1 pound lean ground beef
1 pound Italian sausage (or spicy Italian sausage or ground beef)
1 medium yellow onion (diced)
1 red bell pepper (seeded and chopped)
1 to 2 garlic cloves (minced)
30 ounces kidney beans (rinsed well and drained (2 15 oz cans))
15 ounces pinto beans (rinsed well and drained (1 can))
29 ounces diced tomatoes (use the entire can, juice and all)
3 ounces tomato paste
8 ounces tomato sauce
2 tablespoons Worcestershire sauce
1 cup beef broth
1 teaspoon hot sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
¼ teaspoon cayenne
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon brown sugar or granulated sugar

Steps:

  • Brown the ground beef and sausage in a large skillet over medium heat until mostly cooked through. A little pink is fine.
  • Add the diced onion, bell pepper, and garlic and stir to combine. Cooking cooking over medium heat until onion is translucent.
  • Transfer the beef mixture to a 6 quart crockpot or slow cooker.
  • Add the kidney and pinto beans.
  • Top with diced tomatoes, tomato paste, tomato sauce, Worcestershire sauce, beef broth and hot sauce.
  • Next add the seasonings (chili powder, cumin, paprika, cayenne, salt, pepper and sugar). Stir to combine
  • Place the lid on the slow cooker and cook on low for 4 to 6 hours or on high for 2 to 3 hours, stirring occasionally.
  • Serve with desired toppings such as shredded cheese, sour cream, corn chips, tortilla chips, etc.

3 dried ancho or guajillo chiles
1 to 2 cups boiling water
2 tablespoons tomato paste
3 garlic cloves
1/4 cup chili powder
1-1/2 teaspoons smoked paprika
2 teaspoons ground cumin
1 pound ground beef
1-1/2 teaspoons Montreal steak seasoning
2 pounds beef tri-tip roast, cut into 1/2-inch cubes
2 teaspoons salt, divided
2 teaspoons coarsely ground pepper, divided
2 tablespoons canola oil, divided
1 large onion, chopped (about 2 cups)
1 poblano pepper, seeded and chopped
1 teaspoon dried oregano
1-1/2 teaspoons crushed red pepper flakes
3 cups beef stock
1 bottle (12 ounces) beer
2 cans (14-1/2 ounces each ) fire-roasted diced tomatoes, undrained
1 can (16 ounces) kidney beans, drained
3 tablespoons masa harina
Optional: American cheese slices, sour cream, shredded cheddar cheese, diced red onion and corn chips

Steps:

  • Combine chiles and enough boiling water to cover; let stand until softened, about 15 minutes. Drain, reserving 1/3 cup of the soaking liquid. Discard stems and seeds. Process chiles, tomato paste, garlic and reserved liquid until smooth. , In a small skillet, toast chili powder, paprika and cumin over medium heat until aromatic, 3-4 minutes; remove and set aside. In a Dutch oven, cook and stir ground beef and steak seasoning over medium-high heat until beef is no longer pink, about 5 minutes; remove and drain. , Sprinkle steak cubes with 1 teaspoon each salt and pepper. In same Dutch oven, brown beef in batches in 1 tablespoon oil over medium-high heat; remove and set aside. Saute onion and poblano pepper in the remaining 1 tablespoon oil until tender, about 5 minutes. Stir in toasted spices, oregano and pepper flakes. Add the cooked meats along with stock, beer, tomatoes, beans, remaining salt and pepper, and chile paste mixture. Cook over medium heat 20 minutes; reduce heat to low. Stir in masa and simmer 30-45 minutes longer. Serve with desired toppings. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

1/4 cup vegetable oil
1 pound ground beef chuck, preferably coarse grind (see Cook's Note)
1 large yellow onion, diced
1 jalapeno pepper, seeded and diced
4 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 teaspoons tomato paste
1 1/2 cups low-sodium beef broth
One 28-ounce can whole peeled tomatoes, crushed
Two 15.5-ounce cans kidney beans, undrained
Sour cream, shredded Cheddar and sliced scallions, for serving
Tortilla chips, for serving

Steps:

  • Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
  • Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
  • Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.

  • Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
  • Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.

1 pinch garlic powder, or to taste
2 beef bouillon cubes
1 (12 fluid ounce) can or bottle light beer (such as Coors®)
1 (28 ounce) can crushed San Marzano tomatoes
1 (14.5 ounce) can fire-roasted diced tomatoes
1 (12 ounce) can tomato paste
½ cup white wine

2 boneless, skinless chicken breasts
2 tablespoons olive oil, divided
1 tablespoon cajun seasoning
8 ounces penne pasta
2 tablespoons unsalted butter
3 cloves garlic, minced
1 cup heavy cream, or more, to taste
1/2 teaspoon lemon zest
1/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper, to taste
2 Roma tomatoes, diced
2 tablespoons chopped fresh parsley leaves

Steps:

  • In a gallon size Ziploc bag, add chicken, 1 tablespoon olive oil and cajun seasoning, shaking to coat thoroughly. Heat remaining 1 tablespoon olive oil in a grill pan over medium high heat. Add chicken and cook, flipping once, until cooked through, about 5-6 minutes on each side. Set aside and keep warm. In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Melt butter in a saucepan over medium heat. 2 tablespoons extra virgin olive oil
2 lbs ground turkey breast
4 celery ribs, chopped
1 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
5 tablespoons garlic, minced
1/4 cup Frank's red hot sauce
2 tablespoons chili powder
2 tablespoons cumin
1 tablespoon paprika
1 tablespoon cayenne pepper
1 tablespoon creole seasoning (I used Tony Chachere's)
4 cups chicken stock
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
2 cups spicy hot V8
2 (15 ounce) cans red kidney beans, drained
1 (15 ounce) can black beans, drained
salt & freshly ground black pepper
2 bunches scallions
6 cups Fritos corn chips, crushed

