BETTY'S COUNTRY STYLE CASSEROLE
Rich, hearty and stick to your ribs! This is a meal for a cold night and can be made the day before and re-heated (which allows the flavours to develop). Serving with a bread is greatly recommended to sop up all the gravy from the plate. You may need more than one slice :)

Steps:
- 1. In a casserole dish add everything EXCEPT the gravy base and peas/beans. Bake in a 300oF/150oC oven for 2 hours stirring once.
- 2. After two hours, add the gravy mix as per the ingredients and peas. Stir well and bake for a further 10 minutes.
- 3. Serve with crusty bread and butter and a green salad.
BETTY MAYFIELD'S BEEF CASSEROLE
My sister and I used to request this recipe often. Mom never seemed to make it often enough... we loved it! I'm not sure where my Mom got the recipe, but I think Betty Mayfield was a past Miss America? Not sure!

Steps:
- Brown ground beef; drain.
- Add salt, sugar, tomatoes, tomato sauce, garlic and pepper.
- In a mixing bowl, combine cooked egg noodles with sour cream, cream cheese and green onions.
- In a greased 3-quart casserole dish, arrange meat mixture and noodle mixture in alternate layers.
- Top with cheese.
- Cover and bake at 350F for 35 minutes.
- I serve this casserole with a fresh salad and hot garlic bread!

- Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 12-inch nonstick skillet, cook beef and onion over medium-high heat 8 to 10 minutes, stirring frequently, until beef is brown; drain. Stir in salt and pepper. Spread in dish. Sprinkle with 2 cups of the cheese.
- In medium bowl, stir Bisquick™ mix, milk and eggs with whisk until blended. Pour into baking dish. Arrange frozen potatoes on top of casserole.
- Bake 40 to 45 minutes or until potatoes are browned. Sprinkle evenly with remaining 1 cup cheese; bake 3 to 5 minutes or until cheese is melted and knife inserted in center comes out clean (165°F in center). Let stand 10 minutes before serving.
- To make ahead: Cook beef mixture; spread in baking dish. Refrigerate uncovered 30 minutes. Sprinkle with 2 cups of the cheese; pour Bisquick™ mixture over top. Cover and refrigerate overnight. To bake: Heat oven to 400°F. Uncover casserole; arrange frozen potatoes on top. Bake and top with cheese as directed.

- Heat oven to 350°F. Spray 12x8-inch (2-quart) glass baking dish with cooking spray.
