8 oz Blueberries (fresh, or frozen)
¼ cup White sugar
1 tbsp Cornstarch
1 tbsp Lemon juice
1/2 cup Water ((divided))

Steps:

  • In a saucepan, over medium heat, add the blueberries, sugar, lemon juice, and half the water (1/4 cup). Cook on low to medium heat until all the sugar has dissolved. Use a vegetable masher to mash some of the fruit. Pro tip - Mashing will add a nice thicker consistency to the topping but make sure to leave some blueberries whole.
  • Combine the remaining water with cornstarch. Add it to the blueberries. Continue to cook on low heat until the filling is thick and glossy. When thick enough to coat the back of a wooden spoon or spatula it's ready.Pro tip - Cornstarch can settle to the bottom of the water. So, you must stir it just before adding it to the saucepan.
  • Remove and pour into a mason jar. Let cool completely or use as directed in your recipe. Pro tip - The filling will thicken as it cools so keep that in mind when you take it off the heat.

2 large eggs, (at room temperature)
2 teaspoons vanilla extract
½ cup (112 g) vegetable oil
2 teaspoons baking soda
1 cup (237 g) freshly brewed coffee

Steps:

  • Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl and mix until combined.
  • In another bowl, combine the buttermilk, oil, eggs, and vanilla.
  • With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula.
  • Pour the batter into two 8-inch round prepared pans and bake for 30-40 minutes at 350°F, until a cake tester or toothpick comes out mostly clean (not wet).
  • Cool in the pans for about 10 minutes, then turn them out onto a cooling rack and cool completely.

1 lemon (¼ cup), juice

Steps:

  • Preheat the oven to 350 degrees F. Grease and line a 8x4 (or 9x5) loaf pan with parchment paper.
  • Using a whisk or electric mixer, cream together the butter, sugar, and lemon zest. Add the milk and eggs then mix until combined.
  • Mix together the flour, baking powder, and salt together and then slowly add to the batter in batches, whisking in between, until well incorporated and the batter is smooth. Using a spatula, gently fold in most of the blueberries, reserving a small handful of blueberries.

2 cups (14 ounces) granulated sugar
1 teaspoon vanilla extract
5 large eggs, at room temperature
2 cups (227g/8 ounces) fresh or frozen blueberries
4 ounces full-fat cream cheese, room temperature
2 ounces unsalted butter, room temperature
2 and 1/2 cups confectioners' sugar, sifted, more if needed
1/8 teaspoon salt (tiny pinch!)

Steps:

  • Preheat oven to 325°F (163°C). Generously grease a 10-inch (12-cup) bundt pan, being sure to coat all of the nooks and crannies. I suggest using a non-stick baking spray that has flour in it, or greasing the pan with shortening or butter, then dusting it with flour. Set pan aside until needed.
  • In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt; whisk well to combine then set aside until needed.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, beat the butter and cream cheese at medium speed until smooth and creamy, about 1 minute. Gradually add in the sugar, then increase the speed to medium-high and continue beating until light and fluffy, about 3 minutes. Beat in the vanilla extract.

  • Bake for 65 to 75 minutes, or until the cake is golden and a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan, set on a wire rack, for 20 minutes. Then invert the cake onto the rack and cool completely.

1 large (20 oz) can of crushed pineapple, drained
1 cup fresh blueberries
1/2 cup shredded sweetened coconut (optional)
1.5 sticks of butter (use as much needed to cover the cake)

Steps:

  • Preheat oven to 375.
  • Spread the can of blueberry pie filling at the bottom of a 9.5 x 13 cake pan/pyrex dish (or similar size-but no bigger.)
  • Spread crushed pineapple over pie filling and top with shredded coconut and 3/4 of the fresh blueberries.
  • Evenly sprinkle the dry cake mix over the top of the fruit.
  • Thinly slice the butter sticks and place the sliced butter pieces over the dry cake mix. (you can melt the butter and drizzle it too, but I have found the results are best by slicing the butter.)

Steps:

  • Preheat the oven to 350f/175c Grease a 9-inch spring-form pan and set aside.
  • In a small heat-safe bowl, soften the butter and cream cheese together in the microwave until very soft, but not completely melted (don't worry if some of the butter melts).
  • Mix all the wet ingredients and sugar with the cream cheese mixture until combined. Mix in the remaining dry ingredients by hand.
  • Fold in the blueberries (reserving some of them for after the batter is added to the pan).
  • Add the batter evenly to the pan and then place the blueberries evenly across the top of the batter.
  • Bake for 55-65 minutes or until a cake tester comes out clean, and when gently pressed, the middle of the cake should feel firm & springy. If the cake starts to brown too much cover in foil and return to the oven.

  • In a mixing bowl whisk together the butter, cream cheese, powdered sugar, and vanilla extract.
  • Add the milk as needed 1 tablespoon at a time until it is the desired consistency.

