1-1/2 pounds bulk spicy pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 can (31 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) chickpeas, rinsed and drained
1-1/2 cups ketchup
3/4 cup packed brown sugar
2 teaspoons ground mustard

Steps:

  • In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.

This is a wonderful and flavorful side-dish from Taste of Home that I make often. It makes a lot, but I simply place left-overs in the freezer with great results. Depending on your family's preference, use hot or mild pork sausage.

1 1/2 lbs pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 (31 ounce) can pork and beans
1 (16 ounce) can kidney beans, rinsed and drained
1 (15 1/2 ounce) can great northern beans, rinsed and drained
1 (15 ounce) can pinto beans, rinsed and drained
1 (15 ounce) can garbanzo beans, rinsed and drained
1 (15 1/2 ounce) can black-eyed peas, rinsed and drained
1 1/2 cups ketchup
3/4 cup brown sugar, packed
2 teaspoons ground mustard

Steps:

  • In a skillet over medium heat, brown sausage; drain.
  • Add green pepper and onion; saute until tender. Drain.
  • Add remaining ingredients; mix well. Pour into greased 9x13 baking dish. Cover and bake at 350* for 1 hour. Uncover and bake 20-30 minutes longer or until bubbly.

2 tablespoons butter
1 onion, chopped
3 cloves garlic, minced
1 jalapeno pepper , minced, if desired
1 red bell pepper, chopped or sliced
1 pound Polish sausage, kielbasa, or fully cooked bratwurst, cut into slices
2 (16-ounce) cans baked beans , undrained
1 (14-ounce) can diced tomatoes, undrained
1/3 cup ketchup
1/4 cup mustard

Steps:

  • Gather the ingredients.
  • In a large skillet, melt the butter over medium heat. Add onion and garlic; sauté and stir until tender, about 5 minutes. Add jalapeño pepper, if using, and green bell pepper; cook another 3 to 4 minutes.
  • Add the sausages to the skillet and cook until slightly browned, turning the sausages occasionally so they cook evenly.
  • Add the baked beans, tomatoes, ketchup, and mustard to the skillet and bring to a boil. Reduce the heat to low so the food is just simmering and cook, uncovered, stirring frequently, until slightly thickened, about 15 to 20 minutes. Serve immediately.
  • Enjoy!

The original recipe comes from Taste of Home - but I altered some things for what I had and family preference. For the sausage in this recipe - I used elk/deer sausage that our family friend gave to us. You could use any kielbasa type sausage as well. This recipe has a lot of sauce - which we feel is perfect for sopping up with a good loaf of bread! Yield and time are approximate.

1 green bell pepper, chopped
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon vegetable oil
1/2 lb fully cooked sausage, cut into 1/4 inch slices
4 cups chicken broth, I used a quart of homecanned
1 (16 ounce) can black beans, I used 1 pint homecanned
1 (16 ounce) can great northern beans, I used 1 pint homecanned
5 bay leaves
1 teaspoon dried parsley
1 teaspoon ground cumin
3 -4 dashes hot pepper sauce
hot cooked rice

Steps:

  • In a large skillet, saute bell pepper, onion and garlic on oil until tender.
  • Add sausage, broth, beans and seasonings.
  • Cover and simmer for 1 hour, stirring occasionally.
  • Discard bay leaves.
  • Serve in bowls over rice.

4 tablespoons olive oil, divided
1 finely chopped red onion
salt
1 pound dried kidney beans, preferably red speckled, or cranberry beans
4 ounces chopped bacon (about 4 slices)
6 smashed peeled garlic cloves, plus 1 finely chopped garlic clove
8 ounces morcilla (Spanish blood sausage) or fresh chorizo (about 2 links)
2 tablespoons apple cider vinegar
1/4 head thinly sliced green cabbage (about 3 cups)
pickled guindilla or other mild pickled peppers

Steps:

  • Soak 1 ancho chile or dried choricero pepper in a small bowl of hot water until softened, about 20 minutes; drain. Remove stem and seeds; discard. Set pepper aside.
  • Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add 1 finely chopped red onion, season with salt, and cook, stirring often, until soft and just starting to brown, 8-10 minutes.
  • Add 1 pound dried kidney beans, preferably red speckled, or cranberry beans, 4 oounces chopped bacon (about 4 slices), and 6 smashed peeled garlic cloves to saucepan, then add water to cover by 3". Bring to a simmer and cook, skimming surface and adding more water as needed to keep beans submerged, 1 hour. Add reserved rehydrated pepper and 8 ounces morcilla (Spanish blood sausage) or fresh chorizo (about 2 links) and cook until beans are tender, 60-75 minutes.
  • Transfer sausage to a cutting board and slice. Discard pepper. Mix 2 tablespoons apple cider vinegar into beans and season with salt.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add 1 finely chopped garlic clove and cook, stirring, until fragrant, about 30 seconds. Add 1/4 head thinly sliced green cabbage (about 3 cups), season with salt, and cook, tossing often, until softened, about 4 minutes.
  • Serve beans topped with sliced sausage, sautéed cabbage, and pickled guindilla or other mild pickled peppers.

3 tablespoons olive oil
3 pounds Italian sausage links
3 red bell peppers, sliced
2 green bell peppers, sliced
2 large red onions, sliced
3 cloves garlic, chopped
2 (12 fluid ounce) bottles beer
1 (6 ounce) can tomato paste
3 tablespoons chopped fresh oregano
3 tablespoons chopped fresh cilantro
2 tablespoons hot sauce
salt and pepper to taste

Steps:

  • Heat olive oil in a large heavy skillet over medium high heat. Cook sausage until browned on all sides. Remove sausage from pan, and set aside. Pour in 1 bottle of beer to deglaze the pan, scraping up any blackened bits from the bottom. Place the red peppers, green peppers, onions and garlic in the pan. Stir in the remaining beer and the tomato paste. Season with oregano, cilantro, hot sauce, salt and pepper. Cover, and simmer until onions and peppers are tender. Slice the sausages into bite size pieces, and add to the peppers. Cover, and simmer until sausage is cooked through.
