Ingredients

1/2 cup (1 stick) butter, at room temperature
4 cups powdered sugar, plus extra, as needed
1/4 cup whole milk, at room temperature
1 teaspoon pure vanilla extract
2 to 3 tablespoons strawberry fruit spread or jam

Steps:

In a medium bowl, using an electric hand mixer, beat the butter until light and smooth. Beat in 3 cups powdered sugar, milk and vanilla until smooth and creamy.
Beat in the strawberry fruit spread or jam into the vanilla frosting. Mix in the remaining 1 cup powdered sugar, plus extra, as needed, until smooth and creamy.

It's summer time and we are all looking for those cold refreshing drinks. This is one that I found in a 1963 edition of Family Cooking, a cookbook published by Parents' Magazine.

Ingredients

A drizzle of honey
Finely chopped raw or roasted pistachios, for rim and more for the garnish
Freeze-dried strawberries, for the rim
2 cups (280 grams) frozen strawberries
1/4 cup (50 grams) sugar
1/4 cup whole milk
1/4 cup heavy cream
1/4 cup vodka
1/2 teaspoon vanilla extract
A good pinch of ground cardamom

Steps:

To rim the glasses: Apply a thin even layer of honey around the rim of 2 glasses. (I find it's easiest to drizzle it directly on the top outside edge of the glass and then use a small rubber spatula or knife to spread it all around). Then coat it with the pistachios and freeze-dried strawberries. Set the glasses aside.
In a blender, combine the frozen strawberries, sugar, milk, cream, vodka, vanilla and cardamom and blend until smooth. Pour into glasses and top with the remaining chopped pistachios.
