with sugar.
  • Melt butter with chocolate, stirring until smooth.
  • Blend in ¼ cup of sugar, yolks, coffee mixture and vanilla; stir in flour (can be prepared several hours ahead and set aside at cool room temperature. Reheat before continuing.) Beat whites in large bowl until soft peaks form; gradually add remaining ½ cup sugar, beating, until whites are stiff but not dry.
  • Fold ¼ of whites into chocolate mixture, then fold chocolate back into whites (be careful not to deflate - a few streaks of white may remain).
  • Gently turn batter into prepared dish.
  • Sprinkle lightly with sugar.
  • Bake 5 minutes.
  • Reduce oven temperature to 400F and continue baking until puffed, about 20 minutes (center will remain moist).
  • Serve immediately with sauce.
  • (and remember - A SOUFFLE WAITS FOR NO ONE).
  • Vanilla Ice Cream Sauce: Let ice cream soften 10 minutes; add rum and beat until smooth.

2 ounces unsweetened chocolate, chopped
2 teaspoons instant espresso powder
3 cups granulated sugar
1 (12 ounce) can fat-free evaporated milk
1 1/2 cups walnut pieces, toasted
1 tablespoon vanilla extract

Steps:

  • Line a 13x9 metal baking pan with foil, leaving overhang.
  • Combine first 4 ingredients in large bowl.
  • Stir sugar, and evaporated milk in heavy large deep saucepan over medium heat until sugar dissolves and mixture comes to a boil.
  • Attach clip on candy thermometer to side of pan.
  • Boil until temperature registers 234* F, stirring constantly and adjusting the heat to avoid boiling over, about 10 minutes.
  • Immediately pour milk mixture over chocolate mixture.
  • Whisk until chocolate and butter melt and fudge is smooth.
  • Mix in nuts and vanilla.
  • Spread fudge evenly in prepared pan.
  • Refrigerate uncovered until cold and set -- about 3 hours.
  • Using foil as an aid, lift fudge from pan. Cut crosswise into 7 strips, then lengthwise into 5 strips.
  • Return to pan and cover and chill.Can be made 2 weeks ahead.
  • Keep covered and chilled.
  • Bring to room temperature before serving.

Steps:

  • Chop chocolate finely using a serrated knife, and place in a heat-proof bowl.
  • Bring cream to a boil over medium-high heat; pour directly over chopped chocolate. Let sit 10 minutes; use a rubber spatula to stir the chocolate and cream gently until smooth and combined. Store in an airtight container, refrigerated, up to a week. Warm gently in a heat-proof bowl, or the top of a double boiler, set over a pan of simmering water before using.

Steps:

  • 1. In a 3- to 4-quart slow cooker, combine half-and-half, milk, and cinnamon sticks. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2-1/2 to 3 hours.
  • 2. Remove and discard cinnamon sticks. If necessary, skim "skin" from surface; discard. Stir in chocolate pieces; whisk until chocolate is melted and smooth. Stir in vanilla.
