When I think of comfort food, this is the first dish that comes to mind. This is one of my family's favorite dishes. I make it often, especially when it is cold and rainy outside.

3 chicken breasts
6 cups water
3 stalks celery
1/2 onion, quartered
1 teaspoon poultry seasoning, to taste
1 teaspoon salt, to taste
1/2 teaspoon black pepper, to taste
1 1/2 tablespoons chicken base (such as Minor's)
2 cups carrots, peeled and diced
3 cups potatoes, peeled and diced
1/2 teaspoon black pepper, to taste
1 teaspoon salt, to taste
1 teaspoon onion powder, to taste
3/4 teaspoon poultry seasoning, to taste
1/2 cup onion, coarsely chopped
1 cup frozen peas, thawed
1/2 cup celery, coarsely chopped
1 (12 ounce) can evaporated milk
1/3-1/2 cup flour (or enough to thicken sauce as desired)
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1/3 cup shortening
3/4 cup milk

Steps:

  • Put chicken breasts in a large pot with water, 3 stalks celery, 1/2 onion, 1 teaspoon poultry seasoning, 1 teaspoon salt, 1/2 teaspoon pepper, and Minor's chicken base. Simmer, covered, until chicken is tender. Remove chicken and let cool. Tear chicken into bite-sized pieces; set aside.
  • Reserve 4 cups of the broth in the pot; discard the cooked vegetables. To the broth, add the carrots, potatoes, 1/2 teaspoon pepper, 1 teaspoon salt, onion powder, and 3/4 teaspoon poultry seasoning. Cook for 10 minutes. Add 1/2 cup chopped onion, peas, and 1/2 cup chopped celery. Cook for an additional 10 minutes or until vegetables are tender; add chicken.
  • In a small bowl, add flour to the evaporated milk; stir into the vegetable mixture. Cook until the mixture thickens (add more flour if necessary). Adjust seasoning, if necessary. Pour the mixture into a greased 9x13" baking dish. Top with biscuit rounds, cutting some in half, if necessary, to cover top of mixture. Bake in a 400 degree oven for 25 minutes, or until biscuits are golden brown and mixture is bubbly. Remove from oven and brush tops of biscuits with butter or margarine.

  • In a medium bowl, stir together flour, baking powder, and salt. Cut in shortening until mixture resembles coarse meal. Add milk; mix well. Turn dough onto a lightly floured surface. Roll out to 1/2" thickness. Cut with 2-3/4" biscuit cutter. Makes 15 biscuits.

12 oz yukon gold potatoes, washed and cut into 1/2" cubes
2 tsp chopped fresh rosemary, divided
1-1/2 lb top round steak
feather and fowl herb mix (tom's market)
16 oz frozen peas and carrots
24 oz home-style brown gravy
1 Tbsp roasted garlic base (better than bouillon)
1 tsp dried thyme
1 tsp black pepper
14 oz refrigerated flaky buttermilk biscuits

Steps:

  • 1. Preheat oven to 450°F. If possible, preheat a second oven drawer or a toaster oven on broil. In a medium bowl, combine potatoes, 1/2 of rosemary, salt and pepper to taste, and a drizzle of olive oil. Mix until thoroughly coated. Layer on a baking sheet and bake for 25 minutes, stirring up halfway through roast time. Reduce heat to 375°F while prepping the rest of the recipe.
  • 2. Once potatoes are in, pat steak dry. Sprinkle both sides with Feather and Fowl (http://tomsmarket.biz/store/rubs/feather-n-fowl/) to personal preference (1 - 2 tsps?). Place steak on a broiler pan. When broiler is pre-heated, stick broiler pan in, close to the heating element, and broil for 5 minutes per side. The meat may seem undercooked, but you'll be cooking it for 40 minutes more, so no worries. Pull out and let rest for 5 minutes. Cut into 1/2" cubes. **Alternatively, you may want to grill your steak -- whichever way suits your preference.**
  • 3. In a large mixing bowl, combine gravy and roasted garlic base, 1 tsp at a time, until flavored to your preference. Add the rest of the fresh rosemary, thyme, and pepper and mix thoroughly. Add vegetables, potatoes when they come from oven, and steak after it's been cubed.
  • 4. Spray a 2 quart casserole dish with non-stick cooking spray. Pour gravy mix into dish. Place in oven and bake for 40 minutes. Remove from oven and raise temperature to 400°F.
  • 5. Place biscuits on top of heated gravy mix, in whatever pattern you like. Return to oven and bake for 8 - 10 minutes or until biscuits are golden brown. Serve immediately.

3 tablespoons chopped onion
2 tablespoons chopped green pepper
1/2 cup diced celery

2 cups meat stock (or part milk for creamy filling)
1 to 1 1/2 cups mixed vegetables (or diced cooked carrots)
9 frozen or homemade refrigerator biscuits

Steps:

  • Gather the ingredients.
  • Heat the oven to 450 F (230 C/ Gas 8). Butter a 9-inch deep-dish pie plate or 1 1/2-quart baking dish.
  • In a skillet over medium heat, melt the butter. Add the onion, bell pepper, celery, and diced meat. Cook, stirring until the vegetables are tender.
  • Add the flour slowly and cook stirring constantly, for 3 to 5 minutes. The roux should be lightly browned. Add remaining ingredients and stir to blend. Bring it to a simmer.
  • Meanwhile, if making homemade biscuits, prepare the dough and cut them out.
  • Pour the meat mixture into the prepared baking dish. Cover with the ready-made or homemade biscuits.

