1 (3 lb.) butternut squash ((or about 4-5 cups peeled and diced butternut squash cubes))
2 tablespoons olive oil, divided
½ onion, chopped
3 cloves garlic, minced or pressed
1 teaspoon grated fresh ginger (or ¼ teaspoon ground ginger)
⅛ teaspoon cayenne pepper (optional)
3-4 cups vegetable stock (or chicken broth), divided
1 tablespoon brown sugar (or maple syrup)
Optional garnish: sour cream, fresh chives, toasted nuts or seeds, croutons, parsley, thyme, sage, grated cheese, crispy bacon or prosciutto

Steps:

  • Preheat oven to 425°F (220°C).
  • Slice squash vertically down the center, scoop out the seeds, and place the halves cut-side down on a baking sheet lined with parchment paper. Rub 1 tablespoon of olive oil on the outside skin of the squash, and bake in the oven for about 30 minutes (or until almost tender).
  • Allow squash to cool, peel the skin off, and cut squash into 2-inch cubes. Set aside.
  • Next, in a large pot, heat remaining 1 tablespoon of olive oil over medium-high heat. Saute onions until slightly brown, about 3-4 minutes, adding a pinch of salt as they cook. Stir in garlic, ginger and cayenne pepper and cook for 1 more minute.
  • Add 2 cups of the stock, brown sugar (or maple syrup), and squash and bring to a boil. Cover, reduce heat, and simmer for about 10-15 minutes (or until the squash is very tender). Remove from heat.
  • Puree soup with an immersion blender or puree in batches in a regular blender or food processor, adding remaining stock slowly until the soup reaches the desired consistency.
  • Season with salt and pepper to taste and garnish with optional toppings.

I've never met anyone who doesn't like butternut squash soup. It's a crowd-pleaser and so easy to make your own. It's colorful, it can be made ahead, and it's incredibly versatile-try adding coconut milk, finishing with toasted, chopped pecans, and/or cinnamon; serve it hot, serve it cold. And this vegetarian soup can easily be made vegan by omitting the cream.

3 tablespoons olive oil
2 tablespoons kosher salt, plus more for seasoning
2 Spanish onions, diced
3 garlic cloves, roughly chopped
2 green apples, unpeeled, cored and diced, plus more finely chopped to garnish
1 to 2 tablespoons Madras curry powder
1/8 teaspoon cayenne pepper
4 pounds butternut squash (about 2 large squashes), peeled and cubed
2 cups vegetable stock
1 cup heavy cream, or coconut, soy or almond milk, alternatively

Steps:

  • Heat the olive oil in a large soup pot over medium heat. Add the onions and 1 teaspoon of the salt and saute, covered, until the onions are translucent and sweaty, achieving no color, about 10 minutes. Add the garlic about halfway through sweating the onions.
  • Add the apples, curry powder, and cayenne and cook for 2 to 3 minutes to extract the apple flavor and bloom the spices. Season with salt.
  • Add the squash and stock, season with the remaining 1 teaspoon salt, and stir to combine. Bring to a boil, turn down the heat to maintain a low simmer, and cook, uncovered, for 30 to 45 minutes (checking after 15 minutes), or until the squash is fork-tender.
  • Add the cream, stir, and cook for 2 minutes more.
  • Remove from the heat and let the soup cool until you can safely transfer it to a blender or food processor, working in batches as needed and adding water as needed to achieve the correct consistency.
  • Return the pureed soup to the pot to reheat, then serve, or transfer to containers, cool, seal tightly, and store in the fridge or freezer.

No one will not like this soup and everyone will love this soup. That is all... By the way, this is a super easy recipe! I succeeded on my first try. Just keep in mind that the ginger and cumin are what really make the taste of this soup. To make things easier, simply grate the ginger with a cheese grater instead of cutting with a knife. If you bring this anywhere, you'll definitely be bringing home an empty dish so leave some extra at home if you want to have more later.

2 tablespoons canola oil
1 large onion
2 garlic cloves
1 tablespoon minced ginger (important)
1 teaspoon cumin seed (or ground) (optional)
1/2 teaspoon mustard seeds (black or brown, you can get these at Asian or bulk food stores or don't use if on a gluten-free diet)
1 medium sized squash (microwave it for a minute to make it easier to peel)
4 cups chicken stock (use slightly less to make soup thicker!, vegans, use organic vegetable stock)
salt and pepper
1 sweet red pepper (diced in very tiny cubes, size of kernel corn)
1 cup whole kernel corn
1 cup 10% cream (use Alpro or Mimicreme if you're vegan)

Steps:

  • Heat oil on medium and saute onion, garlic, ginger until soft and golden (about 3, 5 min - make sure not to burn the garlic!).
  • Add cumin and mustard seed and saute until you hear the seeds pop (30-60 sec), then stir in the cubed squash and toss to coat, then add stock, bring to a boil and cover.
  • Reduce heat and let simmer until the squash is soft and tender. At this point, you want to add the salt and pepper to taste.
  • You want to turn heat off and let cool before you puree. Once cooled, this is where you need a blender and an extra pot. You want to place around 3-4 ladles of the soup in the blender - don't fill all the way - and puree, then place in the new pot. Once all the soup is pureed, put back on medium low heat.
  • Stir in the cream (make sure you stir enough to get the cream incorporated, otherwise it will curdle).
  • Then add your corn and red pepper. Stir occasionally for 5 minutes and VOILA!

This velvety butternut squash soup is so delicious- you'll want to make a big batch! We paired it with grilled chicken thighs and a salad, but it would be perfect with a panini or grilled cheese sandwich too.

