  • Heat oven to 400℉ (200℃). Grease 10 inch pie plate or 8 inch square. Sprinkle fillings, onions and cheese in plate. Beat remaining ingredients until smooth and pour into plate. Bake 35 to 40 minutes or until a knife inserted halfway between edge and center comes out clean. Let stand 5 minutes before serving.

16 oz. steamed broccoli florets (cut into small pieces (about 2 cups))
8 oz. shredded cheddar cheese ((about 2 cups))
chopped bacon or ham (optional, see notes)

Steps:

  • Preheat oven to 350 and grease a quiche or pie dish (or baking dish up to 9x13 inches) with butter or oil. Place prepared dish on a rimmed baking sheet lined with foil, just in case of overflow while baking. Set aside.
  • In a large bowl, whisk the eggs (4), milk (1.5 cups), bisquick (3/4 cup), kosher salt (1/2 teaspoon), and black pepper (1/2 teaspoon) until well combined.
  • Stir in the grated parmesan cheese (1 cup), the steamed broccoli florets, and the shredded cheddar cheese (8 oz./2 cups).
  • Pour batter into greased dish and bake (on a foil covered baking sheet in case of overflow) for about 60 minutes or until golden brown on top and set (it shouldn't jiggle when you shake it).
  • Allow to cool for at least 10 minutes before slicing and serving.

  • Mix three ingredients together (eggs, Bisquick and milk) - either mix in blender for 30 seconds or hand mix with a whisk. Grease bottom of Pyrex glass 10 inch pie pan. 1 small onion, diced

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a bowl, add broccoli, potatoes, 1 cup (100 g) cheddar, ½ teaspoon salt salt, and ¼ teaspoon pepper. Stir to combine.
  • Grease a 9-inch (23 cm) nonstick tart pan with olive oil. Pour the broccoli mixture into the pan. Press evenly into the pan and the sides of the pan until firm using a measuring cup.

1 homemade or store-bought single-crust pie dough
1 tablespoon unsalted butter
2 cups medium diced yellow onion (from 1 large onion)
Coarse salt and ground pepper
6 large eggs
3/4 cup heavy cream
3/4 pound broccoli florets, steamed until crisp-tender
1 cup grated sharp cheddar (4 ounces)

Steps:

  • Preheat oven to 375 degrees. Lightly flour a rolling pin and work surface and roll out dough to a 12-inch round. Place in a 9-inch pie plate, fold overhang under, and crimp edge. 1 1/4 cups Betty Crocker™ All-Purpose Gluten Free Rice Flour Blend
1 teaspoon xanthan gum
1/2 teaspoon salt
6 tablespoons cold butter, cut in small pieces
1 egg yolk
1 tablespoon cider vinegar
5 to 6 tablespoons cold water
4 eggs
1 cup half-and-half
1/2 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1 cup frozen (thawed) chopped broccoli
1 cup shredded Cheddar cheese (4 oz)
3/4 cup cut-up gluten-free fully cooked ham
1/2 cup finely chopped onion

Steps:

  • In food processor, place flour blend, xanthan gum and salt. Cover; process until combined. Add butter; pulse 3 to 5 times or until mixture looks like coarse crumbs.
  • In 1-cup measuring cup, beat 1 egg yolk, cider vinegar and 3 tablespoons cold water with fork. With food processor running, quickly pour egg mixture through feed tube, and process a few seconds until dough begins to come together. (Add additional water if necessary.) Remove dough; shape into flattened disk.
  • Heat oven to 450°F. On 12-inch square of cooking parchment paper lightly sprinkled with flour blend, roll dough into 11-inch circle. Carefully center ungreased 9-inch pie plate over circle. Turn crust and pie plate over to place crust into pie plate. Remove paper. Ease crust into pan, repairing any tears with wet fingers. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired. Do not prick. Line crust with double thickness of foil. Bake 8 minutes; remove foil. Bake 4 to 5 minutes longer or until pastry is set and dry. Reduce oven temperature to 325°F.
  • For Filling, in medium bowl, beat eggs lightly with whisk or hand beater. Beat in half-and-half, salt and red pepper. Sprinkle broccoli, cheese, ham and onion in partially-baked crust. Pour egg mixture evenly over broccoli mixture. Bake 45 to 50 minutes or until knife inserted near center comes out clean. If necessary, cover edge of crust with foil to prevent overbrowning. Let stand 10 minutes before serving.

