CRANBERRY WHITE CHOCOLATE OATMEAL COOKIES

1/2 cup butter (softened)
3/4 cup coconut sugar (or brown sugar)
1 large egg
1 teaspoon vanilla extract
1 cup white whole wheat flour
1-1/2 cups old-fashioned rolled oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup white chocolate chips
3/4 cup dried cranberries

Steps:

  • Place butter and sugar in a stand mixer fitted with a paddle attachment. Beat on medium speed until creamy. Beat in egg and vanilla until combined.
  • In a medium separate bowl, combine flour, oats, baking soda, cinnamon, and salt. Add to liquid mixture and beat on medium speed until a dough forms. Mix in white chocolate and dried cranberries until a dough comes together. (dough will be slightly sticky)
  • Roll cookie dough into 1-in balls and place on Reynold's parchment paper-lined baking sheets. Refrigerate dough balls 1 hour or up to 2 days.*
  • Once dough is firm, remove from fridge and preheat oven to 350F. Bake cookies at 9-10 minutes or until edges just start to turn golden (cookies will appear underbaked---this is ok) Cool cookies on baking sheet 10 minutes before transferring to a wire cooling rack to cool completely.

Steps:

  • HEAT oven to 350ºF. Coat baking sheets with no-stick cooking spray.
  • BEAT shortening, sugar and brown sugar in large bowl at medium speed of electric mixer until blended. Beat in eggs and vanilla. Combine flour, baking soda, cinnamon and salt in small bowl. ⅔ cup packed dark brown sugar
1 teaspoon vanilla extract
2 eggs
1 ½ teaspoons baking soda
1 pinch salt
1 ⅔ cups whole wheat flour

¾ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

2/3 cup Sugar

Steps:

  • Preheat oven to 365 degrees. In a large mixing bowl, cream butter, brown sugar, and sugar for 4 minutes or until light and fluffy. Scrape the sides of the bowl halfway through to ensure even mixing.
  • Add eggs and vanilla and cream for 1 minute longer.
  • Stir in flour, rolled oats, cornstarch, baking soda, and salt. Fold in dried cranberries.

  • In a medium bowl, whisk together flour, salt, cinnamon, baking powder, and baking soda. Set aside. In a small bowl, whisk together the vanilla, milk, and eggs. Set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with both sugars, and beat on medium speed until light and fluffy. Reduce speed to low, gradually add milk mixture, and beat well. Add the flour mixture, and beat until just combined. Remove bowl from the electric mixer, and stir in the oats and cranberries. 1 tbsp Orange Zest
3/4 cup Dried Cranberries (chopped in half, soaked in 2 tsp orange juice)

Steps:

  • Preheat oven to 350 F.
  • Spread the almonds onto a baking sheet and roast for 10 minutes. Remove from the oven and once cool, roughly chop. Transfer the nuts to a large bowl and add flours, oats and salt. Mix and set aside.
  • Increase the oven temperature to 375 F. Line two baking sheets with parchment paper and set aside.
  • Place the butter, sugar, and orange zest in a bowl of an electric mixer with paddle attachement. Beat on medium speed for 2 minutes, until combined. Add the almond flour mixture and continue to beat on low until the dough comes together. Add the cranberries and orange juice and beat for another few seconds.
  • Place a long sheet of plastic wrap on the counter and scoop the cookie dough into the interior. Use your hands to mould a log of dough approximately 2 inches thick. Wrap the dough log in plastic wrap and store in the freezer for 20-30 minutes until firm.
  • Remove cookie dough log from the freezer and discard plastic wrap. Using a sharp knife, cut 1/4 inch thick slices and place on prepared parchment paper lined cookie sheets.

1 cup gluten-free oats, ground into a fine flour in your blender
2 cups gluten-free quick cooking oats (not old fashioned oats)
1 cup pure maple sugar (or coconut sugar)
1 tablespoon arrowroot powder (also known as arrowroot starch)
3/4 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/2 cup + 1 tablespoon room temperature soy-free, vegan butter (I use Miyoko's brand)
1 tablespoon non-dairy milk
1/2 teaspoon pure vanilla extract
1 cup unsweetened dried cranberries (or cherries)
1 cup vegan and refined sugar-free dark chocolate chunks (I use Hu dark chocolate gems)

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a half-sheet baking sheet with parchment paper. Set aside.
  • In a large mixing bowl at oat flour, oats, maple sugar, arrowroot powder, cinnamon, baking powder, baking soda and salt. Stir.
  • Add room temperature vegan butter, non-dairy milk, and vanilla to the mixing bowl. Use an electric hand mixer and mix until all ingredients are well incorporated.
  • Add unsweetened dried cranberries and chocolate. Mix again with the hand mixer or fold in with a spoon. The cookie batter will feel a bit crumbly like granola and that is okay. It will gel together as it bakes and then cools.
  • Use a quarter cup measuring cup to scoop out 1/4 cup servings of the cookie batter. You want to really pack the cookie dough firmly into the measuring cup before inverting the measuring cup overtop the parchment paper lined baking sheet. If any cranberries, chocolate, or oatmeal flakes fall out of the cookie mounds, press them back in with your fingers. The batter should make 13 cookie mounds. The cookies will spread when they bake so leave room between the cookies and use two baking sheets if needed.
  • Bake for 10 minutes. Allow the cookies to rest on the baking sheet for thirty minutes before transferring to a cooling rack to fully cool. The cookies will firm up as they cool. If you touch them too early they will fall apart.
  • Store leftovers in an airtight container at room temperature for up to five days.

