These Best Ever Blueberry Streusel Muffins are the perfect sweet snack! This is such an easy recipe that's packed with fresh blueberries and a sweet, crunchy streusel topping!

2 1/2 cups all purpose flour
3 teaspoons baking powder
3/4 teaspoon salt
1 cup white sugar
zest of one lemon
2 1/2 cups fresh blueberries, washed and dried
1 cup low fat milk
1/2 cup vegetable oil
2 eggs
1/2 cup all purpose flour
1/3 cup white sugar
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
4 tablespoons cold butter

Steps:

  • Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners.
  • Add the flour, baking powder, salt, sugar and lemon zest to a large bowl and whisk together to combine. Add the blueberries and toss well to coat.
  • Measure the milk and vegetable oil into a large measuring cup, adding the eggs and whisking until all the wet ingredients are combined.
  • Add the wet ingredients to the dry ingredients and mix just until no streaks of flour remain.
  • Combine all the ingredients of the streusel topping and mix with a fork until crumbly.
  • Distribute the muffin batter evenly among the 12 prepared muffin cups and top each with the streusel topping.
  • Bake at 350 degrees Fahrenheit for about 20 minutes or until the streusel topping is a light golden brown and a toothpick inserted into one of the muffins comes out clean.

2 & 1/2 cups (315g) all-purpose flour
1 tbsp (13g) baking powder
1 tsp (5g) baking soda
1/2 tsp (2g) salt
1/2 cup (114g) unsalted butter, melted and cooled
1 cup (200g) granulated sugar
2 large eggs
1 cup (250ml) milk (any kind, whole or buttermilk is best)
1 tbsp (15ml) vanilla extract
1 & 1/2 cups (230g) blueberries
1/4 cup (50g) granulated sugar
1 tbsp (8g) all-purpose flour
1/8 tsp ground cinnamon
2 tsp (10ml) unsalted butter, melted

Steps:

  • Preheat the oven to 425F. Grease an entire standard-size muffin pan (including the rim) with butter or spray with non-stick cooking spray.
  • To prepare the streusel; mix together the sugar, flour, and cinnamon in a small bowl. Stir in the butter, and set aside.
  • In a large bowl, whisk the flour, baking powder, baking soda, and salt together. Set aside.
  • In a medium bowl, whisk the melted butter with the sugar. Add the eggs, milk, and vanilla. Mix again.
  • Add the wet ingredients to the dry ingredients and gently stir using a rubber spatula until almost combined. Fold in the blueberries until just combined.
  • Divide the batter into the 12 muffin cups, filling all the way to the top. Sprinkle with the streusel.
  • Bake for 5 minutes at 425F, then keeping the muffins in the oven, reduce the heat to 375F and bake for another 15 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool in pan on the countertop for 10 minutes. Carefully remove and transfer to wire rack.

2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 ½ tablespoons all-purpose flour
1 ½ cups fresh blueberries
½ cup butter
¾ cup white sugar
2 eggs
1 teaspoon vanilla extract
¼ teaspoon lemon zest
½ cup milk
2 tablespoons all-purpose flour
5 tablespoons white sugar
½ teaspoon ground cinnamon
2 tablespoons butter, diced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • Combine 2 cups flour, 2 teaspoons baking powder, and 1/2 teaspoon salt in medium bowl. In a small bowl, sprinkle 1 to 2 tablespoons flour over blueberries, and set aside. (This simple trick will keep you from having "purple" batter)
  • In a large bowl, beat 1/2 cup butter with 3/4 cup sugar until light and fluffy. Beat in eggs, and stir in vanilla and lemon zest. Fold in dry ingredients alternately with milk. Fold in blueberries. Remember, fold gently, don't stir. Spoon batter into prepared cups.
  • Combine 2 tablespoons flour, 5 tablespoons sugar ,and 1/2 teaspoon cinnamon in a small bowl. Cut in 2 tablespoons butter with fork or pastry blender until mixture resembles course crumbs. Sprinkle over batter in muffin cups.
  • Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted in center of a muffin comes out clean. Cool in pans on wire rack. These muffins freeze really well, and re-heat in the microwave successfully. Hope you enjoy!!

Steps:

  • Heat oven to 400 degrees.
  • Grease bottoms only of 12 medium muffin cups, 2-1/2 X 1-1/4 inches, or paper lined cups.
  • Beat the milk, oil, vanilla extract and egg.
  • Stir in the flour, sugar, baking powder & salt all at once until flour is moist (should be lumpy). Add the blueberries, combine and divide batter evenly among muffin cups.
  • Sprinkle each using about 2 tsp of the prepared topping.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
