- To make "eyeball" garnish, use the tip of a paring knife or a small melon baller to carve a 1/2-inch well into one side of a large cocktail onion. Slice pimento in half crosswise and insert a half into well of onion; skewer and set aside.
- Pour gin and amaro into a cocktail shaker filled with ice; shake 10 seconds. Strain into a chilled martini glass and serve with garnish.
