THE BEST ZUCCHINI FRITTERS EVER
This recipe was given to me after smelling them cooking in my neighbor's kitchen while working in the garden. Zucchini is mixed with onion and cheese into some heavenly fritters. I look forward to making them every summer, all summer! You will too!!!

Steps:
- In a large bowl, mix together the zucchini, onion, eggs, Romano cheese, milk, and flour. Season with salt, pepper, garlic powder, onion powder, and parsley.
- Heat about 1 tablespoon of shortening in a large skillet over medium heat. Drop 1/4 cupfuls of the batter into the skillet, and flatten slightly with the back of a spatula. Turn fritters over when the center appears dry. Cook on the other side until golden brown. Set aside and keep warm. Add more shortening to skillet as needed, and continue with remaining batter.

- In a large bowl mix together all of the ingredients besides the oil.
- Place a cast iron or non-stick pan over medium heat until hot. Add the oil and swirl to coat the pan (a non-stick pan needs less oil). Scoop out 2- to 3-tablespoon mounds of the onion mixture into the pan, flattening the mounds slightly with a spoon and spacing them about one inch apart.
- Cook the fritters for 2 to 3 minutes, flip them once, and cook them for an additional 1 to 2 minutes until they're golden brown and cooked through. (*See recipe note below for baking instructions).
- Serve warm with yogurt or sour cream or my Beet Aioli (recipe in the notes section).

- In a medium bowl combine the cornmeal, flour, baking powder, salt, pepper and nutmeg.
- In a large bowl beat the egg. Stir in the milk and reserved corn liquid (or water).
- Stir in the dry ingredients and blend well.
- Stir in the corn (if using frozen corn, defrost first) and green onions. For best results, refrigerate batter for 30 minutes.
- In a large pan heat some oil until it bubbles when a small amount of batter is dropped inches.
- Dip a utensil into the hot oil to coat and then measure out 1 rounded tablespoon of the cornmeal batter into the pan.
- Cook fritters until golden on one side then turn over and cook until golden on other side.
- Remove fritters from the pan, drain on paper towels and transfer to warming platter.
- Serve warm with garnish of green onion slices and red pepper flakes if desired. Season with salt and pepper if necessary.
- Yield: I eat these too fast to remember how many fritters the recipe yields! Also, be sure your cornmeal is fresh.

VEGAN CORN FRITTERS
These Vegan Corn Fritters are packed with flavor and can be enjoyed as an appetizer, side dish or snack.

- Prepare a paper towel-lined plate or tray and set aside.
- To a large bowl, add the flour, cornmeal, garlic, baking powder, salt and pepper. Whisk to combine well.
- Add the milk and whisk until combined. The batter should be thick, but if looks dry, add a few teaspoons of milk or oil to moisten.
- Add the corn, bell pepper and green onions. Fold with a spatula to combine.
- Heat up a Large Non-Stick Skillet over medium heat for 1-2 minutes. When hot, drizzle oil on the bottom of the pan to coat.
- Using a Large Cookie Scoop (or 1/4 measuring cup filled 3/4 the way), scoop about 3 tablespoons of batter out and into the pan (you should hear the batter sizzle). Gently press down the mound to flatten. Repeat in a clockwise pattern until you run out of room. Don't crowd the pan or they won't crisp well.
- Cook fritters for 2-4 minutes or until golden brown. Using a spatula, check under the first fritter you placed to see if it's ready, then flip and repeat on the other side. Check the rest in the same clockwise direction and flip when ready. The other side will likely cook faster so keep an eye on them. If the pan is smoking, turn down the heat.
- Place fritters on paper towel-lined plate to absorb excess oil. Repeat method until all batter is gone. Serve with dip and enjoy!

- Peel plantain, grate plantain using a box grater.
- Add grated plantain to a bowl, stir in flour, bell pepper, green onion, garlic, baking powder, salt, annatto powder.
- Add water and mix to form a wet batter.
- Heat oil in a large skillet over medium-high heat. Add a tablespoon full of the batter to your frying pan and lightly flatten with a spatula or the back of the spoon.
- Cook for 3 minutes on one side until golden brown, flip and cook them for another 3 minutes on the other side
- Remove excess oil using a paper towel, serve immediately, or keep warm on a baking tray in the oven at 250 degrees F.

Steps:
- Fill a medium saute pan with 2-3 inches of vegetable oil and heat to medium-high heat.
- Arrange a paper towel lined plate on the counter to place the fritters on when they come out of the hot oil.
- In a bowl, make the batter by combining the all-in-one pancake mix with the water (the batter will be on the thick side).
- Add the chopped green onions and season with cayenne, salt & pepper.
- When the oil is ready for frying, drop by spoonfuls of the batter into the oil and fry on all sides until golden brown and puffy.
- This should take no more than 3-4 minutes.
- Remove and drain on the paper towel lined plate.
- Reseason with salt while they are still hot.

- Whisk egg into a bowl and beat well. Add the water and the lemon juice. Mix. Add remaining ingredients, chickpea flour through cilantro and mix well. Set aside for at least 10 minutes.
