4 quarts fresh corn (cut from about 20 ears)
1 quart hot water
2/3 cup sugar
1/2 cup butter, cubed
2 teaspoons salt

Steps:

  • In a stockpot, combine all ingredients; bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes, stirring occasionally. Transfer to large shallow containers to cool quickly, stirring occasionally. Freeze in airtight containers, allowing headspace for expansion.

Best Ever Way to Freeze Sweet Corn image

A farmer friend of ours taught me the way to freeze sweet corn and enjoy it like it was just picked in the middle of the winter. It's very simple and all you need is freezer room, ziploc bags and water!!!!!! He would drop off a large sack of corn to us when it was in season and we would have it all winter. I have tried freezing corn every which way and it always tastes 'soggy'. This way keeps the corn incredibly crisp!!! Enjoy!!

3 -4 ears fresh sweet corn, shucked
water
ziploc bag

Steps:

  • Place three or four ears of shucked corn in a bag and fill with water. Zip closed and place in the freezer.
  • To cook, simply add the corn and ice (removed from the plastic bag) to already boiling water and when the water boils again time to your desired doneness.

12 ears corn, husks and silk removed
1 ½ cups water
½ cup white sugar
2 tablespoons salt

Steps:

  • Slice corn from the cob into a large skillet, leaving about a third of the kernel still on the cob. Using the back of the knife, scrape all of the juice and remaining kernels into the skillet. Stir in water, sugar, and salt and cook over medium high heat until sugar has dissolved, about 10 minutes. Allow to cool to room temperature before serving.

Here in Nebraska the sweet corn is ready and everyone is "doin corn". I got this recipe from a friend of mine and have been "doin" it for a few years now. Simple and oh so good.

18 -20 cups uncooked sweet corn
1 pint half-and-half
1/2 cup butter
1/2 cup margarine

Steps:

  • Cut corn off the cobs.
  • Mix all ingregients together in a roasting pan.
  • Bake, uncovered for 1 hour at 325.
  • Stir every 15 minutes.
  • Cool and freeze.
  • Can use ziploc bags or freezer containers.
