Steps:
- In a small bowl, mix together mayonnaise, hot sauce, and smoked paprika. (Or substitute Special Sauce or Russian Dressing for Big Mac-style flavors.)
- Slice the tomato into large slices and sprinkle with a little kosher salt. Tear the romaine leaves in half. Toast the bread.
- In a large skillet, melt the butter over medium low heat. Add the eggs and sprinkle with a pinch of kosher salt and a few grinds black pepper. Cook for 2 to 3 minutes, until the whites are firm but the yolk is still runny (do not flip).
- To serve, top one bread slice with lettuce, tomato, a pinch of kosher salt, avocado, and egg. Slather the top slice of bread with smoky mayo and place it on top of the sandwich.

Steps:
- Combine the ketchup and chipotle and spread on the inside of each piece of bread. Place the cheese between the bread at an angle so that the edges hangover the sides of the bread. Butter the outside of one bread slice with half the butter. Heat a skillet over medium heat. Press the sandwich on, buttered-side down. Press until the bread is golden brown and the cheese has started to melt. Butter the other side (which is facing up) with the remaining butter and flip. Cook until golden brown and the cheese is gooey, this should all take 3 to 4 minutes. Remove the sandwich from the heat and hold.
- Meanwhile, in a pan over medium heat, cook the bacon until barely crisp, about 5 minutes. Flip the bacon, pushing the two pieces next to each other to form a square. Crack the egg on top, cooking into the bacon. Continue cooking until the egg is set, about 5 minutes. Open up the sandwich (use a spoon to help pull apart the bread) and slide in the eggs and bacon. Close up, slice and enjoy.

This is something my grandmother used to make for my dad and us grandkids. My husband and I love it and are not ashamed. An old southern classic.

- Using a spatula, place each egg on a slice of toast.

Steps:
- Heat the drippings in a wide flat-bottomed skillet until they spit and smoke. Break in the eggs. They will immediately bubble around the edges, making then crisp. Break their yolks with a fork and swirl them around, so that they are scattered fairly evenly through the whites. This will cook very quickly and the eggs should be tough. Either push them to one side of the pan or remove them, and fry bread in the drippings for each sandwich, two slices an egg. Fry on one side only. Sandwich egg between bread slices. Wrap them in waxed paper.
FRIED EGG SANDWICH
Great comfort food! You can use any type of bread or cheese that you want for this quick and easy breakfast. Serve with fruit and juice and/or milk for a full breakfast.

- Divvy the cheese between the slices of bread and place them on a baking sheet, cheese-side up. (And yes, 8 slices of cheese is a lot but it’s also obscenely good. How much you use is between you and your scale.) Slide the baking sheet under the broiler and keep watch until the cheese melts, which will probably be a matter of seconds and not minutes.
- Heat about a teaspoon olive oil or butter in a skillet over medium-high heat. After about 20 seconds, crack the egg into the skillet. Reduce the heat to medium and let the egg sit until the white sets completely. Sprinkle with salt and pepper.
- Remove the melted cheese toasts from the broiler and slide onto a plate. Using a spatula, place the egg, sunny-side up, on a slice of cheesy toast. Top with bacon or ham, if desired, then top with the other cheese toast, cheese side down. Eat immediately, employing the hot sauce as desired, or return the sandwich to the skillet, adding more oil or butter if needed, and cook it as you would a grilled cheese sandwich until the bread is golden and crunchy, flipping the sandwich once. Then eat immediately.

- Fry an egg; sunny side up, over easy, over medium, or over well. You do you! Make it just the way you like it.
- Heat a skillet over medium heat (I like to use a cast-iron skillet). Add one slice of bread, butter side down.

- Butter the exterior of sourdough bread with 1 tablespoon of butter (1/2 tbsp for each slice) and toast the bread, buttered side down, in a skillet set over medium heat until the exterior is golden brown.
- Melt remaining tablespoon of butter in a separate skillet set over medium heat and add two cracked eggs. Sprinkle with salt and pepper to taste and let cook for two minutes, or until the bottom of the eggs are firm. Gently flip the eggs and cook for an additional minute. Add a slice of cheese to the top of eggs after flipping so it begins to melt.*
- Remove eggs from skillet, place on top of a sourdough slice, top with bacon, and add the remaining slice of sourdough on top (along with any condiment you desire), ensuring the buttered side of the bread slices are on the exterior.

- Wendy’s — Breakfast Baconator. Calories: 730. Protein: 34g. When I said McDonald’s McMuffin had the best form factor for a fast food breakfast sandwich, the Breakfast Baconator probably has the worst.
- McDonald’s — Sausage McMuffin with Egg & Cheese. Calories: 480. Protein: 20g. I’m not 100% sure I’ve made the right decision by putting this at number two, but we’re going for it.
- Carl’s Jr — The Breakfast Burger. Calories: 830. Protein: 42g. Who says you can’t have a burger for breakfast? Carl’s Jr’s Breakfast Burger is amazing.
- Chick-fil-A — Chicken Biscuit. Calories: 460. Protein: 19g. I have a lot of mixed feelings about this sandwich, in fact, calling it a “sandwich” feels a little ridiculous.
- Farmer Boys — 2-Egg Breakfast Sandwich with Sausage. Calories: 674. Protein: 30g. Farmer Boys 2-Egg Breakfast Sandwich with Sausage has to be the most boring breakfast sandwich out there.
- Jack in the Box Loaded Breakfast Sandwich. Calories: 707. Protein: 36g. If you’re going to get a sourdough sandwich from any fast food joint, make it Jack in the Box.
- Dunkin’ — Sourdough Breakfast Sandwich. Calories: 650. Protein: 31g. If you need a place you can drive-thru in the morning that has coffee and good food, Dunkin’ is your spot.
- Burger King — Fully Loaded Croissan’Wich Bacon, Ham, Sausage. Calories: 572. Protein: 27g. The Burger King Fully Loaded Croissan’Wich Bacon, Ham, and Sausage sounds like it should be a winner.
- Sonic — Sausage Breakfast Toaster. Calories: 720. Protein: 29g. Sonic only has two breakfast sandwiches on the menu, the Bacon Sausage Toaster and the Sausage Breakfast Toaster.
- Subway — Bacon, Egg & Cheese. Calories: 710. Protein: 35g. I was shocked to find out that Subway has breakfast sandwiches, and even more shocked when I saw the weird folded flatbread this thing is served on.