1 tablespoon lemon zest
2 teaspoons vanilla extract
1/2 cup milk*
1/2 cup sour cream*
16 oz blueberries*

Steps:

  • Preheat the oven to 350F degrees. Grease and flour a 9-inch springform pan.
  • In a medium bowl whisk together the flour, baking powder and salt.
  • In a large bowl beat together the butter, sugar, and lemon zest until fluffy.
  • Add in the vanilla extract and beat in the eggs 1 at a time.
  • In a liquid measuring cup, whisk together the milk and sour cream.
  • With the mixer on low speed, beat about 1/3 of the flour mixture into the butter mixture. Then beat in about 1/3 of the milk and sour cream mixture.
  • Repeat the process with the rest of the flour and milk and sour cream, until all the ingredients are combined. The batter will be thick. Be very careful to only mix until the batter is combined.
  • Spoon about 1/2 of the batter into the bottom of the prepared pan and spread smooth. Then sprinkle about 1/2 of the blueberries over top.
  • Spoon the rest of the cake batter over top of the blueberries & spread smooth. Cover the top of the cake with the rest of the blueberries, pressing them down slightly.
  • Bake in the preheated oven or 45-55 minutes, or until an inserted toothpick comes out clean (except for the blueberry juice.

Steps:

  • Preheat the oven to 180 degrees and line or grease the tin. Start by creaming the butter with the sugar until light and fluffy
  • Beat the eggs and add to the creamed sugar and butter, stirring with a wooden spoon continuously.
  • The flour sifted with salt, baking powder and cinnamon must slowly be combined into the mixture.
  • Now add your blueberries to the mixture.
  • Add your mixture to the tin and allow bake for 45 - 50 minutes.
  • Allow to cool and optionally you can garnish with clotted cream and/or blueberry compote.

4 tablespoons cold butter

Steps:

  • Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners.
  • Add the flour, baking powder, salt, sugar and lemon zest to a large bowl and whisk together to combine. Add the blueberries and toss well to coat.
  • Measure the milk and vegetable oil into a large measuring cup, adding the eggs and whisking until all the wet ingredients are combined.
  • Add the wet ingredients to the dry ingredients and mix just until no streaks of flour remain.
  • Combine all the ingredients of the streusel topping and mix with a fork until crumbly.
  • Distribute the muffin batter evenly among the 12 prepared muffin cups and top each with the streusel topping.
  • Bake at 350 degrees Fahrenheit for about 20 minutes or until the streusel topping is a light golden brown and a toothpick inserted into one of the muffins comes out clean.

STREUSEL
1/4 c brown sugar
1/4 c white sugar
1/4 c all-purpose flour
3 Tbsp butter, room temperature
1 tsp cinnamon
CAKE
1 1/2 c all-purpopse flour, sifted
2 1/2 tsp baking powder
1/2 tsp salt
1 egg, beaten
3/4 c white sugar
1/3 c butter, melted
1/2 c milk, or buttermilk, or soy milk
1 tsp vanilla extract
1 1/2 c blueberries, frozen

Steps:

  • 1. Grease and flour a loaf or cake pan. Preheat oven to 375 degrees.
  • 2. For the topping, in a small mixing bowl, combine streusel ingredients. Blend with fork until crumbly. Set aside.
  • 3. In a small saucepan, heat half the blueberries and 1 tsp of sugar over medium heat. Occasionally mash the berries. Heat until berries turn into a slightly thick syrup. Remove from heat and set aside.
  • 4. In a small bowl, sift flour with baking powder and salt. In a medium bowl, mix together beaten egg and 3/4 cup sugar and 1/3 cup melted butter. Add milk and vanilla. Stir in flour mixture and mix well.
  • 5. Pour 1/2 the batter into a greased and floured pan. Sprinkle with remaining blueberries and half the streusel topping.
  • 6. Then top with remaining batter. Using a spoon, drizzle the blueberry syrup over the top, and gently swirl with a toothpick to slightly mix in. Top with remaining streusel.
  • 7. Bake at 375° for 35 to 45 minutes, or until cake tests done. Partially cool in pan on wire rack.
  • 8. Cut coffee cake and serve.

1/2 tsp salt
1 1/2 c all purpose flour
1 tsp baking powder
2 egg whites beaten stiff
1/2 c shortening
1 c sugar
2 egg yolks
1/3 c milk
1 tsp vanilla
1 1/2 c blueberries ( floured lightly ) otherwise color runs

Steps:

  • 1. Beat egg white stiff and set aside.
  • 2. Cream shortening with sugar and add well beaten egg yolks.
  • 3. add alternately with the milk and flour mixtures.
  • 4. Fold in egg white carefully and vanilla.
  • 5. Last fold in blueberries.
  • 6. Sprinkle bottom of a pan with 1/4 cup sugar ( white ) Bake at 350 degrees for 35-45 minutes. Use tin leaf pan works best ( I use pyrex glass which is fine also )

  • Heat the oven to 180C/160C Fan oven. Grease a 900g/2lb loaf tin then line the base and ends with grease proof paper.
  • Put the butter, sugar, flour, eggs and vanilla extract into a large bowl and beat with an electric hand mixer for 5 minutes until pale and creamy - the mixture will be very thick.
  • Spread one-quarter of the mix into the tin, then scatter over a third of the fruit.
  • Carefully dot and spread another quarter of the cake mix on top, and scatter with another third of the fruit, repeat this step.
  • Finally dot the rest of the cake mix over and gently spread with the back of a spoon.
  • Bake for 1 hour until an inserted skewer comes out clean, then leave to cool.
  • Mix the icing sugar and soft cheese to make the frosting then smooth onto the top of the cake. I normally start with 100g of soft cheese and add as much icing sugar as I think it needs.
