I've been trying to copy my Dad's version of Clam Casino to no avail (even when I have him on the phone) So I gave it up and made up my own; guess what? They're BETTER!

30 quahogs (chowder clams)
3 large elephant garlic cloves, minced
1 large vidalia onion, minced
1 red pepper, diced
1 orange bell pepper, diced
1 tablespoon dried oregano
1 tablespoon dried basil
1/4 cup extra virgin olive oil
1 1/2 cups cheese, I buy a bag of Italian five cheeses already shredded (parmesan, mozzarella, asagio, provolone)
breadcrumbs

Steps:

  • Saute the first six ingredients in olive oil until softened but not browned.
  • Steam clams in batches and remove as they JUST BEGIN TO OPEN. Allow to cool and reserve clam broth.
  • Remove clams from shells and save half of each shell.
  • Process clams with a little broth in a food processor until a little chunky.
  • Combine clams with first six ingredients and add 1 cup of mixed cheeses, mix well.
  • Add breadcrumbs, mixing completely until it holds together like a stuffing; if it seems a little dry add more clam broth.
  • Fill clam shells with this mixture and bake at 350 degrees until golden brown.
  • Serve immediately and enjoy!

4 tablespoons (1/2 stick) butter, softened
1 scallion, chopped
1 1/2 tablespoons freshly minced parsley
1 tablespoon fresh lemon juice
1/4 tablespoon salt
24 cherrystone clams
6 slices bacon, cooked until crisp and crumbled

Steps:

  • Preheat broiler. Combine butter, scallion, parsley, lemon juice and salt in a food processor or blender. Blend until smooth, approximatly 1 minute.
  • Shuck clams. Use a sturdy paring knife or clam knife to pry open the clam opposite its hinge. Once the knife is in, carefully move it along the top shell so you do not cut the meat in half. Once the clam is open, cut the meat off of the bottom shell, reserving as much of the juice as you can. Spoon about 1 teaspoon of butter mixture on top of each clam and top with 1 teaspoon of crumbled bacon. Broil until butter is bubbling, about 3 minutes.

2/3 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup chopped shallots
1 tablespoon chopped garlic
1 cup butter
1 teaspoon sea salt
1/2 teaspoon fresh ground pepper and a pinch of cayenne pepper
1/2 cup chopped parsley
2 tablespoons lemon juice
1/4 cup bread crumbs
5 strips of double cut bacon, partially cooked
24 topneck clams on the half shell, arranged on a bed of rock salt

Steps:

  • Saute the peppers, shallots and garlic in a medium saute pan briefly in 2 tablespoons of the butter to soften slightly (1 minute maximum). Season this mixture with salt, cayenne and fresh pepper and remove to a plate to cool off. Blend the butter, the cooled off vegetables, parsley and lemon juice in a bowl. Dab a generous amount of this butter mix on each clam, sprinkle with fresh bread crumbs and top with a small piece of bacon. Run under the broiler to heat the clams and brown the bacon. You could also bake the clams in a 425 degree oven for 5 minutes to obtain the same result.

1 cup white wine
60 littleneck clams
8 thin slices bacon
2 cups toasted bread crumbs
1 stick butter, melted
3 cloves garlic, minced
1/4 cup chopped parsley leaves
1/4 cup finely grated Parmesan
1 tablespoon salt
2 jalapenos, minced
1 red pepper, minced

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the white wine and the clams in a wide pot with a lid over medium heat. Allow the clams to steam until they open, approximately 10 minutes. Discard any clams that do not open. Remove the clams from the pot and once they are cool enough to work with, remove the meat from the shells. Tear the shells in half and move the meat to 1 side of the shell and discard the other. Place the thinly sliced bacon on a sheet pan and bake until crispy. When they are cooled, crumble the slices individually between both hands, or chop them until they are in fine pieces. See Cook's Note 1.
  • Preheat the broiler.
  • In a medium sized bowl, mix the bacon and all the remaining ingredients and check for seasoning. Liberally top each clam with the bread crumb mixture and place them under a broiler until golden brown. See Cook's Note 2. Serve the clams warm.
  • Cook's Note 1: If you want a little extra flavor, save the drippings and add them in with the topping.
  • Cook's Note 2: Placing the clams on a bed of large granules of salt will help keep them steady in their shells while cooking.

