2-1/2 cups all-purpose flour
1-1/4 cups sugar
3 teaspoons ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
3 eggs
3/4 cup applesauce
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 cups grated carrots
1 medium tart apple, peeled and grated
1 can (8 ounces) crushed pineapple, drained
1/2 cup sweetened shredded coconut
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, combine the eggs, applesauce, oil and vanilla. Stir in carrots, apple, pineapple, coconut, raisins and nuts., Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

1 cup unbleached all-purpose flour
1 cup whole wheat flour
¾ cup dried cranberries
½ cup shredded sweetened coconut
¼ cup ground flax seed
1 tablespoon ground cinnamon

1 large Granny Smith apple, shredded
¾ pound carrots, shredded
1 cup crushed pineapple, drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 large muffin cups.
  • Mix brown sugar, all-purpose flour, whole wheat flour, cranberries, coconut, flax seed, cinnamon, baking soda, and salt together in a bowl. Add grated apple and carrots; stir to combine. Add pineapple, vegetable oil, applesauce, pecans, eggs, and vanilla extract; stir until just combined. Pour batter into prepared muffin cups.

Healthier Morning Glory Muffins image

This recipe is the hybrid morning glory muffin recipe that I have developed, after making many different recipes that either had a tonne of oil in them, or were much sweeter than I care for. These are very tasty and have less oil and sugar than some other recipes.

2 cups grated apples (I used 2 large cortlands)
1 cup shredded unsweetened coconut
3/4 cup raw sunflower seeds
2 cups grated carrots (~2 large carrots)
3/4 cup raisins
1 cup milk
2 eggs, lightly beaten
1 teaspoon vanilla
1/2 cup vegetable oil
2 cups all-purpose flour
1 cup whole wheat flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
3/4 cup brown sugar
1/4 cup white sugar

Steps:

  • Preheat over to 400 degrees F.
  • On a baking sheet, spread a layer of coconut and sunflower seeds. I placed coconut on one side and sunflower seeds on the other, but ended up mixing them together lated on. These will toast very quickly, so make sure they don't burn!
  • Meanwhile, you can start grating the apples and the carrots. Place in a large mixing bowl, and add raisins to the mixture. When the coconut and sunflower seeds are toasted, put 3/4 of them in with the apples and carrots, and reserve 1/4 for a topping. In the same bowl, mix in the milk, eggs, vanilla, and oil.
  • In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, and salt. Next, add the whole wheat flour, all of the spices, brown sugar, and cane or white sugar, mix thoroughly.
  • Put in lined paper muffin cups, and bake in pre-heated oven for ~15-20 minutes. They are done when a toothpick comes out clean.
  • Enjoy!

  • In a large bowl, whisk together the eggs, oil and vanilla. Add the carrots, apple, pineapple, pecans, coconut and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. These are healthy, filling, have a variety of flavors...I just can't say enough about them. With a cup of coffee or orange juice, they are my perfect quick breakfast or snack. This recipe is from a newspaper that's a couple decades old, a friend (Thanks Mary!) photocopied it for me when I was at her house raving about the muffin she gave me to eat. I hope you love them as much as I do. Also, I changed the flour from all white flour to part white flour, part wheat flour, to make it healthier. The original recipe calls for 2 1/4 cups white flour.