Cookies are wonderful because, much like cupcakes, they are individual - without any fussiness. These Oatmeal Raisin Cranberry Cookies are wholesome cookies and though they have two kinds of sugar, they also have oatmeal, raisins, and cranberries which are good for you.

1/2 cup (1 stick) PLUS 6 tablespoons butter, softened, I prefer really soft, room temperature butter
3/4 cup dark brown sugar
1/2 cup granulated white sugar
2 large eggs
1 teaspoon pure vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon Kosher salt
3 cups old-fashioned oats
1 cup of (organic) raisins
1/2 cup of dried cranberries, reduced, or no sugar

Steps:

  • Note: All the ingredients, including the eggs, should be at room temperature before starting this recipe. Preheat oven to 350 degrees Fahrenheit. In a large mixing bowl, beat the softened butter, brown sugar, granulated sugar, on medium speed until creamy.
  • In a small mixing bowl, combine flour, baking soda, cinnamon and salt. Mix well.
  • Add combined dry ingredients incrementally to creamed butter mixture, mix well.
  • Add 2 eggs and vanilla extract and mix well. Add oats, cranberries and raisins and mix well.
  • Using a rounded tablespoon measure, scoop rounded scoops onto two parchment-lined cookie sheets. *Using the OXO cookie scoop, I get about 31-41 cookies, depending on how generously I am scooping. Bake 8-10 minutes, or until lightly browned.
  • Cool for 1 minute on the cookie sheets, then remove to wire rack to cool completely. Store in an airtight container - if there are any left to store!

Steps:

  • Preheat oven to 375 degrees F and line large baking sheet with unbleached parchment paper or silicone baking mat.
  • In a large mixing bowl, beat the eggs for a few minutes with a whisk. You can also use a mixer.
  • Add sugar and whisk vigorously for another 2 minutes. Add coconut oil, orange zest, vanilla extract, baking soda, cinnamon and salt; whisk until combined. Stir in oats and almond flour until combined. Then stir in cranberries and white chocolate chips.
  • Using a cookie dough scoop, scoop dough, place on prepared baking sheet 1" apart (cookies do not spread much) and flatten with fingers into a cookie shape, about 1" thick. Bake for 13 minutes or until cookies start to turn golden brown.
  • Remove from the oven, cool on the sheet for 15 minutes before transferring to a wire rack to cool off for another 30 minutes. Cooling prevents cookies from crumbling.

¾ cup (110g) Bob's Red Mill 1:1 gluten free baking flour
½ Tbsp cornstarch
¼ tsp baking powder

6 Tbsp unsalted butter, melted and cooled
¼ cup granulated sugar
½ cup brown sugar, packed
½ cup cashew butter
1 large egg
1 ½ tsp gluten free vanilla extract

¾ cup dried cranberries
½ cup pecans, roughly chopped

Steps:

  • In a medium mixing bowl, whisk together flour, cornstarch, baking powder, baking soda, cinnamon, and salt until combined. Set aside.
  • In a large mixing bowl, whisk together melted butter, granulated sugar, brown sugar, and cashew butter until smooth. Add the egg and vanilla extract and whisk to combine.
  • Add the dry ingredients to the wet ingredients and mix with a rubber spatula or wooden spoon until everything is totally combined. Fold in the oats, dried cranberries, and chopped pecans. The dough will be slightly soft.
  • Leaving the dough in your mixing bowl, cover the bowl with plastic wrap and refrigerate the dough for 30-40 minutes.
  • Preheat the oven to 350℉ and line two baking sheets with parchment paper. When your oven has preheated, take the dough out of the refrigerator and scoop out the dough with a large 2" cookie scoop. 1 Tablespoon melted coconut oil
1 teaspoon vanilla extract
¾ cup fresh or frozen cranberries (plus more for topping if desired)
3 Tablespoons Greek yogurt (or dairy-free yogurt if needed)
½ Tablespoon maple syrup
2 teaspoons fresh orange juice (plus more to thin as needed)
1 teaspoon orange zest

Steps:

  • Preheat the oven to 375°F and spray an 8×8 inch square baking dish with cooking spray.
  • In a large bowl, mix together the oats, baking powder, cinnamon, ginger and salt.