I adopted this recipe and made a few changes when I prepared it. I don't care for canned mixed veggies and don't usually have frozen mixed vegetables on hand. Therefore, I chopped up a couple of carrots and microwaved in a bit of water until tender; microwaved the potato and cubed it; sauteed some chopped onion in olive oil; defrosted some corn and peas; and stirred all of this together with a jar of beef gravy. My steak was round steak that I had slow cooked in the oven with beef broth after seasoning with Montreal steak seasoning. My husband thought that this was a winner, and I will surely repeat it again with leftover roast beef and steak. The comments of the original chef are as follows: "I found this in a cookbook of mine and made a few changes to suit my tastes better. It's a great way to use up leftover steak. Or you can change the meat and/or gravy and veggies to suit whatever meat you have leftover. I hope you'll enjoy it, too!"

1 tablespoon vegetable oil
1 pound cubed beef stew meat
1 large onion, chopped
1 (1 ounce) package dry mushroom gravy mix
1 cup water
1 teaspoon Worcestershire sauce
1 pinch salt and pepper to taste
1 sheet frozen puff pastry, thawed
1 egg
1 tablespoon water

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add beef stew meat, and cook until browned on the outside. Add the onion; cook and stir until tender, about 5 minutes. Stir in the mushroom gravy mix and 1 cup of water. Season with Worcestershire sauce, salt, and pepper. Turn heat to low, and simmer for 20 to 30 minutes.

3 tablespoons plain flour
1 teaspoon English mustard powder
salt

1 kg stewing beef, trimmed and cut into cubes
4 tablespoons vegetable oil
2 onions, sliced
2 garlic cloves, finely chopped
2 cups Guinness stout
2 tablespoons Worcestershire sauce
2 bay leaves
1 tablespoon fresh thyme, chopped
1 teaspoon dark brown sugar
1 cup chestnut mushrooms, halved if large
2 cups plain flour
1/2 teaspoon baking powder
salt
2 teaspoons fresh thyme, chopped
black pepper, freshly ground
1/2 cup suet, shredded

Steps:

  • Preheat the oven to 160°C.
  • Combine the flour, mustard and pepper, then coat the beef in th emixture.
  • Heat 2 TB of oil in a heavy based frying pan. Fry a third of the beef for 3-4 minutes until browned. Transfer to an oven proof dish and fry the rest of the beef in 2 more batches.
  • Add a tablespoon of oil to the pan, then fry the onions for 5 minutes. Add the garlic and cook for 2 minutes.
  • Stir in the Guinness, Worcestershire sauce, bay leaves, thyme and sugar and simmer for 2-3 minutes.
  • Pour over the beef, then cover and cook for 2 hours.
  • Remove the dish and increase the oven temperature to 190°C
  • Fry the mushrooms in the rest of the oil. Stir into the beef, then transfer to a 15x20cm pie dish.
  • PASTRY CRUST:.
  • Sift together the flour, baking powder and half a tspn of salt, then add the thyme, and pepper to taste.
  • Stir in the suet and bind with 10-12 tablespoons of water to forn a soft dough.
  • Roll out the dough, dampen the edges of the dish and cover it with the pastry.
  • Trim, then make a small slit in the centre.
  • Cook for 30-40 minutes, until golden.

1 -2 lb diced stewing steak or 1 -2 lb round steak, and cut it up yourself
1/2-1 lb beef sausage (the "linked" kind)
1 large onion
beef bouillon (Oxo or similar)
1 -2 package puff pastry

Steps:

  • Put some oil or Lea& Perrins in a big pot – I prefer Lea and Perrins as it adds flavor and isn’t as fattening as oil.
  • Brown your meat hard and fast to seal in as much flavor as possible and give it loads of color.
  • This is where I add as much Oxo (made according to the packet) to keep the meat covered.
  • You could use beef stock instead – you can end up using a lot of Oxo!
  • Bring to the boil, and then simmer over a low heat for as long as you can.
  • The last time I made it was simmering for 4-5 hours.
  • Just keep topping up with your stock.
  • I like to add pepper and worcester sauce or hp sauce just to give it a bite.
  • Add your onion about 1 hour before you plan to stop cooking it – any less and it’s a little too crunchy – any more and it’s just boiled onion.
  • When just about done simmering – add cornstarch or other thickening agent – you’re aiming for really thick brown gravy.
  • Place in a pie dish and leave to cool.
  • Roll out your puff pastry in a floured surface – big enough to cover your pie with overlap on the edges – If you’re making a big pie two packs is best.
  • Bake in the oven at 200°c/400°f for about 20-30 minutes or until pastry is golden brown and puffy.
