AWESOME FRUIT AND NUT BARS

Steps:
- Place all ingredients in food processor, and process until the ingredients are all combined - the mix should be sticky, there should be no obvious lumps of fruit or nuts. Depending on your food processor this can take a while - mine took a minute or so to process to the required level.
- Line a tray or dish with cling film, and scrape the mix into the dish. Press down hard with the back of a spatula to flatten the top. The mix should be about 1 inch/2cm in height.
- Place in the fridge for at least 30 minutes before cutting into 12 bars. The bars can be wrapped individually, kept in airtight container (separated with cling film if necessary) in the fridge, or even frozen, if you find you can't stop yourself eating them!

Steps:
- 1. Preheat oven to 325.
- 2. Grind whole flaxseed in a coffee or spice grinder. Combine with peanut butter, honey, salt, and water in large bowl and stir to combine.
- 3. Add dried fruits, nuts and seeds in whatever combination you like. Batter will be very stiff.
- 4. Spray 12 cup muffin tin with nonstick spray and divide batter evenly into cups. Use damp fingers to press batter into cups and flatten tops.
- 5. Bake 25 to 30 minutes until tops are dry and edges are a deep, toasty brown (bars will not rise). Cool completely and store in air-tight container for up to two weeks.

- Heat oven to 350°F.
- Line 13x9-inch pan with foil, leaving ends of foil hanging over sides of pan; spray with cooking spray.
- Beat cake mix, COOL WHIP and egg in large bowl with mixer until blended. (Batter will be thick.) Stir in nuts and cranberries.
- Spread onto bottom of prepared pan.
- Bake 25 to 30 min. or until toothpick inserted in center comes out clean; cool completely.
- Melt chocolate as directed on package; drizzle over dessert. Use foil overhang to remove dessert from pan; slice into bars.

Steps:
- Beat cream cheese, butter, sugar and vanilla in large bowl with mixer until blended. Add flour and baking soda; mix well. Refrigerate 1 hour or until chilled.
- Heat oven to 325°F. Line 13x9-inch pan with foil, with ends of foil extending over sides. Spray with cooking spray. Roll out dough on lightly floured surface to 15x11-inch rectangle; press onto bottom and 1 inch up sides of prepared pan. Prick bottom of crust in several places with fork. Bake 10 min.
- Mix sweetened condensed milk and eggs until blended; pour into crust. Top with remaining ingredients.
- Bake 20 min. or until center is almost set. Remove from oven; cool completely. Use foil handles to remove dessert from pan before cutting into bars.

Steps:
- Heat oven to 160C/fan 140C/gas 3. Gently heat the sugar, golden syrup and butter in a pan until the sugar and butter have both melted. Stir the oats, raisins, walnuts, seeds and cranberries into the pan until coated in the butter.
- Spoon half the oaty mix into a traybake tin (23 x 23cm or thereabouts). Scatter the apricots over the top, then top with the remaining oat mix. Pack the mix down well and smooth with the back of a metal spoon. Bake for 35 mins or until dark golden. Leave to cool completely before cutting into 16 bars with a sharp knife.

FRUIT AND NUT GRANOLA BARS
Adapted from lots of other recipes, this healthy version is our favorite. Easily made in one saucepan, and makes a quick breakfast option! The butter is optional, but we like them much better with it included...

Steps:
- Preheat the oven to 350 degrees.
- Grease an 8x8 glass pan.
- Place nuts and oats on a baking sheet, and bake for about 12 minutes or until lightly toasted.
- While oats and nuts are toasting, place in a saucepan over medium heat the honey, brown sugar, butter, vanilla, cinnamon and salt.
- Stir until the mixture bubbles, and keep it boiling and stirring for about 2 minutes.
- When oats and nuts come out of the oven, turn it down to 325.
- Take the pan off the heat, and when the oats are finished, pour them right into the saucepan and mix to combine honey mixture evenly.
- Stir in the chopped dried fruit.
- Press mixture into the glass pan with the back of a spoon - it will be pretty sticky.
- Bake at 325 for 20 minutes, and let cool completely before cutting.
- Wrapped in saran wrap, these will keep for at least a couple of weeks!

STARBUCKS CHEWY FRUIT AND NUT BARS
In fall 2008, Starbucks added several "healthy" breakfast items to their bakery case. My husband commented to me, "Look, they have a granola bar that looks exactly like the ones you make!" I checked their list of ingredients and then made modifications to my Recipe #236509 #236509, so that they are as close to the Starbucks version as possible. Take them to breakfast meetings at work, when you need something MORE than a donut, muffin or bagel.

- Ingredient note: look in your health food aisle for a healthy alternative to Rice Krispies. The brand I found is made by Enviro-Kidz and uses BROWN rice.
- Prepare 9x13 pan with non-stick spray (or line with parchment paper).
- In a large mixing bowl, toss all dry ingredients. Feel free to substitute your preferred nut or dried fruit.
- In a saucepan, combine brown sugar and corn syrup. Bring to a boil and allow to boil one minute. (Note: boiling the sugars is what helps the bars become firm and not sticky, so this step is important).
- After boiling, turn off heat; add vanilla and peanut butter. QUICKLY pour this hot mixture over the dry ingredients and toss to combine.
- Pour warm mixture into prepared pan. Wet your fingers and press the mixture down into the pan to compress the bars so they will slice evenly.
- When cool, use a sharp knife to cut into 18 bars (1 long lengthwise cut and 9 cuts across). Enjoy with a hot cup of Starbucks coffee for an authentic experience!
- Note: Starbucks does not list corn syrup in their ingredients, but the sweetener in their list is not readily available. I tried using Maple Syrup, but the bars were very crumbly and would not stay together in bars. Therefore, I found that Corn Syrup is the best ingredient that is readily available.