11 tablespoons chilled unsalted butter, cut into pieces
Filling and assembly:
1 tablespoon olive oil
1/2 small shallot, chopped
1 garlic clove, finely chopped
1 small head of broccoli (about 8 ounces), halved lengthwise, chopped (about 3 cups)
1 bunch small Swiss chard, ribs and stems removed, leaves coarsely torn (about 4 cups)
4 ounces feta, crumbled (about 1 cup)
2 ounces sharp cheddar, grated (about 1 cup)
6 large eggs
3 large egg yolks
1 3/4 cups heavy cream
1 cup half-and-half or heavy cream or whole milk
3 tablespoons chopped chives
1 teaspoon kosher salt
Freshly ground black pepper
Special Equipment
A 9-inch springform pan

Steps:

  • Crust:
  • Whisk salt and 2 cups flour in a large bowl to combine. Work in butter with your fingers until largest pieces are pea-size. Drizzle in 1/4 cup ice water and rake with your fingers to combine. Turn dough out onto a work surface and lightly knead to work into a shaggy dough (no dry spots should remain). Flatten into a disk; wrap in plastic and chill until firm, at least 2 hours and up to 2 days ahead.
  • Place a rack in middle of oven; preheat to 350°F. Roll out dough on a lightly floured surface to a 14" round. Transfer dough to pan. Lift up edges and allow dough to slump down into pan, then pat into corners and up around the sides of pan. Smooth out dough so it doesn't have any creases or folds and trim to just below the rim. (Save any scraps for patching.) Freeze until very firm, about 20 minutes.
  • Line dough with 2 layers of overlapping parchment paper and fill with pie weights or dried beans (ideally right up to the rim; pillage the pantry for old dried beans and rice to get you there). Bake until crust is golden brown all the way around edges (peek below the parchment), 60-75 minutes. Carefully remove parchment and pie weights. If needed, patch any cracks with reserved dough trimmings and bake crust just until patches are opaque, about 5 minutes. Let crust cool.
  • Filling and assembly:
  • Reduce oven heat to 325°F. Heat oil in a large skillet over medium. Cook shallot and garlic, stirring occasionally, until softened, about 5 minutes. Add broccoli and cook, tossing occasionally, until crisp-tender, about 5 minutes. Add Swiss chard leaves and cook, tossing often, just until wilted, about 2 minutes. Let cool. Stir in feta and cheddar.
  • Whisk eggs, egg yolks, cream, and half-and-half in a medium bowl just to combine. Mix in chives and salt; season with pepper. Scrape vegetable mixture into crust, then carefully pour in egg mixture. Bake quiche until filling is lightly browned and set across the surface but slightly wobbly in the center inch or two, 75-90 minutes. Let quiche cool in pan before unmolding and slicing.
  • Do Ahead
  • Quiche can be baked 2 days ahead. Cover and chill.

Low Fat Bisquick Crust Bacon and Cheese Quiche image

Amazingly, the quiche will form its own crust. I think this quiche tastes best when it's made the evening before and heated up the next morning. If you use a blender instead of a whisk, process the Bisquick, eggs, milk, pepper and salt for about 15 seconds; afterwards, by hand mix in the onion and garlic. Optional: Use ½ lb Canadian bacon in place of bacon and top with tomatoes. Or Swiss cheese instead of cheddar.

1 small onion, chopped & sauteed
1 teaspoon garlic, chopped & sauteed

  • Preheat oven to 350.
  • Cook the bacon in a medium frying pan. If you use turkey bacon I recommend spraying the pan with cooking spray.
  • After you have removed the bacon from the pan, use the same pan to sauté the onion and garlic over medium heat until softened.
  • While the onion and garlic cook, chop up the bacon.
  • In a large bowl beat the eggs and milk until just blended.
  • Add to that mixture the Bisquick, onion, garlic, salt and pepper. Mix by wire wisk for about 1 minute (some small Bisquick lumps are fine).
  • Spray pie plate or muffin tins with cooking spray.
  • Pour Bisquick mixture evenly into the pie plate or muffin tins.
  • Sprinkle bacon and cheese on top of egg mixture; gently press below surface with fork.
  • Bake the quiche until the top is golden-brown and a knife inserted near the center comes out clean. If you have a thermometer the internal temperature of the quiche should be between 165 - 185 degrees Fahrenheit. Let stand at least 10 minutes before cutting.
  • Baking time: Pie plate - 40-50 minutes or Muffin tin - 20-25 minutes.
  • Makes 8 servings: 1 slice of quiche or 2.5 muffin size quiches.
