WHITE TRASH HAMBURGER GRAVY AND BREAKFAST BISCUITS
This was my sister's favorite thing to eat when she was growing up. She wouldn't let anyone but me make it for her.

Steps:
- Cook and drain beef. (I rinse the beef under hot water to remove all of the grease -- it is rich enough!).
- Melt butter in a pan and when melted and lightly sizzling add the flour.
- Whisk until combined and gently simmer the butter/flour mixture for about two minutes to remove the flour/starch taste but don't let it brown any.
- Add the 1.5 cups of milk and quickly whisk until smooth. SImmer until thick over medium heat stirring constantly. It will be quite thick.
- Add the half and half cream and quickly whisk until smooth.
- Cook over low heat until thickened.
- Add the beef and adjust the seasonings.
- Serve over good biscuits well buttered.
- This is a very creamy and rich gravy. You may use 2 cups whole milk if you need to omit the cream.
- If it is too thick for your taste -- then dilute with more milk -- but it usually is perfect the way it is written.
- Leftovers are excellent.

BISCUITS AND GRAVY

- In a large pot, add sausage and cook until browned and cooked through. Drain grease and add flour to sausage. Cook over medium-high heat until the sausage is well-coated with the flour. Add milk and stir until desired thickness and add salt and pepper, to taste. Serve with biscuits.

Steps:
- In a large skillett add meat, salt& pepper.
- Brown really well and do not drain meat unless you are using hamburger and the amount of fat is quite a bit.
- Sprinkle flour over meat and stir well.
- Once the flour is mixed in well and browned really well, slowly add milk stirring constantly until nice and thick.
BREAKFAST BISCUITS AND GRAVY

- Biscuits: Combine and sift dry ingredients. Gently knead in the butter. Add buttermilk and knead on a floured board. Knead gently and sparingly.
- Form a flat mass about 1 1/2 cm high. Cut biscuit rounds with a largish water glass.
- Bake in 200° C preheated oven on parchment paper on a baking tray for 10 mins or until a middle brown colour.
- Saute the Pork mince with 30g of the butter in a small frying pan; add the herbs and spices. Grill the bacon until crispy.
- Take the mince from the frying pan. Make a roux in the frying pan (don't clean it!) using the rest of the butter, the plain flour and the milk. Whisk continuously. It will take about three to four minutes. Make sure all the flour has had time to cook.
- Add the mince to the roux and mix well. Chop the bacon into crumbs and add to the mince/roux.
- Halve the biscuits and pour the gravy onto them. Enjoy!

- Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- Whisk 2 cups flour, baking powder, sugar, and salt together in a bowl; cut shortening into flour mixture with a pastry cutter until mixture is crumbly. Mix in egg and milk until incorporated. Turn dough out onto a well-floured work surface and knead for 1 minute.
- Roll dough out to a thickness of 3/4 to 1-inch thick, cut with a biscuit cutter, and place biscuits onto prepared baking sheet. Brush tops of biscuits with melted butter.
- Bake in the preheated oven until biscuits are golden brown, 8 to 10 minutes.
- Cook and stir sausage in a large skillet over medium heat until browned and crumbly, about 10 minutes. Drain excess grease. Stir 1/4 cup butter into sausage until butter has melted and mix in 1/4 cup flour until thoroughly combined. Pour evaporated milk and water into sausage mixture, bring gravy to a simmer, and reduce heat to low; simmer gravy until thickened, about 5 minutes. Season gravy with salt and black pepper to taste.

- 1. In a medium bowl, combine ground beef, Italian sausage, chopped onion, salt and pepper. Using your hands, mix together and form into patties.
- 2. Cook patties on medium high heat on a grill or on a grill pan. Cook for about 16 minutes, flipping half way through cook time. Two minutes before they are done, add pepperjack cheese to patties to melt.
- 3. While burgers are cooking, prepare the gravy. Saute 1/2 pound ground sausage in a skillet. Once cooked remove from skillet and drain. Set aside
- 4. Add butter, onions, tomatillos, and jalepenos to the skillet. Cook for 6 minutes, until reduced in size. Add back the Italian sausage. Sprinkle with flour and whisk in milk, salt, pepper, cayenne, and garlic powder. Bring to a boil, then remove from heat.
- 5. To plate, slice biscuit in half. Add patty, top with gravy and other half of biscuit. Garnish with cilantro, jalepeno, and lime juice.
MAKE-AHEAD BISCUITS & GRAVY BAKE

- In a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Remove with a slotted spoon; discard drippings, reserving 1/4 cup in pan. Stir in flour until blended; cook and stir until golden brown (do not burn), 1-2 minutes. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Stir in sausage, pepper, paprika and chili powder. Pour into a greased 13x9-in. baking dish. Cool completely., Meanwhile, in a large bowl, mix baking mix, sour cream and melted butter until moistened. Turn onto a lightly floured surface; knead gently 8-10 times., Pat or roll dough to 3/4-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place biscuits over gravy. Refrigerate, covered, overnight., Preheat oven to 400°. Remove casserole from refrigerator while oven heats. Bake, uncovered, until gravy is heated through and biscuits are golden brown, 22-25 minutes., Freeze option: Cover and freeze unbaked biscuits and gravy. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 400°. Bake as directed, increasing time as needed until gravy is heated through and biscuits are golden brown.
