STOVETOP BREAD
Baking bread doesn't mean the house has to bake too. This recipe lets you bake a loaf on top of the stove instead of in it, keeping your kitchen cool.

Steps:
- Butter a 9-inch Dutch oven and set aside.
- Combine the butter, yeast, sugar, salt and 1 cup warm water in a stand mixer fitted with the dough hook attachment. With the mixer on low speed, add 1/2 cup of the flour at a time, waiting for each addition to be fully incorporated before adding more. Once all of the flour is added, knead on medium speed for 8 minutes.
- Transfer the dough to the prepared Dutch oven, cover and let rise until doubled in size, about 1 hour.
- Put the pot over medium-low heat and cook until the internal temperature of the bread registers 200 degrees F, 20 to 25 minutes. Let the bread cool in the pot for 5 minutes, then turn out onto a rack and let cool completely.
SKILLET BISCUITS
This recipe is more about the technique than the ingredients. I've added a bit more description since the first review. Making biscuits in a skillet rather than the oven is something I picked up from Joy of Cooking. It's a great alternative when you just don't want to heat up the kitchen by turning on the oven. Any rolled biscuit dough will do. NOTE: The texture may be a bit different when the biscuits are made on the stovetop, sometimes mine are a bit more dense than when baked, but they taste really good. I'm including the buttermilk biscuit recipe from Joy of Cooking, which is also wonderful and tender when rolled and baked. Yield is approximate, depending on the recipe you end up using.

Steps:
- Mix together dry ingredients in a large bowl.
- Cut in shortening or butter.
- Add and lightly mix buttermilk.
- Turn dough onto a floured surface and knead gently for 1/2 minute.
- Pat the dough to a thickness of 1/4 inch.
- Cut with a biscuit cutter (or knife, depending on what shape you like).
- If you want to bake the biscuits, bake 10-12 minutes at 450.
- For skillet biscuits:.
- Cook the biscuits on a lightly greased hot skillet/griddle about 1 inch apart.
- Use your best judgement as to the heat - I generally use a more moderate flame and brown biscuits 3 to 4 minutes each side, though the original recipe says to brown them for 5-7 minutes each side over high heat.
- As mentioned above - the biscuits will not be light and fluffy like with baked biscuits - so don't wait for them to rise and be puffy. They will be more dense.
- The best approach is to keep an eye on them and turn them when they are browned and dry-looking on one side before turning them over.

Steps:
- Lightly grease a 14" dutch oven or line with parchment paper.
- Preheat to 500 degrees. This is a hot oven so use lots of coals on the bottom and the top to preheat. Be sure to remove most of the bottom coals just before you begin to bake the biscuits or you'll burn the bottoms.
- In a mixing bowl, sift together the dry ingredients.
- Cut in the shortening with a pastry blender, or two knives. Your done when there are little balls of dough about the size of a pea.
- Pour in all of the milk at once. Stir with a fork until just mixed. Too much mixing will release the gluten and make a heavy biscuit. The dough will be quite wet but able to retain its shape.
- Use a soup spoon and drop the biscuits into the dutch oven. Give each biscuit a little room to grow.
- Place the lid on loaded heavy with hot coals. Place the oven back on a bed of just a very few coals. Bake for 8 to 10 minutes, or until golden brown.
- Remove and serve immediately with lots of butter and sweet jam.
