My neighbor Marilyn gave me this recipe several years ago; not sure where she got this...but Marilyn....this recipe has 'served me well' over the years!!

1 cup all-purpose flour, and
2 tablespoons all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons butter, softened slightly
2 tablespoons vegetable shortening
1/2 cup light brown sugar
6 tablespoons granulated sugar
1 egg
1 teaspoon vanilla
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 15 inch flat pizza pan or 10 inch springform pan with pan spray to prevent sticking.
  • Mix flour, soda and salt, set aside.
  • Beat butter and shortening in a large bowl with a mixer on medium speed to just combine.
  • mix in sugars; beat with electric mixer until mixture is smooth. Mix in egg and vanilla on low speed until blended thoroughly.
  • Add flour mixture, mixing just until incorporated.
  • Mix in chocolate chips, stir by hand.
  • Using fingers, spread dougn into a 10 inch circle on the pizza or springform pan. Smooth edges.
  • If using the pizza pan, bake cookie about 14 minutes, until edges are light brown and center is golden.
  • If using the springform pan, bake for about 18 minutes, until evenly light brown. Loosen the edge of the cookie from the pan, cool thoroughly. Remove sides of springform pan.
  • Optional: Put spoonfuls of peanut butter on top of the cookie as it's cooling; allow it to 'melt' slightly and then spread around. Sprinkle with chocolate chips, allow those to melt and spread around.

1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter
1/4 cup Butter Flavor Crisco
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla
1 egg
1 egg yolk
1 cup semi-sweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 325°F; grease cookie sheets or line with parchment paper.
  • Sift together flour, baking soda and salt; set aside.
  • In bowl of mixer, cream together butter, Crisco, brown sugar and white sugar until well blended.
  • Add vanilla, egg and egg yolk, and mix until light and creamy.
  • Add the flour mixture until just blended.
  • With a wooden spoon mix in chocolate chips and walnuts.
  • Drop dough by the 1/4 cup, about 3 inches apart.
  • Bake 15-17 minutes or until the edges are lightly browned.
  • Cool a few minutes on cookie sheet before transferring to wire rack to cool completely.

1/2 cup butter, softened
1 egg
Food color
1 container Betty Crocker™ Whipped fluffy white frosting
Candy sprinkles

Steps:

  • Heat oven to 350°F. Line 12-inch pizza pan with foil with about 2 inches hanging over edge of pan. Grease foil with shortening for easiest pan removal or spray with cooking spray.
  • In medium bowl, stir cookie mix, butter and egg until soft dough forms. Spread dough evenly in pan.
  • Bake 15 to 20 minutes or until edges are golden brown. Cool completely in pan on cooling rack, about 30 minutes.
  • Remove foil from cookie; place on serving platter. Add food color to frosting as desired. To pipe, use decorating bag or resealable food-storage plastic bag with small corner cut off bag; decorate cookie as desired. Cut into wedges or squares to serve.

Steps:

  • Position an oven rack in the center of the oven, and preheat to 350 degrees F. Line the bottom of a 9-inch round cake pan with a parchment circle. Butter the parchment and the sides of the pan.
  • For the cookie layer: Whisk together the flour, baking soda and salt in a large bowl; set aside. Beat the butter and both sugars with an electric mixer on medium-high speed in a large bowl until light and fluffy, about 4 minutes. Add the egg, and beat until incorporated. Beat in the vanilla. Beat the granulated sugar and oil with an electric mixer on medium-high speed in a large bowl until light in color and fluffy, about 5 minutes. Beat in the eggs one at a time. Beat in the vanilla. Alternate folding the flour mixture and the milk into the batter with a spatula, adding the flour in three additions and the milk in two, starting and ending with the flour, until just smooth. Stir in the sprinkles. (The cake batter will be on the thin side, like a thick pancake batter.)
  • Pour the cake batter over the cookie layer, and bake until the middle of the cake springs back when pressed and a knife inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Run a knife around the edge of the cake, and let cool completely in the pan on a rack. Transfer the cake from the pan to a serving plate, with the cookie layer on the bottom.
  • For the frosting: Beat the cream cheese and granulated sugar with an electric mixer on medium-high speed in a large bowl until smooth and all the sugar has dissolved (rub some between your fingers; if it's gritty, keep beating). Add the cream and vanilla, and continue to beat until medium peaks form. Frost the cake, and decorate with more sprinkles.