2 tablespoons unsalted butter
4 ounces smoked bacon, chopped
1/4 cup minced shallot
2 tablespoons minced garlic
3 ounces (6 tablespoons) dry vermouth
1/2 cup seasoned breadcrumbs
1/3 cup grated Parmesan cheese
1/3 cup minced parsley
16 cherrystone clams, scrubbed
Fresh lemon juice

Steps:

  • For the stuffing: Over medium heat, melt butter in a heavy bottom skillet until it starts to foam. Add bacon, shallots, and garlic and cook until bacon is cooked and vegetables are translucent, about 6 minutes. Pour in vermouth and stir, scraping bottom of skillet. Reduce heat to low. Add breadcrumbs, Parmesan and parsley. Cook until mixture comes together, approximately 5 to 6 minutes. Remove from heat and set aside.
  • For the clams: Preheat broiler. Place clams on a sheet tray and place them on the middle rack in the oven. Broil until all of the clams have opened, 6 to 8 minutes. Remove from oven, discard top shells and release clam meats from bottom shells. Add clam "liquor" (juices) to the stuffing.
  • Spoon about 1 teaspoon stuffing into each clam shell, covering the clam meats. Place clams back in the oven on the middle rack and broil until stuffing is golden brown, approximately 2 to 3 minutes. Garnish with fresh lemon juice and serve.

2 tablespoons olive oil
2 ounces sliced pancetta or bacon, finely chopped
1 cup finely diced red bell pepper
1/3 cup chopped shallots
2 large garlic cloves, minced
1/4 teaspoon dried oregano
1/3 cup dry white wine
4 tablespoons freshly grated Parmesan
Salt and freshly ground black pepper
18 medium (2 1/2-inch) littleneck clams, shucked, bottom shells reserved

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the pancetta and saute until crisp and golden, about 3 minutes. Using a slotted spoon, transfer the pancetta to a plate. Add the bell pepper, shallots, garlic, and oregano to the same skillet and saute until the shallots are tender and translucent, about 5 minutes. Add the wine and simmer until it is almost evaporated, about 2 minutes. Remove the skillet from the heat and cool completely. Stir the reserved pancetta and 2 tablespoons of Parmesan cheese into the vegetable mixture. Season the mixture, to taste, with salt and pepper.
  • Preheat the oven to 500 degrees F.
  • Line a heavy large baking sheet with foil. Arrange the clams in the reserved shells on the baking sheet. Spoon the vegetable mixture atop the clams, dividing equally and mounding slightly. Sprinkle with the remaining 2 tablespoons of Parmesan. Bake until the clams are just cooked through and the topping is golden, about 10 minutes.
  • Arrange the clams on the platter and serve.

3 slices bacon (about 2 ounces)
1/4 cup unsalted butter, softened
2 tablespoons minced shallots
2 large garlic cloves, minced
2 teaspoons minced fresh flat-leaf parsley leaves
2 teaspoons freshly squeezed lemon juice
1/4 teaspoon kosher salt
Pinch cayenne pepper
36 little neck or cherrystone clams, scrubbed
1/2 cup sourdough breadcrumbs

Steps:

  • Cook the bacon in a medium skillet over medium heat until crisp. Drain and chop fine. Set aside.
  • In a small bowl, stir together the butter, shallots, garlic, parsley, lemon juice, salt, and cayenne until combined. Set aside.
  • Arrange the clams in a single layer in a large skillet pan, cover, and steam over high heat until their shells just begin to open, about 5 to 8 minutes. (Do this in batches if needed.) Set aside. When cool enough to handle, remove the top shells and discard. Slide a knife under each clam to loosen it in the shell.
  • Crumple a large piece of aluminum foil and spread it out on a baking sheet. (The creases in the foil help keep the clams from tipping over.) Spread about a 1/4 teaspoon of the seasoned butter on top of each clam, top with some of the bacon, and about 1/2 teaspoon of the crumbs. Evenly space the clams on the prepared baking sheet. (The clams can be prepared to this point, covered, and refrigerated, up to 4 hours before serving.)
  • Place a rack about 4 inches from the broiler element and preheat. Broil the clams until the crumbs are toasted and the butter is sizzling, about 3 to 4 minutes. Serve warm.

