WHITE BEAN AND HAM SOUP

Classic and comforting white bean and ham soup.

1 lb navy beans (soaked over nigh)
1 ham bone (optional, but recommended)
2 cups diced ham
1 large onion (diced)
1-2 carrots (diced)
2 ribs celery (diced)
4 cloves garlic
4 sprigs fresh thyme
4 sprigs fresh rosemary
10 cups chicken stock

Steps:

  • Heat a 6-quart dutch oven or similar sized heavy bottom pot to medium heat and add a bit of oil.
  • Add the onion, celery and carrot to the pot and season with sea salt and pepper. Saute the veggies for a couple of minutes before adding the garlic and sauteing for a few more minutes - until the veggies have softened.
  • Add the stock, ham bone, beans and ham then place the herbs on top of it all.
  • Increase the heat to high and bring the pot to a boil. Once it it boiling reduce the heat to low, cover and simmer.

Yield Makes about 10 cups

Number Of Ingredients 7

1 1/2 lb. dried large lima beans, rinsed
2 large garlic cloves, peeled, crushed
2 Tbsp. extra-virgin olive oil
2 Tbsp. Diamond Crystal or 3 1/2 tsp. Morton kosher salt
1 sprig rosemary (optional)
Special Equipment
An Instant Pot or other electric pressure cooker

Steps:

  • Place beans, garlic, oil, salt, and rosemary (if using) in Instant Pot. Cover with 10 cups cold water. Seal lid and cook at high pressure 14 minutes.
  • Release pressure manually. If some beans are still slightly undercooked, stir, cover, and use the Keep Warm function until cooked through.
  • Do Ahead: Beans can be cooked 5 days ahead. Chill in cooking liquid in airtight containers, or freeze in cooking liquid up to 3 months.

2 lbs dried great northern beans, rinsed, drained & picked over
4 ham hocks, 2 fresh and 2 smoked or 4 ham bone
2 onions, chopped
2 cloves, garlic minced
3 potatoes, pared and cubed
3 carrots, diced
1 cup celery, diced
3 quarts water
2 teaspoons dried thyme
1 teaspoon dried marjoram
1 teaspoon pepper
1/2 teaspoon rubbed sage
1/2 teaspoon dried savory
parsley
salt

Steps:

  • Put rinsed beans in pan and cover up to 2 inches past beans in large pot -- let sit overnight.
  • Drain, put beans back in pot, add water and the rest of ingredients.
  • Bring to boil, turn to simmer and cover.
  • Simmer for at least 3 hours or until beans are soft.
  • Take out bones and dice up any meat on bones and put back into pot -- You can add more ham if you want.
  • Discard fat and bones.
  • Season to taste with pepper and salt and parsley.

6 pounds dry white beans (about 3½ quarts)
7 gallons ham or chicken stock
8 ham bones
4 1/2 cups onion (about 2 pounds, finely chopped)
2​ 3/4 cups carrots (about 1 pound, shredded)
2 teaspoons pepper
3 cups cold water
2 cups all-purpose flour

Steps:

  • Rinse white beans in a strainer under cool water, being sure to discard any discolored or damaged beans.
  • Place rinsed beans in a large kettle with stock and ham bones; bring to a boil.
  • Once boiling, reduce heat, cover, and simmer for two to three hours or until the beans are tender.
  • While beans are simmering, prepare the onion and carrots.
  • After two to three hours of simmering, stir the onion, carrots, and pepper into the beans. Cover and simmer for an additional 30 minutes.
  • Combine cold water and flour in a separate bowl until smooth and then gradually stir into soup until thickened.
  • Cook for an additional 10 minutes. If the soup is too thick, add additional water until you've reached your desired consistency. Recipe Source: Jene Cain, Northridge, California. 6 lbs dry white beans
7 gallon ham or chicken stock
several meaty ham bones if possible
4 1/2 cups chopped onion, about 2 lbs.
2 3/4 cup grated carrots, about 1 lb.
2 cups flour
3 cups cold water
salt, seasoning to taste, your choice
2 tsp pepper, or to taste

Steps:

  • 1. Wash beans, place in large kettle with stock and ham bones, bring to boil, Reduce heat: Cover, and simmer for 2-3 hours or till beans are tender.
  • 2. Stir in onion, carrots and pepper. Cover and simmer for 30 minutes. Combine cold water and flour till smooth and gradually stir into soup. Cook for 10 minutes, If too thick, add additional stock or water till desired consistency is reached.
  • 3. Serve when ready with Mexican Cornbread, or plain cornbread.

1 lb white beans, rinsed
2 quarts water, plus additional
2 -3 lbs ham hocks or 2 -3 lbs ham shanks
2 teaspoons italian seasoning
1 cup diced onion
1 cup chopped celery (optional)
1 cup chopped carrot, peeled (optional)
2 -3 garlic cloves
1/4 teaspoon salt, to taste
1/4 teaspoon pepper, to taste
1/2 teaspoon hot sauce, to taste (optional)

Steps:

  • Fill large pot with water and as it starts to boil, add dry beans and onion. Cook on medium-low till beans are soft, about 2 hrs., adding water as needed to keep beans covered.
  • In another pan fill with water and add the ham and seasonings. Cook till meat falls off the bone.
  • When beans are soft, remove the bones from the ham pot and add pot contents to the beans, including the water and the seasonings in the pan.
  • Add the carrots and celery-cook on low till veggies are tender.
  • Season with salt and pepper to taste. Add hot sauce at serving.

1 lb smoked ham hock, about
3 cups dried small white beans, rinsed and picked over
12 cups vegetable stock or 12 cups water
2 medium onions, quartered
salt and pepper

Steps:

  • Put smoked ham hock, beans, and liquid together in large saucepan.
  • Turn heat on to medium high.
  • Add onions.
  • Bring mixture to a boil.
  • Turn heat down to medium low and cover with tilted lid to only cover partially.
  • Cook, stirring occasionally until beans are very soft and meat is falling apart at least one hour.
  • Turn off heat.
  • Remove meat and chop it up if desired and return to pot.
  • Serve with cornbread.
  • Yummy!

  • Preheat the oven to 350°. In a large soup pot, melt the butter. Add the onion, carrot, garlic, thyme and coriander and cook the vegetables over moderately high heat, stirring, until softened, about 3 minutes. Add the stock, beans and ham and bring to a boil. Cover partially and cook over moderate heat for 20 minutes.
  • Meanwhile, toss the baguette cubes with the olive oil and paprika and season with salt. Spread on a baking sheet and bake for about 10 minutes, stirring occasionally, until toasted.
  • Remove the ham from the soup and cut it into 1/2-inch pieces. Discard the thyme sprigs. Working in 2 batches, transfer the soup to a blender or food processor and puree until smooth. Return the soup to the pot and stir in the diced ham. Season the soup with salt and pepper and ladle into warmed shallow bowls. Top with the croutons and scallion and serve.