1 cup almond flour
1 cup hazelnut flour
1/2 cup lightly packed light brown sugar
1/2 cup granulated sugar
1 teaspoon kosher salt
1/4 teaspoon baking soda

1/2 teaspoon almond extract
1 large egg
1/2 cup chocolate chips
3 cups powdered sugar
1 cup (2 sticks) unsalted butter, at room temperature

Steps:

  • For the cookie cake: Preheat the oven to 350 degrees F. Grease an 8-inch cake pan with nonstick cooking spray and line it with parchment. Set aside.
  • In a large bowl, combine the almond and hazelnut flours, brown and granulated sugars, salt and baking soda. In a small bowl, combine the vanilla and almond extracts and egg. Add the wet ingredients to the dry ingredients, add the chocolate chips and stir to combine. It may seem dry at first but keep on stirring. Pat the dough out evenly in the prepared cake pan.
  • Bake until golden brown on top; begin checking for doneness at 22 minutes. Let the cake cool fully in the pan.

275g plain flour
1 tsp baking powder
150g chocolate chips
100g other cookie fillings, such as pretzels, chopped nuts, pieces of fudge or toffee, marshmallows
vanilla ice cream, to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Tip the butter and sugar into a large mixing bowl, beat until combined, then stir in the yolks and vanilla. Tip in the flour, baking powder, chocolate chips, a pinch of sea salt and any other fillings you want to add. Mix until a crumbly dough forms.
  • Lightly butter a 25cm ovenproof frying pan. Spoon in and flatten the cookie mixture. Steps:

  • Preheat oven to 350 degrees

1 cup unsalted macadamia nuts, roughly chopped
1/2 cup unsweetened flaked coconut
2 cups flour
1/2 teaspoon baking soda

1 cup unsalted butter, room temperature
1 cup dark brown sugar (packed)
1/2 cup granulated sugar
1 teaspoon salt
1 large egg (separated)
2 teaspoons vanilla extract

Steps:

  • Heat oven to 350 degrees. Spread macadamia nuts and coconut over a cookie sheet; roast, stirring every 2 minutes, until golden brown, about 6 minutes. Set aside to cool.

1 and 1/2 teaspoons cornstarch
1 teaspoon baking soda

3/4 cup (150g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
1 large egg + 1 egg yolk, at room temperature
2 teaspoons pure vanilla extract
1 and 1/2 cups (270g) semi-sweet chocolate chips (plus extra for tops, if desired)

Steps:

  • Preheat oven to 325°F (163°C). Line 3 large baking sheets with parchment paper or silicone baking mats. (If you don't have 3 baking sheets, bake the cookies in batches.)
  • Whisk the flour, cornstarch, baking soda, and salt together in a medium bowl.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar together in a large bowl on medium-high speed until combined and creamy, about 2 minutes.   • Place melted butter in the bowl of a stand mixer fitted with the paddle attachment (or a large bowl if using a hand mixer). Add granulated and brown sugars and mix on low speed until the mixture is smooth. Mix in egg and vanilla extract and mix on medium speed until combined.
  • Mix in baking soda and salt, then slowly mix in flour and mix just until the batter is smooth and comes together. Be sure to scrape the sides of the bowl during mixing. Slowly mix in chocolate chips and sprinkles.
  • Line a cookie sheet with a silicone baking mat or parchment paper. Scoop 2 tablespoon balls of dough onto the cookie sheet. Spacing doesn’t matter because you will be chilling the dough. Cover with plastic wrap and chill for at least 2 hours.
