GUMDROP COOKIE BARS

Sweet orange icing covers these chewy cookie bars that are made with gumdrops and pecans - a flavorful dessert.

2 cups Gold Medal™ all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 cups packed brown sugar
4 eggs, separated
2 tablespoons water
1 cup assorted colors small gumdrops, chopped
1 cup chopped pecans
2 cups powdered sugar
1/4 cup butter or margarine, melted
2 teaspoons grated orange peel
1/4 cup orange juice

Steps:

  • Heat oven to 350°F. Spray 15x10x1-inch pan with cooking spray.
  • In medium bowl, mix flour, cinnamon and salt; set aside. In large bowl, beat brown sugar and egg yolks until well blended. Gradually add two-thirds of the flour mixture alternately with water, stirring well after each addition. Add gumdrops and pecans to remaining flour mixture; stir to coat well. Set aside.
  • In small bowl, beat egg whites with electric mixer on high speed until stiff peaks form. Fold into batter alternately with reserved gumdrop mixture. Spread batter in pan.
  • Bake 20 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack.
  • In medium bowl, beat powdered sugar, melted butter, orange peel and orange juice until well blended. Spread over bars. Let stand until set. Cut into 8 rows by 6 rows.

2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup butter, softened
1 1/2 cups granulated sugar
1 egg
1 teaspoon vanilla
1 1/2 cups quartered green, red and white spice-flavored gumdrops
2 tablespoons coarse white sparkling sugar

Steps:

  • Heat oven to 350°F. In medium bowl, mix flour, baking powder, baking soda and salt; set aside.
  • In large bowl, beat softened butter and granulated sugar with electric mixer on medium speed until fluffy; scrape side of bowl. Beat in egg just until smooth. Beat in vanilla. On low speed, beat flour mixture into sugar mixture until well blended. Stir in 3/4 cup of the quartered gumdrops.
  • Shape dough into 60 (1-inch) balls. Place 2 inches apart on ungreased cookie sheets; flatten each ball to 1 1/2-inch circle. On each dough round, sprinkle sparkling sugar and place 3 quartered gumdrops.
  • Bake 9 to 11 minutes or until edges are set and light brown. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes. Store covered in airtight container.

1 cup quartered green, red and white spice-flavored gumdrops

Steps:

  • Heat oven to 375°F. In large bowl, mix cookie mix, flour, softened butter and egg with spoon until soft dough forms. Stir in 1/2 cup of the quartered gumdrops.

  • Grease 8x8x2-inch baking pan. In large bowl beat sugar and butter until fluffy.
  • Beat in eggs, one at a time. Beat in chocolate, then flour. Stir in nuts.

These chocolate brownie cookies are very good, just be careful not to overbake, and they will remain chewy. Yield is only estimated depending on how large you make these.

8 ounces semi-sweet chocolate bits
3 tablespoons butter
1 1/4-1 1/2 cups flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 eggs
3/4 cup sugar
1 teaspoon vanilla
1 cup semi-sweet chocolate chips
2 1/4 cups coarsely chopped pecans

Steps:

  • Set oven to 350 degrees.
  • Grease 2 cookie sheets.
  • Place the 8 ounces semi-sweet chocolate bits and the butter in a heavy 2-quart saucepan; melt over low heat (or melt in the microwave), stirring until smooth, let cool slightly.
  • Sift the flour, baking powder and salt.
  • In a bowl with an electric mixer, beat the eggs, sugar and vanilla until well combined.
  • With the mixer on slow, add the cooled melted chocolate, then the dry ingredients; blend well.
  • Stir in the chocolate chips and the nuts.
  • Drop by heaping tablespoonfuls (2-inch apart) on prepared cookie sheets.
  • Bake 10-12 minutes (they will puff, but won't firm up until they are cool, so DON'T OVERBAKE!).
  • Cool for a couple of minutes, then remove to a wire rack to cool completely.
  • These cookies keep well if they are covered for 4-5 says at room temperature, or freeze for up to 3 months (they freeze very well).
  • Note: If desired, the cookie dough may be prepared and frozen, well covered, in the freezer before baking, just thaw, and bring to room temperature before baking.
  • **NOTE** Start with 1-1/4 cups of flour, and add more if needed to make a soft but firm enough dough to spoon on a cookie sheet.

2/3 cup butter or 2/3 cup margarine
2 1/4 cups brown sugar (1 pound)
3 eggs
2 2/3 cups sifted flour
2 teaspoons baking powder

1 cup walnuts, coarsely chopped
1 (13 ounce) package spice gumdrops

Steps:

  • Preheat oven to 350°F.
  • Grease a 10 1/2 x 15 1/2 cookie pan with at least 3/4-inch sides.
  • Melt butter in microwave, just to melting point.
  • Stir in brown sugar with mixer; then eggs, one at a time, stirring in well between.
  • Add flour, salt and baking powder; mix well.

1 1/2 teaspoons maple flavoring (not syrup)
2 eggs
1 1/2 cups flour

Steps:

  • Preheat oven to 350 degrees F.
  • Grease 9" x 9" pan.
  • Mix sugar and butter.
  • Mix in eggs one at a time.
  • Mix in flavoring.
  • Add all but nuts and mix in.
  • Stir in nuts.
  • Bake 30-40 minutes until a toothpick inserted is nearly clean but not completely clean.
  • For me they take 35 minutes, but watch them from 30 minutes on.
  • I cut immediately to avoid excess breaking of the caramelized crust.