2 large squash, cut in half lengthwise
1/2 tsp cinnamon
4 tbsp olive oil
1 large yellow onion, diced
1/2 tsp hot chili flakes
2 1/2 tbsp grated fresh ginger (I keep mind in the freezer so that it's easier to grate)
6 cloves garlic, minced
1/4 tsp each of nutmeg, cumin and paprika
8 cups chicken stock
2 tbsp maple syrup
1 cup coconut milk (more or less to suit your taste)
salt and pepper to taste

Steps:

  • Preheat oven to 400 F
  • Place squash halves on a greased large baking sheet. Rub the squash with oil and then Sprinkle squash with cinnamon and baked covered with foil for about 45 minutes to an hour (when you insert a fork, it should be soft.
  • In a stockpot, heat oil over medium. Sauté the onions for about 5 minutes. Add the chilli flakes and sauté for another 2-3 minutes. Add ginger, garlic, salt and sauté for another 2 minutes.
  • When squash is ready, remove from oven and let cool for 10 minutes or so. Scoop out the squash - it should be very easy to remove from the skin. If not, you didn't cook it long enough. Add Squash to the stockpot with the sauteed onions and other spices and along with the 8 cups of veggie stock. Simmer for about 15 minutes while stirring every so often to allow flavours to combine and deepen. Add the maple syrup.
  • Transfer the soup in a blender or keep the soup in the stock pot and use an immersion (hand) blender and blend until smooth- I wanted mine extra smooth so I blended for at least 5 minutes until it was velvety smooth.
  • Add coconut milk and blend for another 10-20 seconds or so.
  • Return to the pot and warm again and serve. Test it out and add more spice and salt and pepper if needed.

Best Ever Pumpkin or Butternut Squash Soup image

I made this for a dinner party recently and served with French bread it went down very well. I'm not the greatest fan of soups, but as winter is setting in, I find that this is fantastic to have on hand. I make a large amount up on the weekend and take out what I need in the morning so that it has time to defrost before I get home. Once home, 10 minutes on the stove and I have a filling and healthy or filling and luxurious dinner, or starter to stave off the hunger whilst I cook the mains. Time and quantities are relative estimates as I tend to use what I have, and just make sure that the water doesn't evaporate from the pot. It usually takes about an hour and freezes exceptionally well. Add cream for extra richness if you like, but it is not necessary.

1 fresh pumpkin, seeded and diced or 4 butternut squash, peeled seeded and diced
4 potatoes, peeled
1 onion, sliced

Steps:

  • Saute the sliced onion and crushed garlic in a little olive oil.
  • Add the pumpkin or butternut squash and peeled potatoes to the pot and immediately add enough water to cover everything.
  • Add the oregano and cover the pot with a lid that allows steam to escape.
  • Boil until the pumpkin/butternut squash and potatoes are soft.
  • Either mash the vegetables for a chunky soup or blend for a smooth soup.
  • At this point, the soup can be refrigerated for a few days or frozen for a few months or served immediately.
  • When ready to serve, warm up the soup and mix in the cream saving a little to swirl on each plate. The cream is a delicious extra, but for a lighter, healthier soup I leave out the cream.

1 ½ tablespoons butter
½ onion, sliced
2 cloves garlic
2 sprigs fresh thyme
½ butternut squash - peeled, seeded, and cut into 1-inch cubes
4 cups chicken stock
½ cube chicken bouillon
1 pinch ground cumin
1 pinch ground allspice
salt and ground black pepper to taste

Steps:

  • Melt the butter in a large pot over medium heat; cook the onion, garlic, and thyme in the hot butter until the onion has softened, about 5 minutes. Add the squash and chicken stock; bring to a simmer and cook until the squash is tender, 10 to 15 minutes. Crumble the bouillon into the soup; season with cumin, allspice, salt, and pepper; remove from heat.
  • Pour the soup into a blender, filling the pitcher no more than halfway. Hold the lid of the blender in place with a kitchen towel and carefully start the blender using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a serving bowl. Alternately, you can use a stick blender and puree the soup in the pot.

2 ½ pound butternut squash
1 tablespoon avocado oil (or olive oil)
salt and pepper (to taste)
½ pound Italian sausage
½ onion (diced)
3 garlic cloves (minced)
2 cups (lightly packed) baby spinach
1 apple (diced)
1 tablespoon fresh sage (finely chopped)
½ tablespoon fresh rosemary (finely chopped)
⅓ cup dried cranberries (unsweetened)
¼ cup pecans (chopped)

Steps:

  • Preheat your oven to 400F (200F). Slice the butternut squash in half with a very sharp knife.
  • Scoop the seeds out of the butternut squash with a spoon. Then lightly brush oil on each butternut squash halve and season with salt and pepper.
  • Lay the butternut squash, cut side down on a baking sheet and bake for 40-45 minutes.
  • While the butternut squash is cooking, add the sausage to a saute pan on medium heat. Use a spatula to break up the sausage and cook until it's just browned.
  • Add the onions, garlic and baby spinach to the pan and stir for 2-3 minutes, or until the spinach is wilted. Then add the apple, sage and rosemary and cook for another 2-3 minutes, or until the apple has softened slightly.
  • Turn off the heat and stir in the cranberries and pecans.
  • When the butternut squash halves are cooked through, remove them from the oven, flip them over and remove some of the flesh to make room for the filling.
  • Fill the butternut squash with the apple sausage filling.
  • Turn the top broiler on the oven and bake the filled butternut squash for 5 minutes, or until they're golden on top. Serve immediately.
