CINNAMON SYRUP
This is an adaptation of a friend's recipe. My kids go crazy over this syrup when we have pancakes or waffles. It's also good on apple slices or strawberries. The only problem is that my kids always forget their manners and lick the leftover syrup off their plates.

BUTTERY MAPLE-CINNAMON SYRUP
This is a simple, delicious alternative to regular maple syrup or the store-bought artificially-flavored variety. Serve warm over French toast, waffles or pancakes. My munchkins give it four thumbs up, and I hope you enjoy it too!

BEST CINNAMON-Y BUTTERY SYRUP/SAUCE
This is great on pancakes, bread pudding...I think I'm just beginning to discover its many uses. Honestly, it tastes soooo good, I often end of licking the spoon (and the pan) after I make it! :) Don't be weirded out by the buttermilk--you wouldn't even know it was there unless someone told you. I often halve it if I don't want to make a lot, and it also keeps in the fridge in an airtight container for several days.

Steps:
- Bring butter, sugar, buttermilk, vanilla extract, corn syrup, and cinnamon to a simmer in a large saucepan over medium-high heat. Once simmering, whisk in baking soda, and cook for 10 seconds before removing from heat. Serve warm. After adding the baking soda this looks quite frothy--but after you take it off the heat, keep whisking, and then let it sit for a minute, then whisk it again, and it will become the right consistency.

Steps:
- In a small bowl, dissolve 1 teaspoon sugar and yeast in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in 1/4 cup sugar, 1/4 cup butter and salt; stir until melted. Let cool until lukewarm.
- In a large bowl, combine the yeast mixture, milk mixture, eggs and 1 1/2 cup flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- While dough is rising, melt 3/4 cup butter in a small saucepan over medium heat. Stir in 3/4 cup brown sugar, whisking until smooth. Pour into greased 9x13 inch baking pan. Sprinkle bottom of pan with 1/2 cup pecans; set aside. Melt remaining butter; set aside. Combine remaining 3/4 cup brown sugar, 1/2 cup pecans, and cinnamon; set aside.
- Turn dough out onto a lightly floured surface, roll into an 18x14 inch rectangle. Brush with 2 tablespoons melted butter, leaving 1/2 inch border uncovered; sprinkle with brown sugar cinnamon mixture. Starting at long side, tightly roll up, pinching seam to seal. Brush with remaining 2 tablespoons butter. With serrated knife, cut into 15 pieces; place cut side down, in prepared pan. Cover and let rise for 1 hour or until doubled in volume. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
- Bake in preheated oven for 25 to 30 minutes, until golden brown. Let cool in pan for 3 minutes, then invert onto serving platter. Scrape remaining filling from the pan onto the rolls.

HONEY-CINNAMON SYRUP
Posted in response to a request. Clover or orange or other floral/mild honey works best. I strongly suggest you use butter, rather than margarine, as I think it simply tastes better. From the Betty Crocker website.

BEST CINNAMON BUTTER
The first time I ever tried cinnamon butter was at an overnight camp when I was 13. Since then, I've tried countless combinations of sugar and cinnamon to match its creamy yet gritty perfection, if attainable at all. Fortunately, I think I've got it. It tastes delicious on any type of bread, toasted or not. It's fantastic for breakfast, and is super easy to prepare. Just beware that once you've tried it, it will be appearing in your kitchen much more frequently. Enjoy!

Steps:
- Make sure butter is at room temperature. If not, microwave for 20 seconds, taking it out to check it every 5 seconds. You want it to be soft, not melted.
- Using the back of a spoon, mash the butter until it's smooth and creamy.
- Add the cinnamon, white sugar and brown sugar to the butter. Make sure the brown sugar is not in clumps when you add it to the butter.
- Mix well, until everything is combined. Serve chilled or at room temperature on bread or toast.
