Sometimes, you want something wonderfully "home-made" but literally don't have the time or energy. I got this recipe from Betty Crocker; I made it exactly as written and it WOWED! My three roommates! I doubled the recipe, and it was gone in 24 hours! Fast, inexpensive and deeply satisfying to make, I hope you try this easier version than many already posted.

- In 4-quart nonstick saucepan or Dutch oven, cook bacon until crisp; drain on paper towel. Crumble bacon; set aside. Remove and discard drippings from saucepan.
- In same saucepan, cook sausage over medium-high heat 6 to 8 minutes, stirring frequently, until no longer pink. Drain well on paper towels; set aside.
- In same saucepan, mix potatoes, onion, garlic, Italian seasoning, salt, pepper, pepper flakes, water and broth. Heat to boiling. Reduce heat to low; cook uncovered about 10 minutes, stirring occasionally.
- Stir in bacon, sausage, kale and beans. Cook 10 to 15 minutes, stirring occasionally, until potatoes and kale are tender. Stir in half-and-half; cook just until heated.

- Heat 5-quart Dutch oven over medium-high heat. Add sausage, onions and carrot; cook 8 to 10 minutes, stirring occasionally to break up sausage, until sausage is no longer pink. Stir in garlic and pepper flakes; cook 1 to 2 minutes or until garlic is fragrant.
- Stir in broth, beans, tomatoes, oregano and bay leaf. Heat to boiling; reduce heat to medium-low, and simmer uncovered 10 minutes. Add pasta; simmer 8 to 9 minutes or until pasta is tender. Remove bay leaf, and discard.
- Stir in spinach; cover and remove from heat. Let stand 5 minutes; stir.
- Meanwhile, in 8-inch nonstick skillet, heat oil over medium heat Add bread crumbs; cook and stir 2 to 3 minutes or until toasted and golden brown. Remove from heat.
- Divide soup among serving bowls; garnish each with cheese and toasted bread crumbs.

Steps:
- Cook and stir ground beef, pork, onion and garlic in large saucepan or Dutch oven until meat is brown and onoin is tender.
- Drain off all fat.
- Add tomatoes and break up with a fork.
- Stir in tomato sauce, 2 T. parsley flakes, sugar, 1/2 teaspoon salt and the basil.
- Heat to boiling, stirring occasionally.
- Reduce heat; simmer uncovered 1 hour or until mixture is the consistency of Spaghetti sauce.
- Heat oven to 350 degrees.
- Mix cottage cheese, 1/2 C Parmesan cheese, 1 T. parsley flakes, 1/2 teaspoon salt, and the oregano.
- Reserve 1/2 C meat sauce for the thin top layer.
- In ungreased baking pan, 13x9x2" , layer 1/4 each of the noodles, remaining meat sauce, the Mozerella cheese and cottage cheese mixture;.
- Repeat 3 times.
- Spread reserved meat sauce over top; Sprinkle with 1/2 C parmesan cheese.
- If desired, Lasagna can be covered and refrigerated several hours at this point.
- Bake uncovered 45 minute Allow an additional 10-15 minute if it was refrigerated.
- For easier cutting, let stand 15 minute after removing from oven.

- In Dutch Oven, brown sausage with garlic.
- Stir in broth, tomatoes and carrots, season with salt and pepper.
- Bring to boil, reduce heat, cover and allow to simmer 15 minutes.
- Stir in beans with their liquid and zucchini.
- Cover and simmer another 15 minutes, or until zucchini is tender.
- Remove from heat, stir in spinach.
- Cover and allow spinach to cook in the steam from the soup for another 5 minutes or until tender.

I hope you enjoy this soup, which I've been making for what seems like forever!! 10/09 NOTE: This recipe is my original one, made when the kids were little and didn't like too much spice. Now I sometimes doctor it up adding garlic, red pepper flakes, or whatever. This soup is very forgiving, so do your own thing! I originally did not add the sugar quantity in the recipe, so have now corrected this.

Steps:
- Saute bacon and onion together until lightly browned. Drain off fat.
- In soup pot, add peeled and diced fresh tomatoes or break up canned tomatoes. Add sugar, then bacon/onion mixture. Simmer for 10 minutes.
- Meanwhile, in separate pan cook sausage covered in water for 15 minutes. Drain, then cut into slices.
- Place sausage in soup pot with bacon/tomato mixture. Add beef stock or broth and oregano, then bring to a rolling boil.
- Stir in rice. Cook over medium heat uncovered until approximately 10 minutes until rice is tender, adding additional broth if needed.
- Remove from heat then stir in parmesan cheese and butter. Salt and pepper to taste.
- Put in serving bowls and sprinkle on minced fresh parsley. Additional parmesan cheese may also be sprinkled on.

- In a 5-6 quart pan, combine onions, garlic and 1 cup broth.
- Boil on high heat, stirring occasionally, until liquid evaporates and vegetables start to brown, about 10 to 14 minutes.
- To deglaze pan, stir in 3 tablespoons water to release browned bits.
- Cook, uncovered, until liquid evaporates and mixture begins to brown again, about 1 minute.
- Repeat deglazing step 3 more times until mixture is richly browned.
- Add sausage and 1/2 cup more water.
- Stir gently until liquid evaporates and meat begins to brown, 8 to 10 minutes.
- Add remaining 4 cups broth.
- Stir to loosen browned bits.
- Add wine, tomatoes and their liquid, basil, sugar, green pepper, zucchini and pasta.
- Cover and bring to boil over high heat.
- Simmer until pasta is just tender to bite, about 15 minutes.
- Serve hot, with chopped parsley, salt and pepper.

- Cook sausage in large skillet until no longer pink, stirring frequently. Drain. In 3 1/2 or 4-quart slow cooker, combine cooked sausage and all remaining ingredients except zucchini and cheese; stir gently to mix.
