MINT CHOCOLATE CHIP COOKIES

Steps:

• Heat oven to 350°F. In large bowl, stir cookie mix, butter, extract, food color and egg until soft dough forms. Stir in creme de menthe baking chips and chocolate chunks.
• Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet.
• Bake 8 to 10 minutes or until set. Cool 3 minutes; remove from cookie sheet to wire rack. Serve warm or cool completely. Store tightly covered at room temperature.

CHOCOLATE CHIP CHEESECAKE BARS (COOKIE MIX)

Steps:

• Heat oven to 350°F.
• Spray bottom of 13x9-inch pan with cooking spray.
• In large bowl, cut butter into cookie mix using fork or pasty blender.
• Stir in 1 egg until mixture is crumbly.
• Gently spoon 3 cups crumb mixture into pan; press into bottom of pan.
• Bake 15 minutes.
• In small bowl, beat cream cheese, sugar, 2 eggs and the vanilla with electric mixer on medium speed until smooth. Pour over cookie crust.
• Spoon remaining crumb mixture over cream cheese.
• Bake 25 to 30 minutes or until golden brown and firm to the touch.
• Cool 30 minutes.
• Refrigerate at least 2 hours or until chilled.
• For bars, cut into 9 rows by 4 rows.
• Store covered in refrigerator.

EASY MONSTER COOKIES

Steps:

• 1 pouch Betty Crocker® chocolate chip cookie mix
• 1 pouch Betty Crocker® peanut butter cookie mix
• 1 1/2 cups quick-cooking oats
• 1 cup butter or margarine, softened
• 3 eggs
• 2 cups candy-coated milk chocolate candies
• Heat oven to 375°F In large bowl, stir all ingredients except candies until soft dough forms. Stir in candies.
• On ungreased cookie sheets, place about 1/4 cupfuls dough about 3 inches apart.
• Bake 12 to 13 minutes or until light golden brown. Cool 2 minutes; remove from cookie sheets. Cool completely. Store in covered container at room temperature.
• High Altitude (3500-6500 ft): Bake 15 to 16 minutes.

PEANUT BUTTER CANDY BARS (COOKIE MIX)

Steps:

• Heat oven to 350°F
• Spray bottom of 13x9-inch pan with cooking spray.
• In large bowl, stir cookie mix, oil, water and egg until soft dough forms.
• Press into pan.
• Bake 15 to 18 minutes or until edges are light golden brown.
• Cool 10 minutes.
• In small microwavable bowl, microwave chocolate chips and butterscotch chips on High 1 to 1 1/2 minutes or until melted.
• Spread evenly over base.
• Refrigerate 30 minutes or until set.
• For bars, cut into 9 rows by 4 rows.

SCANDINAVIAN ALMOND COOKIES (COOKIE MIX)

Steps:

• Heat oven to 375°F.
• In large bowl, stir cookie mix, butter, egg, flour and 1 teaspoon almond extract until soft dough forms.
• Divide dough into 3 equal parts; place on ungreased cookie sheets.
• Press each into 12x3-inch rectangle.
• Brush each rectangle with 1 teaspoon milk; sprinkle with 1/3 cup almonds.
• Bake 10 to 12 minutes or until edges are light golden brown.
• Cool 1 minute; cut into 1-inch diagonal slices.
• Remove from cookie sheet to wire rack.
• Cool completely, about 30 minutes.
• In small bowl, stir powdered sugar, 1/4 teaspoon almond extract and 5 to 6 teaspoons milk until desired consistency.
• Drizzle over cookies; sprinkle with 2 tablespoons almonds.
