SOUTHERN MEATLOAF RECIPE
A quick and easy Southern classic. You'll love our meatloaf recipe with it's slightly sweet tomato based sauce topping.

Steps:
- Place ketchup in a small mixing bowl.
- Add brown sugar.
- Add yellow mustard.
- Stir well. Set aside.
- In a large mixing bowl, break the bread into small pieces.
- Crumble the saltines and add to the bowl.
- Add the milk.
- Stir well to moisten the bread and saltines. Use more milk if needed. Set aside for 5 minutes.
- Chop the onions very fine. Set aside.
- Crumble the ground beef on top of the moistened bread and saltines.
- Add the lightly beaten egg.
- Add the onions.
- Add the garlic powder.
- Add the Worcestershire Sauce.
- Add the ground mustard.
- Add the black pepper.
- Gently mix all the ingredients together until fully combined.
- Place the meat mixture in a baking loaf pan.
- Press the meat firmly into the pan.
- Turn the meat mixture out onto a sheet pan that has been lined with aluminum foil.
- Bake at 350F degrees for 40 minutes.
- Pour the sauce over the top of the meatloaf, spread with a spoon to cover the top.
- Continue to bake, 15 to 20 minutes longer until meatloaf is done.
- Internal temperature should reach 160 degrees.
- Remove pan from oven, set on wire rack to cool and rest for 10-15 minutes.
- Slice as needed.
- Enjoy!
AUNT LIBBY'S SOUTHERN MEATLOAF
This my 86-year-old Aunt Libby's home-made meatloaf recipe. I finally had her write it down for me last year. You can be sure no one will tell you this meatloaf is dry!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
- Mix beef, onion, 1 cup ketchup, bread crumbs, eggs, salt, and pepper together in a bowl. Press beef mixture into a loaf in the prepared loaf pan.
- Mix 1 1/2 cups ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce together in a saucepan; cook and stir over medium heat until sauce is smooth and warm, about 10 minutes. Pour 1/3 the sauce over meatloaf.
- Bake in the preheated oven, basting every 25 minutes with more sauce, until meatloaf is cooked through, 1 to 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Cool in the pan for 10 minutes before slicing.

SOUTHERN MEATLOAF
Steps:
- Gather the ingredients. Pre-heat the oven to 350 F.
- Grease an 8 1/2 x 4 1/2-inch loaf pan or line it with foil and then lightly grease it. Alternatively, for a free-form loaf, line a rimmed baking pan with foil.
- In a large bowl, combine the ground beef with the crushed saltines, onion, green pepper, egg, paprika, garlic powder, salt, thyme, black pepper, 1/3 cup of ketchup , milk, and Worcestershire sauce .
- Pack the meat mixture into the loaf pan or shape it and place it on the baking pan.
- Bake the meatloaf for 1 hour. Carefully pour excess grease into a can or jar (dispose of it in the trash after it cools).
- Spread the meatloaf with 1/2 to 3/4 cup of ketchup or barbecue sauce and continue baking for 15 minutes longer, or until the meatloaf registers at least 160 F on an instant-read food thermometer inserted into the center. (If you have instead swapped ground turkey or chicken for the beef, cook the loaf to an internal temperature of 165 F.)
- Let the meatloaf rest for ten minutes before slicing so it holds together well. Then, serve and enjoy!

THE BEST MEATLOAF
We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

- Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
- Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
- Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
- Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
- Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.

- Preheat the oven to 350 degrees F.
- In a stand mixer, mix the beef, cracker crumbs, egg, ketchup, mustard, salt, pepper, and onion until just blended. Shape the mixture into two loaves and place side by side crosswise in a 9-by-13-by-2-inch pan. Bake the loaves for 1 hour, or until they are browned. Transfer to a platter immediately and allow the loaves to cool slightly and firm up before slicing.

- In a large bowl, beat eggs.
- Add milk and bread; let stand a few minutes or until the bread absorbs the liquid.
- Stir in the onion, carrot, cheese, herbs and seasonings.
- Add beef; mix well.
- In a shallow baking pan, shape beef mixture into a 7 1/2 inches x 3 1/2-in. x 2 1/2-in. loaf.
- Bake at 350 degrees for 45 minutes.
- Meanwhile, combine topping ingredients. Spoon some of the topping over meat loaf.
- Bake for about 30 minutes longer or until no pink remains, occasionally spooning some of the remaining topping over loaf.

- Preheat oven to 350 degrees.
- Spray glass or metal baking pan with non-stick baking spray.
- Place all ingredients, except venison, in large bowl and mix well.
- Add the venison and mix well.
- Form into two loaves and place them in baking dish.
- With your fingers or handle of wooden spoon, make about 10-12 holes in top of meatloaf.
- Pour the sauce over the top of meatloaf, letting some sauce run into the holes and a little run down the side of the meat loaf.
- Bake uncovered for 1 hour or until meat is browned on the outside.
- Cool 15 minutes before removing from pan.
- This is equally good made with lean ground beef.

- Preheat oven to 350°. Combine bread and stock; let stand until liquid is absorbed. , Meanwhile, pulse mushrooms, onion, carrot, celery and garlic in a food processor until finely chopped. Let stand 10 minutes before slicing., Freeze option: Shape meat loaf on a plastic wrap-lined baking sheet; wrap and freeze until firm. Remove from pan and wrap securely in foil; return to freezer. To use, unwrap meat loaf and bake as directed, increasing initial baking time to 2 hours. Mix together glaze ingredients; spread over loaf. Bake until a thermometer inserted in center reads 160°, 15-25 minutes longer. Let stand 10 minutes before slicing.
