FABULOUS HOMEMADE BREAD FOR THE FOOD PROCESSOR
Best homemade bread -- 2 loaves in about 3 hours! This is a variation of Allrecipes' Fabulous Homemade Bread by J. Drury to allow mixing in a food processor for only 2 loaves.

Steps:
- Pour the warm water into a large bowl, and whisk in 4 teaspoons of bread flour, the yeast, and the white sugar until thoroughly combined and the sugar has dissolved. Allow to stand until the yeast starts to form creamy bubbles, about 5 minutes.
- Fit a dough blade into a large food processor, and place 3 1/2 cups of bread flour, the oats, whole wheat flour, salt, brown sugar, and vegetable oil into the work bowl. Start the food processor running, and slowly add enough of the water-yeast mixture to allow the dough to form a firm ball and pull away from the sides of the processor, about 1 minute. Process for another 30 seconds to knead.
- Place the dough into an oiled bowl, and turn to coat the dough with oil. Cover with a damp cloth, and allow the dough to rise until doubled, about 1 hour. Punch down the dough, and divide into 2 equal-sized pieces. Form each piece into a loaf; pinch the seams and ends closed.
- Grease 2 4x8-inch loaf pans, and place the loaves into the pans with the seam sides down. Allow to rise until the dough is 1 inch above the rim of the pans, about 1 more hour.
- While dough is rising, preheat oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until the tops are browned, about 35 minutes. Allow bread to cool in pans for 10 minutes, then turn out onto cooling racks to finish cooling.

THE BEST BREAD MACHINE PIZZA DOUGH

- Place the above ingredients, minus the cornmeal, into the bread machine in the order shown.
- Select the pizza dough course on your bread machine or follow the manufacturer's instructions for pizza dough.
- Allow the bread machine to do its magic. Then, when it's all done, pull out the dough and allow it to rest on a lightly floured surface for 5 minutes or so.
- Separate the dough into 2 balls.
- Use a rolling pin to roll out each ball of the dough into a large circle.
- Sprinkle 2 -16 inch pizza pans with a light coating of cornmeal. Place the each crust onto each pan. Top with sauce and your favorite pizza toppings.
- Use your bread machine pizza dough in any of your favorite pizza recipes.
QUICK FLATBREAD DOUGH RECIPE
Steps:
- Mix the flour and salt in the food processor.
- Stir together the water and oil and pour over the flour mixture.
- Process until a soft dough ball forms. If the dough is too stiff, add another tablespoon of water and continue to process until the dough is well kneaded, 15 - 20 seconds.
- Lightly dust your hands and a clean surface with flour. Turn out the dough onto the lightly floured surface and cut the dough into quarters.
- Working with 1/4 of the dough at a time, roll each out to a 12 x 4 - inch rectangle, dusting with flour and turning as necessary to prevent it from sticking.
- Line a large cookie sheet with parchment paper or a silicone mat. (All four flatbreads should fit crosswise on the same sheet.)
- Top as desired and bake in a hot (450F-500F degree) oven until the crust is golden and crisp (10 - 15 minutes).

TRADITIONAL ITALIAN BREAD
Steps:
- Gather the ingredients.
- In a large bowl, stir together the sugar, salt, yeast, and warm water.
- Stir in the softened butter or margarine, whichever using.
- Sift in one cup of flour at a time until you have a dough that can be easily kneaded by hand without sticking to your hands.
- Turn the dough out onto a lightly floured surface and knead for 8 minutes, adding more flour if necessary, until the dough is soft and not sticky.
- Lightly grease a medium-sized bowl with olive oil and flip dough over so that the top is also greased.
- Cover with a clean kitchen towel or wrap paper and let rise for 30 minutes in a warm, draft-free place.
- Grease a large baking sheet and sprinkle it with coarse cornmeal, if desired.
- Remove the dough from the bowl, place onto a lightly floured table, and divide into two equal parts.
- Roll each dough half into an approximately 15 x 9-inch rectangle.
- Roll the dough tightly along the 15-inch side, pinch the seams, and taper the ends of each loaf with your hands at a 45-degree angle.
- Place the loaves on the prepared baking sheet and cover. Let rise in a warm, draft-free place for 20 minutes.
- Preheat the oven to 425 F. Make 3 deep diagonal slashes on each loaf.
- Bake the bread for 20 minutes.

