Time 2h40m

Number Of Ingredients 17

1 cup whole milk (warm (105 degrees F))
½ cup + 1 Tablespoon granulated sugar (divided)
1 Tablespoon Active dry yeast
2 large eggs (room temperature)
6 Tablespoons salted butter (melted)
1 teaspoon pure vanilla extract
4 to 4 ½ cups all-purpose flour
1 teaspoon fine sea salt
1 teaspoon ground cinnamon
1 cup brown sugar (packed)
2 ½ Tablespoons ground cinnamon
6 Tablespoons salted butter (softened)
8 oz cream cheese (softened)
¼ cup salted butter (softened)
2 cups powdered sugar
½ tsp pure vanilla extract
1/8 tsp fine sea salt

Steps:

  • Warm milk in the microwave milk for 45-60 seconds. It should be warm but not hot to the touch (about 105 degrees F).
  • Place milk into the bowl of your standing mixer, then add 1 TBS sugar and 1 TBS yeast to the warm milk. Stir and let it sit (proof) for five minutes or until it becomes foamy.
  • Add the ½ cup sugar, butter, eggs, and vanilla to the mixture in the bowl of your standing mixer. Use a dough hook to stir until combined
  • Add 4 cups flour, salt and cinnamon and stir the dough hook, starting on low and increasing to high.
  • Knead dough in the standing mixer until a large ball is formed. The dough should be smooth and only slightly tacky to the touch. If the dough seems too sticky and is not forming a ball, add more flour 1 TBS at a time until a smooth ball is formed.
  • Transfer dough to a floured surface and knead with your hands until it is smooth and elastic (about 3-5 minutes). Form it into a ball.
  • Grease a large bowl and place the dough inside.
  • Cover the bowl with a warm, damp towel and put the bowl in a warm place to rise.
  • Let the dough rise in a warm place about 1 hour or until dough has doubled in size.
  • While the dough is rising, make the filing. In a small bowl, combine butter, brown sugar and cinnamon until mixture is homogenous (uniform throughout). Set aside.
  • Alternately, you can combine the cinnamon and sugar. Then melt the butter and brush it on the rolled dough, then sprinkle the cinnamon sugar on the butter-brushed dough. (I think this way is easier)!
  • Assemble Cinnamon Rolls
  • Sprinkle a large work surface with flour.
  • Gently press the gas out of the dough and form it into a rectangle.
  • Roll the dough into a 24x12" rectangle, about 1/4 inch thick.
  • Spread the filling all over the dough using greased hands or a greased spatula. This process can seem difficult but it gets easier as you spread it. (Alternately: if you only combined the cinnamon and sugar, then melt the butter and use a pastry brush to spread the melted butter all over the dough. Then sprinkle the dough with cinnamon sugar and pat it down gently to insure it sticks).
  • Roll up dough cut into 12 equal sized rolls (feel free to measure and cut each roll to be 2" long).
  • Line a 9x13 inch glass baking dish with parchment paper and lightly grease. Then place rolls in 4 rows of three, evenly spaced.
  • Cover and let rise until nearly doubled, about 30 minutes and preheat the oven to 350 degrees F
  • Bake Cinnamon Rolls
  • Once rolls are doubled in size, bake them in the preheated oven until golden brown, about 18-20 minutes. They will rise more in the oven. (NOTE: Check the center cinnamon rolls and make sure they are baked through. If your oven bakes cool or unevenly you may need to increase the baking time up to 10 minutes longer. If the top starts to brown before the center is baked, tent the baking pan with foil to prevent further browning).
  • While rolls are baking, beat together cream cheese, butter, powdered sugar, vanilla extract and salt. Do NOT chill the frosting. Keep it at room temperature until the cinnamon rolls are baked.
  • Once the cinnamon rolls have bene removed from the oven, spread the cream cheese frosting on them while they are still warm.
  • Cool & Serve!
  • Let cool and serve warm.

