Make an easy meatloaf when you need to feed the family midweek. Serve slices with homemade tomato sauce and use any leftovers as sandwich filling

1 tbsp olive oil
1 onion, finely chopped
1 garlic clove, crushed
2 tbsp tomato purée
500g beef mince
1 egg
85g fresh breadcrumbs
1 tbsp olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 celery stick, finely chopped
1 garlic clove, finely chopped
500ml passata with basil
peas and mash, to serve (optional)

Steps:

  • Heat the oil in a frying pan and add the onion, cook for 4-5 mins over a low heat, then stir in the garlic. Leave to cool completely.
  • To make the tomato sauce, heat the oil in a saucepan and fry the onion, carrot and celery for 3-4 mins, then add the garlic and cook for a minute. Add the passata and bring to a simmer, then season and cook for 5 mins.
  • Heat oven to 180C/160C fan/gas 4. Mix the cooled onion with the tomato purée, mince, egg and breadcrumbs, and season. Line a 900g loaf tin with a liner or baking parchment and pack in the meatloaf mixture. Cook for 20-25 mins or until a skewer poked into the centre feels roasting hot when pulled out. Leave to rest for 10 mins before lifting out of the tin.
  • Serve slices of the meatloaf with some tomato sauce spooned over. Wrap any remaining meatloaf and use it as a sandwich filling for a lunchbox. Can be frozen for up to a month.

3 slices white sandwich bread
1/3 cup whole milk
1 1/2 pounds ground beef chuck
1/2 pound ground pork
1/2 medium onion, grated
2 garlic cloves, minced
1 large egg
1/2 cup ketchup
Coarse salt and ground pepper

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
  • Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).
  • Place meat mixture on prepared baking sheet, and form into a loaf about 9 inches long and 4 to 5 inches wide.
  • Bake, brushing twice with remaining 1/4 cup ketchup during baking, until an instant-read thermometer registers 160 degrees, 45 to 55 minutes. Let meatloaf rest 10 minutes before slicing and serving.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped

1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

2/3 cup crushed saltine crackers
2 large eggs
1/4 teaspoon black pepper
1 teaspoon kosher salt
1 teaspoon dried dill weed

1 1/2 pounds ground beef (80/20% fat)
1/2 cup onion (finely chopped)
1 cup ketchup
1/2 cup brown sugar
1 teaspoon Worcestershire Sauce

Steps:

  • Preheat oven to 350 degrees Fahrenheit
  • Combine the milk and crushed saltine crackers in a small bowl. Allow to soak for about 5 minutes or until the crackers are soft. Whisk in the egg, salt, sage, dill, and pepper.
  • Place ground beef in a large bowl and add in onion and milk mixture. Gently mix until just combined.
  • Line a baking sheet with parchment paper or aluminum foil and shape meat into a loaf shape. Dip fingers in water and smooth out the cracks with your if needed.

When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt

2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves

1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.

2 pounds ground beef (85/15)
1/2 cup minced onion
2 eggs
1/2 cup ketchup
1 tablespoon Worcestershire
1 cup crushed crackers (quick cook oats or breadcrumbs)
2 teaspoons Porterhouse seasoning
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked black pepper
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons yellow mustard

Steps:

  • Preheat oven to 350 degrees F. Spray a 9"x5" loaf pan with nonstick cooking spray.
  • Combine meatloaf ingredients in a large bowl using your hands, just until combined. Do not overmix - The less you mess with it, the better it will be!
  • Shape into a loaf and place into a loaf pan.

1 ½ pounds ground meat ( (preferably a combination of beef, pork, veal, or turkey 93/7))
¾ cup dried bread crumbs
¼ cup chopped fresh parsley, ( additional for garnish if desired)
¼ cup milk
¼ cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt
½ teaspoon coarsely ground black pepper
¼ cup ketchup
2 tablespoons packed brown sugar
1 tablespoon red wine vinegar

Steps:

  • Preheat oven to 350ºF. Spray a 9" by 5" loaf pan with nonstick cooking spray.
  • In a large bowl, lightly beat two eggs.
  • Place onion, celery, carrot, and garlic in a food processor and pulse until finely chopped. Add to bowl with eggs.

Need a basic meatloaf recipe that's tender and flavorful? Try Nikki's version of the classic comfort food dish with onion, garlic, and a tangy glaze.

2 cups lightly packed fresh breadcrumbs*
3/4 cup whole milk
1 pound ground beef (preferably 85% lean/15% fat)
1 pound ground pork
1/4 medium white onion, finely chopped (about 1/2 cup)
3 cloves garlic, finely minced
2 large eggs
1/3 cup ketchup
1 tablespoon Worcestershire sauce
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
3 tablespoons unsalted butter
1/4 medium white onion, finely chopped (about 1/2 cup)
2 tablespoons all-purpose flour
1 1/4 cups beef or chicken stock
1/2 cup heavy cream
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350°F. Line a baking sheet with aluminum foil and set aside.
  • Transfer breadcrumbs to a small bowl and stir in the milk. Set aside for about 5 minutes.
  • In a separate large bowl, combine the beef, pork, onion, garlic, egg, ketchup, Worcestershire sauce, salt, and pepper with your hands.
  • Add the breadcrumb mixture and mix until thoroughly incorporated.
  • Place the meat mixture on the prepared baking sheet and form into a tight loaf with your hands, about 9 inches long and 5 inches wide.
  • Bake for 50-60 minutes, or until a meat thermometer registers 155°F.
  • Let rest for 15 minutes before cutting into slices and serving with the gravy.
  • While the meatloaf is resting, make the gravy by melting the butter in a medium sauce pot over medium heat.
  • Add the diced onions and 1/4 teaspoon salt, and saute until slightly golden, about 3 to 5 minutes.
  • Sprinkle the flour over the onions and stir well to evenly coat. Cook over medium heat, stirring constantly, for about 2 minutes.
  • Add the stock and whisk until thoroughly combined. Cook for another 2 minutes, stirring constantly.
  • Reduce the heat to low and stir in the cream. Cook for another 2 to 5 minutes to slightly thicken the mixture.
  • Season with the remaining salt and black pepper, and serve with the meatloaf.