EASY WHITE BREAD
A great recipe for an electric breadmaker - or do it the traditional way

- Mix 500g strong white flour, 2 tsp salt and a 7g sachet of fast-action yeast in a large bowl.
- Make a well in the centre, then add 3 tbsp olive oil and 300ml water, and mix well. If the dough seems a little stiff, add another 1-2 tbsp water and mix well.
- Tip onto a lightly floured work surface and knead for around 10 mins.
- Once the dough is satin-smooth, place it in a lightly oiled bowl and cover with cling film. Leave to rise for 1 hour until doubled in size or place in the fridge overnight.
- Line a baking tray with baking parchment. Knock back the dough (punch the air out and pull the dough in on itself) then gently mould the dough into a ball.
- Place it on the baking parchment to prove for a further hour until doubled in size.
- Heat oven to 220C/fan 200C/gas 7.
- Dust the loaf with some extra flour and cut a cross about 6cm long into the top of the loaf with a sharp knife.
- Bake for 25-30 mins until golden brown and the loaf sounds hollow when tapped underneath. Cool on a wire rack.

DUFF'S BEST BREAD ON EARTH BREAD

- Combine the all-purpose flour, bread flour, sugar, yeast and salt in the bowl of a stand mixer fitted with the dough hook attachment. Add the water to the center of the bowl and mix on low speed to combine. Raise the speed to medium and knead until the dough pulls away from the bowl in a smooth, clean mass, about 10 minutes.
- Lightly flour your workspace, turn the dough out of the bowl and lightly knead for about a minute, then shape into a ball. Lightly oil the inside of a large bowl, add the dough and rub oil over the top. Cover the bowl tightly with plastic wrap, then put in a warm spot, such as the top of the fridge, until it's more than doubled in size, about 45 minutes.
- When the dough is almost ready, preheat the oven to 450 degrees F with a rack in the middle position. Stack two matching baking sheets and place in the oven. Or, if you have a baking stone, use that instead.
- Turn the dough out of the bowl, punch it down and flatten it until it's about 2 1/2 inches thick. Shape the dough into a boule (round loaf). Lightly flour the top, cover lightly with plastic wrap and let rise for another 25 minutes.
- Remove the plastic wrap and score the top of the loaf. Open the oven door all the way and use a baking peel or the floured underside of a baking sheet to slide the loaf onto the hot stacked baking sheets or baking stone, working gently but quickly so as not to deflate the dough. Bake for about 10 minutes, then open the oven door and carefully throw a few handfuls of water at the bottom of the oven to create steam. Close the door quickly and continue to bake until well browned, 12 to 15 minutes more.
- Reduce the heat to 325 degrees F and bake until the loaf is deep golden brown and sounds hollow when you tap it, 15 to 20 minutes more. Transfer the loaf to a wire rack and let cool completely, at least 1 hour. That lets the crumb set. Listen to the loaf crackle as it cools-that's a good sound. Serve at room temperature.

BEST BREAD DOUGH
This bread dough is great for dinner rolls, but it's also fantastic for loaf, kolaches and CINNAMON ROLLS! It can be made by hand, or in a 2lb bread machine. (UPDATED!)

- DOUGH BY HAND: Mix water, yeast and sugar. Set aside.
- Mix ALL of the pudding mix with the milk.
- Add melted butter, egg and salt. Mix well. For really soft rolls, don't use the egg; for cinnamon rolls, the egg is a must -- otherwise they flatten out (but they're still tasty!).
- Add yeast mixture. Mix, then knead in flour until dough is smooth.
- Set in a warm place for 1 hour, then punch it down. Let it rise again for another 45 minutes.
- DOUGH IN 2LB BREAD MACHINE: Put the ingredients in the machine in the order listed above. Use the DOUGH setting.
- DO NOT COOK A LOAF OF THIS IN THE BREAD MACHINE! It is a very airy bread, and it will probably ruin your bread machine! (Lesson learned the hard way -- ).
- TO MAKE DINNER ROLLS: Form the dough into 1.5 to 2 inch balls, and place 1 inch apart on a cookie sheet. Bake in 350 degree oven for 15 to 20 minutes until golden on top.
- TO MAKE KOLACHES: Form the dough into 1.5 to 2 inch balls. Put mini-sausage and cheese on top, then pull the dough around and wrap it up as best you can. Place 1 inch apart on a cookie sheet. Bake as for DINNER ROLLS.
- CINNAMON ROLLS: Roll dough to 0.25 inch thick rectangle on a floured surface. Mix 1/2 cup melted butter, 1/3 cup cinnamon and 1 cup sugar; spread evenly (as best you can) over the surface of the dough.
- Roll up tightly, starting from a long side. Slice at 1 to 2 inch intervals. Place slices on a greased cookie sheet, 2 inches apart. (Pour a little melted butter over each one to make the rolls extra moist!).
- Cover and let rise 30 minutes.
- Bake at 350 degrees for 15 - 20 minutes. Remove them as soon as they turn golden. Frost with cream cheese frosting.