Time 2h25m

Yield 12

Number Of Ingredients 18

1 cup milk
1 tablespoon white sugar
1 tablespoon active dry yeast
½ cup white sugar
6 tablespoons unsalted butter, melted
2 large eggs
1 teaspoon pure vanilla extract
4 cups all-purpose flour, or more as needed
1 teaspoon sea salt
1 teaspoon ground cinnamon
1 cup packed brown sugar
6 tablespoons unsalted butter, softened
2 ½ tablespoons ground cinnamon
2 cups powdered sugar
1 (8 ounce) package cream cheese, softened
¼ cup unsalted butter, softened
½ teaspoon pure vanilla extract
⅛ teaspoon salt

Steps:

  • Pour milk into a microwave-safe bowl and heat in the microwave until warm but not hot to the touch, 45 to 60 seconds. It should be about 105 degrees F (41 degrees C). Pour into the bowl of a standing mixer.
  • Add 1 tablespoon sugar and yeast to the warm milk. Stir and let sit (proof) until foamy, about 5 minutes. Add 1/2 cup sugar, melted butter, eggs, and vanilla extract; stir with a dough hook until combined.
  • Add 4 cups flour, sea salt, and cinnamon; stir with the dough hook, starting on low speed and gradually increasing to high speed, until a large ball of smooth and slightly tacky dough is formed. Add 1 tablespoon flour at a time if dough seems too sticky, until a smooth ball is formed.
  • Transfer dough to a floured surface and knead with your hands until smooth and elastic, 3 to 5 minutes. Form into a ball and place inside a greased bowl. Cover the bowl with a warm, damp towel and let dough rise in a warm place until doubled in size, about 1 hour.
  • While the dough is rising, combine brown sugar, softened butter, and cinnamon for the filling in a small bowl until uniform throughout. Set aside.
  • Gently press the gas out of the dough and transfer to a large, floured work surface. Roll the dough into a 24x12-inch rectangle, about 1/4-inch thick. Spread the filling over the dough with greased hands or a greased spatula. Roll up the dough and cut into 12 equally sized rolls, about 2-inches long.
  • Line a 9x13-inch glass baking dish with lightly greased parchment paper. Place cinnamon rolls in the prepared baking dish in 4 rows of 3, evenly spaced. Cover and let rise until nearly doubled, about 30 minutes.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  • Bake rolls in the preheated oven until golden brown, 18 to 20 minutes.
  • While the rolls are baking, beat together powdered sugar, cream cheese, softened butter, vanilla extract, and salt for frosting. Keep at room temperature while rolls bake.
  • Spread frosting on warm rolls. Let cool before serving.

THE BEST CINNAMON ROLLS EVER!

The Best Cinnamon Rolls Ever! image

Here's an easy alternative to buying those famous cinnamon rolls in the mall. They taste exactly the same, and the dough is made in the bread machine (or kitchen aid).

Time 2h20m

Yield 16 Cinnamon Buns, 16 serving(s)

Number Of Ingredients 17

1/4 cup warm water
1/4 cup butter, melted
1 3/4 ounces vanilla instant pudding mix
1 cup warm milk
1 egg, room temperature
1/4 cup white sugar
1/2 teaspoon salt (don't need this if using salted butter)
4 cups all-purpose flour
1 tablespoon active dry yeast
1/4 cup butter, softened
1 cup brown sugar (can use more, if desired)
4 teaspoons ground cinnamon (can use more, if desired)
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
2 cups confectioners' sugar
2 teaspoons vanilla extract
1 -2 teaspoon milk

Steps:

  • In the pan of your bread machine or kitchen aid, combine water, melted butter, vanilla pudding mix, warm milk, egg, white sugar, salt, flour and yeast. Set machine to Dough cycle; press Start and let beat for 10 minutes then stop it. Or beat ingredients in kitchen aid for 10 minutes. Let dough rest in bread machine / kitchen aid for 10 minutes.
  • When Dough cycle has finished, turn dough out onto a lightly floured surface and roll out into a large rectangle shape until dough is 1/2 inch thick, if recipe is scaled larger, you might need to make additional rectangles as you don't want to make them into a long log that you cannot roll with two hands. Spread rectangle with softened butter. Sprinkle brown and cinnamon over dough, you don't have to stick exact with the measurements, they are just guidelines for buying and portioning out the filling.
  • Roll up dough, beginning with long side. Slice into 16 (or more) one inch slices and place in 9X13 inch buttered pan (you can also use muffin tins! Also 9X13 inch pan refers to original serving amount not scaled amount). Let rise in a warm place until doubled, about 30 - 45 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven for 15 to 20 minutes. While rolls are baking, stir together the cream cheese, softened butter, confectioners' sugar, vanilla and milk. Remove rolls from oven, let cool, and top with cream cheese frosting.

