this is a Dinette Cake from the 1969 Betty Crocker Cook Book. I like to substitute the all purpose flour with whole wheat flour.

1 1/4 cups all-purpose flour (1 1/4 cups is the amount I use for the whole wheat flour)
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup shortening (I have sub'ed apple sauce here)
3/4 cup milk
1 egg
1 teaspoon vanilla

Steps:

  • heat oven to 350 degrees. grease and flour 8x8 or 9x9 pan. Mix all ingredients and pour into pan. bake 35-40 minutes or until toothpick comes out clean.

A riff on the classic gooey butter cake, these custardy dessert bars (made easy with Betty Crocker™ yellow cake mix!) are filled with chopped rhubarb. If you only have fresh rhubarb on hand, or it's not in season and frozen is available, this recipe can work equally well with whichever you have on hand. Serve with a scoop of vanilla ice cream, or top with a from-scratch sweetened whipped cream for an added level of deliciousness! It's a great potluck treat and travels well.

1 box Betty Crocker™ Super Moist™ yellow cake mix
1/2 cup butter, melted
1 egg
1 package (8 oz) cream cheese, softened
3 1/2 cups powdered sugar
1/2 cup butter, melted
3 eggs
2 cups frozen cut rhubarb, thawed, drained or chopped fresh rhubarb
1 tablespoon powdered sugar
Serve with sweetened whipped cream, if desired

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.
  • In large bowl, stir Cake Base ingredients until well blended. Spread in pan.
  • In another large bowl, beat cream cheese and 3 1/2 cups powdered sugar with electric mixer on medium speed until blended. Beat in 1/2 cup melted butter. Add eggs, one at a time, scraping bowl occasionally. Stir in rhubarb. Pour batter evenly into pan over cake base.
  • Bake 38 to 43 minutes or until golden brown on edges and center is set. Cool completely, about 2 hours.
  • When ready to serve, sprinkle 1 tablespoon powdered sugar over top. Using sharp knife, cut into 6 rows by 4 rows, cleaning knife blade after each cut. Serve with whipped cream. Store loosely covered in refrigerator.

This is the Chocolate Chip Cookies recipe from the Betty Crocker card file system, and more specifically from the green file from 1971, which the recipe was classified as Men's Favorites #22. I have seen many, many requests for this particular recipe in the Recipezaar Question & Answer forum. I knew about the recipe (from prior requests). To be helpful, I visited the Betty Crocker website and used their search option to find it whenever someone else asked for it again. And I would just post the recipe in the Q&A forum again. Well, that recipe is getting more difficult to find (as it seems that, with improvements to the webiste, older recipes just get buried even deeper!). So I thought I would post the recipe here, to make it more accessible on the Zaar site, especially for all the fans of the Betty Crocker recipe card files. I haven't made these myself, so I guessed on the prep time.

2/3 cup shortening
2/3 cup butter or 2/3 cup margarine, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 eggs
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts
2 (6 ounce) packages semisweet chocolate pieces

Steps:

  • Heat oven to 375° degrees.
  • Mix thoroughly shortening, butter, sugars, eggs and vanilla. Blend in remaining ingredients. (For a softer, rounder cookie, add 1/2 cup flour.)
  • Drop dough by rounded teasponfuls 2 inches apart onto ungreased baking sheet. Bake 8-10 minutes or until light brown. Cool slightly before removing from baking sheet.
  • NOTE: If using self-rising flour, omit soda and salt.
  • For Salted Peanut Cookies: Substitute 2 cups salted peanuts for the chocolate pieces and chopped nuts. Before baking, flatten each cookie with bottom of glass that has been greased and dipped in sugar.
  • Betty's note: ( Red Spoon) To bake fresh cookies on short notice, keep a supply of cookie dough in the freezer. Wrap it in an airtight freezer container, aluminum foil or plastic wrap. Thaw it until just soft enough to spoon onto baking sheet. Both cookie dough and baked cookies can be frozen and stored from 9-12 months.

3 cups diced rhubarb
1 cup white sugar
3 tablespoons all-purpose flour
1 cup packed light brown sugar
1 cup quick cooking oats
1 ½ cups all-purpose flour
1 cup butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large mixing bowl combine rhubarb, white sugar, and 3 tablespoons flour. Stir well and spread evenly into baking dish. Set aside.
  • In a large mixing bowl combine brown sugar, oats, and 1 1/2 cups flour. Stir well then cut in butter or margarine until mixture is crumbly. Sprinkle mixture over rhubarb layer.
  • Bake in preheated oven for 40 minutes. Serve hot or cold.

3 cups Gold Medal™ all-purpose flour
1 cup chopped nuts, if desired
3 1/2 teaspoons baking powder
1 teaspoon salt

Steps:

  • Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 (8x4- or 9x5-inch) loaf pans with shortening or cooking spray.
  • In large bowl, mix rhubarb, pears, sugar, oil, vanilla and eggs. Stir in remaining ingredients. Pour into pans.
  • Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans to cooling rack. Cool completely before slicing, about 1 hour. Wrap tightly and store at room temperature up to 4 days or refrigerate up to 10 days.

1 lb fresh rhubarb, chopped
1/2 cup packed brown sugar
2 teaspoons vanilla
1 teaspoon lemon juice
1 cup Original Bisquick™ mix
2 tablespoons butter, softened
1/4 cup milk
Freshly whipped cream or vanilla ice cream

Steps:

  • Heat oven to 350°F. Grease 8-inch square (2-quart) glass baking dish with butter or cooking spray.
  • In large bowl, mix rhubarb, brown sugar, vanilla and lemon juice. Pour mixture into baking dish.
  • In small bowl, stir together Bisquick mix, butter and milk with fork just until combined. Using hands, break dough into small pieces and sprinkle evenly over rhubarb mixture.

  • Heat oven to 350°F. Mix butter, 1 cup flour and 1 tablespoon sugar. Press evenly in ungreased square pan, 9x9x2 inches. Bake 10 minutes.
  • Mix egg yolks, 1 cup sugar, 2 tablespoons flour, the salt and half-and-half in large bowl. Stir in rhubarb. Pour over hot crust. Bake 45 minutes.
  • Beat egg whites in medium bowl with electric mixer on high speed until foamy. Beat in 1/3 cup sugar, 1 tablespoon at a time; continue beating until stiff and glossy (do not underbeat). Beat in vanilla. Spread over rhubarb mixture; sprinkle with coconut. Bake about 10 minutes or until light brown; cool about 30 minutes. Cut into about 3-inch squares.

3 teaspoons Ener-G Egg Substitute
4 tablespoons filtered water (add to the egg substitute)
3 cups spelt flour
1 teaspoon baking soda
1/4 teaspoon salt (Celtic sea salt)
1 1/2 cups rhubarb (fresh-organic-diced)
3/4 cup coconut (organic flaked)
3 ounces vegan cream cheese
1 tablespoon soy margarine (softened)
3 teaspoons vanilla extract
1 1/2 cups powdered sugar (organic)

Steps:

  • FOR THE COOKIE:.
  • Preheat oven to 350'F.
  • Cream the shortening, brown sugar and egg substitutes together.
  • In a separate bowl sift the flour, baking soda and salt.
  • Add the flour mixture to the creamed mixture.
  • Stir in the rhubarb and coconut.
  • Drop by tablespoonful onto a baking sheet that has been covered with unbleached parchment paper. You might need two as this is a big recipe.
  • Bake 12-15 minutes for each batch made.

  • Beat the cream cheese, margarine and vanilla together well using a hand/stand mixer. Gradually beat in sugar until smooth.
