3/4 cup reduced-fat plain yogurt
1/4 cup canola oil
2 teaspoons vanilla extract
2 cups shredded zucchini
FROSTING:
1 can (5 ounces) evaporated milk
1 cup sugar
1/4 teaspoon vanilla extract
4 ounces unsweetened chocolate, chopped
1/4 cup butter, cubed

Steps:

  • Preheat oven to 350°. Grease a 13x9-in. baking pan., In a large bowl, whisk the first seven ingredients. In another bowl, whisk eggs, yogurt, oil and vanilla until blended. Add to flour mixture; stir just until moistened. Stir in zucchini., Transfer batter to prepared pan. Bake 25-30 minutes or until top springs back when lightly touched. Cool completely in pan on a wire rack., For frosting, place evaporated milk, sugar and vanilla in a blender jar; cover and process 30 seconds. In a microwave, melt chocolate and butter; stir until smooth. Add to milk mixture; cover and process 30-45 seconds or until thickened and smooth, stopping to scrape blender jar as needed.

3 teaspoons vanilla extract

1 stick (½ cup) unsalted butter
¾ cup plus 2 tablespoons light brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1⅔ cups all purpose flour, spooned into measuring cup and leveled off with a knife
⅓ cup Dutch-process cocoa powder (ok to substitute natural cocoa powder)
¾ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon espresso powder or instant coffee (optional)
2 cups shredded zucchini, gently packed (you'll need about 2 medium zucchini; do not wring out the liquid)
1 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350°F degrees and grease an 8½ x 4½-inch loaf pan with nonstick cooking spray.
  • Place the butter in a large microwave-safe mixing bowl and microwave for one minute, or until just melted. Stir in the brown sugar until completely smooth. Add the eggs and vanilla and stir until incorporated. (Be sure to add the eggs after the brown sugar is mixed in, as the hot butter alone could cook the eggs.)
  • Whisk together the flour, cocoa powder, salt, baking powder, baking soda and instant coffee (if using) in a medium bowl. Add to the butter mixture and stir until well combined. It will be very thick.
  • Stir in the shredded zucchini and chocolate chips. (It will still be thick -- that's okay.)

  • Freezer-Friendly Instructions: The bread can be frozen for up to 3 months. After it is completely cooled, wrap it securely in aluminum foil, freezer wrap or place in a freezer bag. Thaw overnight in the refrigerator before serving.

I've been making this recipe for ions now. It was a collaboration between myself and a friend about 25 years ago. I haven't found one I like better. I hope you will agree. These loaves also freeze very well. Note: You could try using applesauce for some or all of the oil in order to reduce the fat content. However....I haven't tried it myself.

1 cup white sugar
1 cup brown sugar
1 cup oil
3 teaspoons maple extract

115 g unsalted butter (softened)
250 g caster sugar
125 ml rapeseed or sunflower oil
1 tsp vanilla extract
pinch of salt
2 large eggs
125 ml sour cream or plain full fat yogurt
300 g plain (all-purpose) flour
1 tsp baking soda
1/2 tsp baking powder
60 g cocoa or cacao powder
340 g courgette (zucchini) (grated (see notes) )
60 g dark chocolate chips or roughly chopped dark chocolate
100 g dark chocolate or chocolate chips
40 g unsalted butter

Steps:

  • All the ingredients should be at room temperature. Sieve flour, salt, cocoa powder, baking powder and baking soda and put aside.
  • Put butter and sugar in a large bowl or bowl of your standing mixer and mix together until light and fluffy. Add eggs one at a time and continue mixing. Gradually add oil and vanilla.
  • Add sieved dry ingredients in three parts alternating with sour cream/yogurt. Mix only until all the ingredients are incorporated, do not over mix. Add courgette (zucchini) and chocolate chips and fold them in gently.
  • Put the mixture in a baking tin lined with baking paper and bake for approx 50-55 mins at 160C/320F/Gas Mark 3 until the skewer inserted into centre comes out clean. Take the cake out of the oven and let it cool before spreading chocolate ganache.
  • To make ganache put butter and chopped dark chocolate in a pan on low heat and mix until melted and combined. Cool slightly, spread onto your cake and enjoy!