Steps:

  • Place the hot links in a large stockpot.
  • Heat 2 T olive oil in a large skillet and add the ground turkey. Break up the meat with the back of a wooden spoon and continue to cook until all the meat is browned.
  • Add the celery, onion, bell peppers and garlic, cook for 3-4 minutes.
  • Put the meat and veggies in the stockpot with the sausage.
  • To the stockpot, add the hot sauce, chili powder, cumin, paprika, cayenne, Creole seasoning, stock, crushed tomatoes, tomato sauce, V8 and both beans. Stir until combined and bring to a bubble.
  • Turn heat down to a simmer and cook for at least 1 hour.
  • Season the chili with salt and pepper. Serve with some crushed Fritos and chopped scallions on top.

The Best Classic Chili - This traditional chili recipe is just like mom used to make with ground beef, beans, and a simple homemade blend of chili seasonings.

1 tablespoon olive oil
1 medium yellow onion (-diced)
1 pound 90% lean ground beef
2 1/2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons granulated sugar
2 tablespoons tomato paste
1 tablespoon garlic powder
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground cayenne pepper* (-optional)
1 1/2 cups beef broth
1 (15 oz.) can petite diced tomatoes
1 (16 oz.) can red kidney beans, drained and rinsed
1 (8 oz.) can tomato sauce

Steps:

  • Add the olive oil to a large soup pot and place it over medium-high heat for two minutes. Add the onion. Cook for 5 minutes, stirring occasionally.
  • Add the ground beef to the pot. Break it apart with a wooden spoon. Cook for 6-7 minutes, until the beef is browned, stirring occasionally.
  • Add the chili powder, cumin, sugar, tomato paste, garlic powder, salt, pepper, and optional cayenne. Stir until well combined.
  • Add the broth, diced tomatoes (with their juice), drained beans, and tomato sauce. Stir well.
  • Bring the liquid to a low boil. Then, reduce the heat (low to medium-low) to gently simmer the chili, uncovered, for 20-25 minutes, stirring occasionally.
  • Remove the pot from the heat. Let the chili rest for 5-10 minutes before serving.

2 tablespoons vegetable oil
2 cups chopped onions
Salt
Cayenne
2 pounds stew meat, cut into cubes
1 tablespoon chili powder
2 teaspoons ground cumin
Crushed red pepper
2 teaspoons dried oregano
2 tablespoons chopped garlic
3 cups crushed tomatoes
1/4 cup tomato paste
8 cups beef stock
2 tablespoons masa flour
4 tablespoons water
1 cup canned dark red kidney beans
1 bag tortilla chips
1 1/2 cups grated Monterey Jack cheese
6 tablespoons sour cream
1 small jar jalapenos

Steps:

  • In a large saucepan, heat the vegetable oil. When the oil is hot, add the onions and saute for 3 to 5 minutes, or until the vegetables start to wilt. Season with salt and cayenne. Stir in the stew meat, chili powder, cumin, crushed red pepper, and oregano. Brown the meat for 5 to 6 minutes. Stir in the garlic, tomatoes, tomato paste, and beef stock. Bring the liquid up to a boil and reduce to a simmer. Simmer the liquid, partially covered for 1 1/2 hours, stirring occasionally, or until the beef is tender. Skim off the fat occasionally.
  • Mix the masa and water together. Slowly stir in the masa slurry, add the beans, and continue to cook for 30 minutes. Reseason with salt and cayenne. Place a handful of the chips in each shallow bowl. Spoon the chili over the chips. Garnish with the grated cheese, sour cream and jalapenos.

  • Over medium heat, saute first four ingredients (onion, bell pepper, celery and garlic) in 1 tbsp of oil. Once the onions begin to sweat, add your choice of ground meat. Brown to perfection. When the meat is cooked, add the stock, bay leaves, dry mustard and cayenne. Simmer over medium heat, stirring occasionally, until reduced by half. Rehydrate the sun-dried tomatoes and dice. Puree the stewed tomatoes in a food processor or blender. Add to pot.Rinse the canned beans in plenty of water, add to the pot along with brown sugar, balsamic vinegar, salt and the cajun or creole seasoning.

  • Texas Dry Rub Ribs. The saucy ribs aren’t always welcome by one and all. In fact, back in my cooking days, I worked at a banquet hall and had to make the ribs we often served for an International Buffet we were catering, and for lack of a key ingredient (tomato paste), I decided to make a dry rub for the ribs.
  • Cajun Chicken Pasta. That’s why this menu item also made the list. The Cajun factor to both these dishes adds volumes of flavor to the pasta itself, and it isn’t that typical pasta with tomato feel.
  • Cajun Shrimp Pasta. And once again with the shrimp. They do fish well over at Chili’s. They also have a salmon dish that’s decent, although it didn’t make this list, sorry to say.
  • Southwest Egg Rolls. Who said Chinese take-out is the only place to get a decent egg roll? Certainly not I. Especially with so many great frozen section egg rolls at your local grocery store.
  • Caribbean salad with seared shrimp. And when you’re looking for something light, refreshing and tasty with a little protein, there’s no salad on the menu that beats this little number.
  • Classic Rib eye. For those meat lovers out there, perhaps nothing beats a classic cut like this. Not too large and served up with veggies, mash and a toasted bun; what else could you ask for, really?