3 strips bacon
1 small green bell pepper
1 small red bell pepper
1/2 sweet onion
1 jalapeño
2 tablespoons butter, softened
1 tablespoon Worcestershire sauce
Juice of 1/2 lemon
1 dozen small cherrystone or large littleneck (i.e. topneck) clams

Steps:

  • Cut each bacon strip into 4 pieces and lightly fry in a pan over medium heat. (You don't want the bacon to become crispy since it is going to go into the broiler later.) Remove and set aside half-cooked bacon.
  • Chop the peppers and the onion into a medium dice. Chop the jalapeño finely, discarding seeds. It's a good idea to wash your hands afterward.
  • Add the peppers, the onion and the jalapeño to the softened butter.
  • Add the Worcestershire sauce and lemon juice to taste.
  • Add a generous pinch of the vegetable mixture to each of the opened clams on its half shell. Place a piece of the cooked bacon on top of the mixture on each clam.
  • Place the clams under the broiler and let cook until the vegetables begin to wilt and the bacon is almost crisp, around 3 minutes. Serve immediately.

24 large clams
2 tablespoons olive oil
1 tablespoon butter
½ cup minced onion
¼ cup chopped green bell pepper
2 cloves garlic, minced
1 cup dried bread crumbs
4 slices bacon
½ teaspoon dried oregano
2 tablespoons grated Parmesan cheese
2 teaspoons dried parsley
¼ teaspoon paprika
2 tablespoons olive oil

Steps:

  • In a small skillet, cook bacon until crisp over medium heat. Crumble, and set aside.
  • Wash clams. Place on a baking sheet. Heat in a preheated 350 degree F (175 degree C) oven for 1 to 2 minutes, or until clams open. Discard any that do not open. Remove meat from shells. Chop, and set aside.
  • Add 2 tablespoons oil and butter to a small skillet, and place pan over medium heat. Add onion, pepper, and garlic; saute until tender. Remove from heat, and cool.
  • In a medium bowl, combine bread crumbs, bacon, oregano, cheese, sauteed vegetables, and chopped clams. Mix well. Fill clam shells with mixture, and place on baking sheet. Sprinkle with parsley and paprika. Drizzle with olive oil.
  • Bake at 450 degrees F (230 degrees C) for 7 minutes. Serve.

Ok, I swore I would never give this recipe to ANYONE, but everyone who tastes this can die, because there is nothing else left. So here it is.

18 top neck clams (a little larger than little necks, but still very tasty)
1 red pepper
1 large onion
4 slices bacon
1 tablespoon Worcestershire sauce, more if needed, must taste to see how spicy you want it (must use Lea & Perrins, nothing else tastes good)
olive oil, for sauting

Steps:

  • Have vendor that sells clams open them for you.
  • Cook bacon until almost crisp (can sauté or bake). Set aside when done.
  • Pour enough olive oil in bottom of pan to sauté (I'm somewhat generous with the olive oil). Be sure not to overwhelm the onion and pepper mixture. You don't want it to oily.
  • 1 onion chopped pretty well.
  • Sauté onion and chopped red pepper. (I use red pepper because it is sweeter taste than green).
  • Sauté till onions are almost caramelized.
  • Pour Worcestershire sauce on mixture.
  • Taste mixture to see if it needs more Worcestershire sauce (we like it tangy).
  • Spoon mixture over each clam.
  • Crumble almost done bacon.
  • Put under broiler for a minute.
  • Don't burn bacon.
  • Walla this is just the best thing EVER!