Time 1h

Yield 24 rolls, 24 serving(s)

Number Of Ingredients 16

1 3/4 cups warm water
3/8 cup sugar
1/4 cup oil
3 tablespoons yeast
1/2 tablespoon salt
2 large eggs (smaller ones possible)
5 1/2 cups flour
oil, for the countertop (1/8 cup should be plenty)
1/3 cup white sugar
1/3 cup brown sugar
1/2 tablespoon cinnamon
1/2 cup butter
4 ounces cream cheese, softened
1 teaspoon vanilla
2 cups powdered sugar
almost 1/2 pint heavy whipping cream

Steps:

  • In a large mixing bowl combine warm water, sugar, oil, and yeast.
  • Stir it a few times, then let it sit for a full 15 minutes.
  • Now add the salt and eggs and flour to the yeast mixture (add more flour if too sticky, but it should be soft).
  • Mix together for 10 minutes in mixer ( I use my Bosch).
  • Once it has mixed for ten minutes, let it sit for 10 minutes. It should double in size. It will take longer if your kitchen is cold.
  • After it has doubled in size, you want to pour some oil onto the counter (instead of flour) to roll your dough out on.
  • Press it into a rectangle.
  • Melt butter in a microwave safe bowl, and pour it onto the dough that you have pressed out into a rectangle.
  • In a separate bowl, mix white and brown sugar, and cinnamon together. Sprinkle it over the melted butter.
  • Tightly roll into a log and cut into 20-24 even sized pieces.
  • Place on baking tray with parchment paper on it, and let rise more. You can let them rise as short or as long as you want. Sometimes I just let them rise for like 5 minutes. They will continue to rise in the oven. You want them to be nice and big, so if your kitchen is cold it may take longer.
  • Bake at 400 for 12-15 minutes.
  • While the rolls bake, mix all of the ingredients for the cream cheese frosting together using a hand mixer, in a medium sized bowl, until nice and smooth.
  • When you pull the rolls out of the oven, let them sit for a minute or two, then slather frosting over the top and let it melt into the rolls.

  • In a small microwave-safe bowl, microwave the whole milk at high power in 30-second bursts until it's warm but not hot. Stir in the yeast and a pinch of granulated sugar and let the milk stand until foamy, about 5 minutes.
  • In the bowl of a standing electric mixer fitted with the paddle, beat 1 stick of the butter with the 1/2 cup of granulated sugar and the teaspoon of salt at medium speed until light and fluffy. Beat in the eggs, 1 at a time, until blended. Add 2 cups of the flour and beat at low speed until incorporated. Beat in the warm milk mixture, scraping in any yeast that has settled in the bottom of the bowl.
  • Switch to a dough hook. Gradually add the remaining 2 1/4 cups of flour and beat at medium speed until a soft, sticky dough forms, about 5 minutes. Scrape the dough into a large, lightly oiled bowl and cover with plastic wrap. Let the dough stand in a warm place until it is doubled in bulk, about 1 hour.
  • Cut four 15-inch-long sheets of wax paper. Turn the dough out onto a well-floured work surface and divide it into quarters. Working with 1 piece at a time, roll the dough to a 14-by-7-inch rectangle, about 1/4 inch thick. Roll the dough around the rolling pin and unroll it onto a sheet of wax paper. Repeat with the remaining 3 pieces of dough. Transfer 2 sheets of dough to each of 2 baking sheets and freeze for about 15 minutes, until well chilled but still pliable.
