GRILLED SEASONED PORK ROAST
This melt-in-your-mouth grilled pork roast is not to be missed. With a simple dry rub - that you likely have in your pantry - and a slow grilling process, the meat turns out tender and flavorful. Steps:
- Heat gas or charcoal grill for indirect-heat cooking as directed by manufacturer. In small bowl, mix all ingredients except roast. Rub mixture onto all sides of roast. (Do not remove strings until after grilling.)
- Place roast, fat side up, on grill for indirect cooking. Cover grill; cook 1 hour 30 minutes to 2 hours 15 minutes or until meat thermometer inserted into thickest part of roast reads 160°F. Let roast stand 10 to 15 minutes before slicing.

BETTY'S BUTCHERS ROAST PORK WITH CRACKLING
My local butcher is awesome and this is his recipe and tip. This recipe requires overnight curing of the skin to dry - allowing for crackling that is out of this world. Don't skimp on the salt. Due to the size of my 3 teenage sons (each about 6ft or taller) I make two as they each have large portions - of everything!

Steps:
- 1. The DAY BEFORE - open the package and score the meat more - making long incisions through the skin. Place the meat into the tray that will be used to bake the meat in. Cover the meat with damp paper towels and pop in the fridge overnight (to dry out the meat)
- 2. The FOLLOWING day - remove the meat from the fridge. Throw away the paper towel and allow the meat to come to room temp. While this is happening, pre heat your oven to as hot as it will go.
- 3. After about an hour, sprinkle over the salt and gently press into the meat. Pop in the oven for 30 - 40 minutes at a high heat.
- 4. Reduce heat to 365oF/170oC and bake for another 1.5 hours. Remove from the oven and rest for 20 minutes.
- 5. Remove the crackling and cut into serving size "chunks" and then carve the meat.
- 6. Serve with gravy and veggies or your choice.

- Preheat oven to 350 degrees F (175 degrees C).
- Stuff roast with garlic, salt, pepper and Cajun seasoning. In a large pot of boiling water, boil roast until meat is slightly pink. Remove from water.
- Lay roast in a 9x13 inch baking dish lined with aluminum foil. Cover in ketchup and mustard. Then cover with more foil and bake in the preheated oven for 1 1/2 to 2 hours or until internal temperature has reached 145 degrees F (63 degrees C).

- Heat oven to 325°F. Make 20 small, deep cuts in pork roast; insert garlic cloves in cuts. Tie roast with kitchen string, securing at 2-inch intervals. Rub Cajun seasoning over pork.
- In large heavy skillet, heat oil over high heat. Add pork; cook 2 minutes on all sides or until browned. Remove from skillet. Add onions and celery to skillet; cook over medium heat 5 to 8 minutes, stirring frequently, until tender. Place onion mixture in ungreased roasting pan; top with pork. Add broth to pan. Cover loosely with heavy-duty foil.
- Roast about 2 hours or until meat thermometer inserted into center of pork reads 145°F. Remove pork from pan to platter; cover with foil and let stand at least 3 minutes.
- Pour pan drippings through strainer into 2-cup measuring cup. Discard solids. Add broth or water to measure 2 cups, if necessary. In 2-quart saucepan, mix flour and cold water with whisk. Stir in pan drippings. Cook over medium-high heat 6 to 7 minutes, stirring frequently, until thickened. Serve pork with gravy. Sprinkle with thyme sprigs.

- Rub all surfaces of the roast with the salt, ginger and pepper; place the fat side up in shallow roasting pan; insert a meat thermometer in thickest part of roast, avoiding bone and fat.
- Roast at 325°F for 1 hour.
- Scatter the onions around the pork; roast for an additional 30 minutes, or until the onions are lightly browned.
- Combine the bread cubes, apples, wine, raisins and sugar; stir into the onions.
- Roast 30 minutes longer, stirring occasionally.
- Beat the eggs with the milk.
- Remove the roast from pan; combine the egg mixture with the apple mixture, mixing well.
- Replace roast and then spoon the apple mixture around roast.
- Roast 30 to 40 minutes longer or until the roast is golden brown and the meat thermometer registers 170°F.

- Place pork in self-sealing bag.
- In blender, pulse parsley, onion and garlic until minced.
- Add remaining ingredients; process to blend.
- Add mixture to bag; seal and toss to coat pork.
- Refrigerate overnight.
- Preheat oven to 500 degrees.
- Remove pork from bag; discard marinade.
- Place pork on wire rack inside roasting pan; bake 15 minutes.
- Lower oven temperature to 325 degrees; continue cooking until internal meat temperature reaches 155 degrees, about 1 hour.