2 tbsp honey
2 tsp vanilla extract
1/3 cup Greek yoghurt
1 1/2 cups wholemeal flour

1 cup low fat buttermilk
2 large eggs
1 teaspoon vanilla
2 ¼ cups all purpose flour (fluffed and levelled (293 grams))
¾ cup cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
¾ teaspoon salt
3 cups shredded zucchini ((about 2 small or 1 large))
1 ½ cups heavy whipping cream
½-¾ cup powdered sugar (more or less depending on your tastes)
2 tablespoons cocoa powder
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees F and lightly grease a 9x13" pan.
  • In a large bowl, whisk together sugar, buttermilk, eggs and vanilla until smooth.
  • To the bowl, add flour, cocoa powder, baking soda, baking powder and salt and whisk just until completely combined.
  • Add the shredded zucchini (no need to squeeze it out!) and stir until combined.
  • Pour into prepared pan and bake for 30-35 minutes until a toothpick comes out clean or with moist crumbs (as long as there's no batter it's good to go!). Let cool to room temperature.

This gluten free chocolate zucchini cake is made with a mix of almond flour and oat flour and can be made in one bowl for the perfect, easy summer dessert!

Wet ingredients:
1 medium zucchini, shredded and squeezed of excess moisture with a paper towel (1 cup shredded zucchini)
2 eggs
1/2 cup coconut sugar (or sub brown sugar)
1/3 cup pure maple syrup
1 (5.3 oz) container siggi's 0% vanilla yogurt
1 teaspoon vanilla extract
1/4 cup virgin coconut oil, melted and cooled
Dry ingredients:
1 ½ cups packed fine blanched almond flour
½ cup oat flour
1/2 cup cacao powder (or sub unsweetened cocoa powder)
1 teaspoon baking soda
¼ teaspoon salt
1/2 cup chocolate chips
For the topping:
1/2 cup chocolate chips
1 teaspoon coconut oil
Maldon sea salt, for sprinkling on top
Raspberries to garnish

Steps:

  • Preheat the oven to 350 degrees F. Line an 8x8 inch pan with parchment paper and spray with nonstick cooking spray.
  • First, measure out 1 heaping cup of shredded zucchini, then place shredded zucchini in a paper towel or cheese cloth and squeeze out all of the moisture/water. This is very important!
  • Add shredded zucchini, eggs, coconut sugar, pure maple syrup, siggi's yogurt, vanilla extract to a large bowl and whisk together until well combined. Finally stir in melted and cooled coconut oil until well combined.
  • Next, add dry ingredients: almond flour, oat flour, cocoa powder, baking soda and salt. Mix together with a wooden spoon until well combined. Fold ½ cup chocolate chips into the batter.
  • Pour batter into the prepared pan. Bake for 30-40 minutes or until a tester comes out clean. Allow the cake to cool for at least 30 minutes in the pan on a wire rack before topping it.
  • Next make the topping: add chocolate chips and coconut oil to a medium bowl; microwave in 30 second increments, stirring in between, until chocolate is melted. Alternatively you can melt the chocolate in a saucepan over low heat. Once chocolate is melted, pour over the cake and tilt the pan side to side to help evenly distribute the chocolate and coat every inch of the cake. Finally, sprinkle a little sea salt on top if you'd like.
  • Cut the cake into 12 slices. Serve with fresh raspberries or strawberries and enjoy! Store cake in the fridge after a day.

Steps:

  • Preheat oven to 325°F. Butter and flour 13 x 9 x 2-inch baking pan. Sift flour, cocoa powder, baking soda and salt into medium bowl. Beat sugar, butter and oil in large bowl until well blended. Add eggs 1 at a time, beating well after each addition. Beat in vanilla extract. Mix in dry ingredients alternately with buttermilk in 3 additions each. Mix in grated zucchini. Pour batter into prepared pan. Sprinkle chocolate chips and nuts over.
  • Bake cake until tester inserted into center comes out clean, about 50 minutes. Cool cake completely in pan.

  • Pour batter evenly into cake pans. Bake for around 25-32 minutes or until the cakes are baked through. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean, it is done. Allow cakes to cool completely in the pans set on a wire rack. The cakes must be completely cool before frosting and assembling.
  • First, using a large serrated knife, slice a thin layer off the tops of the cakes to create a flat surface. Discard (or crumble over ice cream!). Place 1 cake layer on your cake stand or serving plate. Evenly cover the top with frosting. Top with 2nd layer and spread the remaining frosting all over the top and sides. Pipe any leftover frosting on top. (I used Ateco #30 tip.) Decorate with chocolate sprinkles or mini chocolate chips if desired. Slice and serve.
