PEANUT BUTTER-FUDGE BARS

- Heat oven to 350°F. In large bowl, stir double chocolate chunk cookie mix, 1/4 cup oil, 2 tablespoons milk and 1 egg until soft dough forms. Drop dough by tablespoonfuls evenly over bottom of ungreased 13x9-inch pan.
- In same large bowl, stir peanut butter cookie mix, 3 tablespoons oil, 1 tablespoon milk and 1 egg until soft dough forms. Drop dough by tablespoonfuls over chocolate dough in pan. Swirl doughs together slightly, using metal spatula; spread and press evenly in pan.
- Bake 25 to 27 minutes or until edges are light golden brown. Remove from oven; sprinkle evenly with chocolate chips. Let stand 2 minutes.
- In small bowl, stir powdered sugar, peanut butter and enough of the 2 to 3 tablespoons milk until frosting is smooth and spreadable. Spoon frosting over chocolate chips; lightly swirl chocolate and frosting together. Sprinkle with peanuts; press lightly into topping. Cool completely, about 30 minutes. For bars, cut into 9 rows by 4 rows.

Steps:
- Mix sugars, peanut butter, shortening, butter and egg in large bowl.
- Stir in remaining ingredients.
- Cover and refrigerate about 2 hours or until firm.
- Heat oven to 375ºF.
- Shape dough into 1 1/4-inch balls.
- Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar (water works well too).
- Bake 9 to 10 minutes or until light golden brown.
- Note: about 1 minute before they are done it helps to lift and bang the sheet on the rack and turn it.
- Cool 5 minutes; remove from cookie sheet.
- Cool on a wire rack.
- Other note: you can use all butter/margarine to replace the shortening and probably would work vice versa as well.

Steps:
- Cook milk, brown sugar, white sugar and chocolate over low heat, until mixture forms a ball in a glass of cold water. (239 degrees F. using a candy thermometer).
- Take off stove and add marshmallow, margarine, vanilla, nuts and peanut butter.
- Beat mixture together until thick.
- Put in 9x13" pan, and refrigerate.
- Store in air tight container. I like to keep it refrigerated.
- Note: Cooking time is approximate.

- Heat oven to 350°F. Spray bottom only of 13 x 9-inch pan with cooking spray. In large bowl, stir cookie mix, oil, water and egg until soft dough forms. Press dough in bottom of pan. Bake 12 to 15 minutes or until light golden brown. Cool completely, about 30 minutes.
- Spread hot fudge topping over cooled cookie base. In large bowl, combine frosting and peanut butter until well mixed. Add whipped topping and candy; gently fold until well blended. - Line bottom and sides of 13x9-inch pan with foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan; grease foil with butter. In medium bowl, stir peanut butter and powdered sugar until well blended. Shape into 24 (1-inch) balls. Place balls evenly in foil-lined pan.
- In 5- to 6-quart saucepan, cook butter, granulated sugar and evaporated milk over medium-high heat, stirring constantly, until sugar is dissolved. Heat to full boil, stirring constantly. Reduce heat to medium. Boil uncovered without stirring 3 minutes. Remove from heat.
- Stir in 3 cups of the marshmallows until melted. Add chocolate chips, sweet chocolate and unsweetened chocolate, stirring rapidly until all chocolate is melted and mixture is smooth. Stir in vanilla. Quickly pour mixture over peanut butter balls in pan. Press peanuts and remaining marshmallows into top of fudge. Cool completely, about 1 1/2 hours.
- Using foil handles, lift fudge from pan to cutting board; remove foil from sides of fudge. Cut into 8 rows by 6 rows.

EASY PEANUT BUTTER BROWNIES
This is adapted from the back of the Betty Crocker Brownie mix box. Since my family doesn't care for Raspberry Brownies I did my own version and substituted Peanut Butter. We prefer the Dark Chocolate brownie mix but it can be used on the Fudge type also.

- Heat oven to 350 degrees. Make and cool brownies as directed for 13 x 9 pan.
- In small bowl, beat cream cheese, powdered sugar and peanut butter on medium speed until smooth. Spread over cooled brownies.
- You can decorate them by sprinkling chocolate sprinkles or mini chocolate chips on top ( our favorite).
- If using the melted semisweet chocolate for decoration - spread the cooled brownies with the cream cheese / peanut butter mixture and then refrigerate them for 15 minutes, melt the chocolate until smooth. Drizzle over brownies. Refrigerate about 1 hour or until chocolate is firm before cutting.
- Stored covered in refrigerator.

PEANUT BUTTER FUDGE - WW
This recipe uses canned pumpkin and prepared brownie mix for an easy tasty treat that works with your diet. While not exactly like fudge, it is chocolately and peanut buttery and you get a very good size piece in one serving! Must be eaten with a fork - messy! The pumpkin flavor does come through some, so beware if you aren't a pumpkin fan. I make this recipe with a Betty Crocker Low Fat brownie mix.

- Preheat oven to 350 degrees Fahrenheit.
- Spray a very small baking dish, either 8" x 4" for thick fudge or 8" x 8" for thinner fudge.
- Mix pumpkin and brownie mix until smooth; batter will be thick.
- Pour into prepared baking dish.
- Drop peanut butter in little drops on top and swirl with knife; don't get too much in one area or oil from the peanut butter will pool.
- Bake for 30 to 40 minutes (approximately 30 minutes for an 8" x 4" pan and about 40 minutes for an 8" x 8" pan). It should look undercooked, thick and fudgy; glossy on the inside (don't let edges get crusty).
- Remove from oven; cover with foil; cool in fridge for several hours. Let cool on the counter a little while so your baking dish doesn't shatter!
- Cut into 18 pieces, 3x6.

- 1. Put icing and peanut butter in a microwave safe bowl. I use Betty Crocker icing but any brand will work as long as it is not whipped icing.
- 2. Microwave 5 - 10 minutes or until completely melted, stir frequently.
- 3. After it is completely melted stir until blended.
- 4. Pour into a 8 x 8 pan and put into fridge about an hour.
- 5. When it is firm cut and serve.
