1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
3 bananas, mashed
¾ cup white sugar
1 egg, lightly beaten
⅓ cup butter, melted
⅓ cup packed brown sugar
2 tablespoons all-purpose flour
⅛ teaspoon ground cinnamon
1 tablespoon butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
  • In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
  • In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
  • Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

250g self-raising flour
1 tsp baking powder
½ tsp bicarbonate of soda
110g caster sugar
75g butter, melted
1 tsp vanilla extract
2 eggs
2 large ripe bananas, mashed
125ml buttermilk (or add 1 tsp of lemon juice to milk and leave for 20 mins)
50g pecans, chopped, plus extra to decorate (optional)

Steps:

  • Heat the oven to 190C/170C Fan/gas 5. Line a 12-hole muffin tin with paper cases. Sift together the flour, baking powder, bicarbonate of soda and caster sugar with a big pinch of salt. In a separate bowl mix the melted butter, vanilla extract, eggs, mashed bananas and buttermilk.
  • Make a well in the centre of the dry ingredients and pour the wet ingredients in. Roughly mix together with a fork, being careful not to over-mix. Scatter in the chopped pecans, if using, then spoon the mixture into the muffin cases. Top with pecan halves, then bake for 20-25 mins, until golden brown. Cool on a wire rack.

  • Bake for about 20-23 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center of one of the muffins comes out clean.
  • Let the muffins cool in their tins for a few minutes before removing them to a wire rack to cool completely.

1/2 cup butter, melted

1 teaspoon baking soda

1/3 cup granulated sugar
1/3 cup light brown sugar
1/4 teaspoon salt
1/2 cup butter, melted
1 1/2 cups all-purpose flour

Steps:

  • Preheat oven to 350°F. Place cupcake liners in a muffin tin. Set aside.
  • In a medium bowl mash the bananas with a fork, leaving them slightly lumpy, and set aside.
  • In a large bowl stir together the butter and sugar. Mix in the eggs and vanilla and stir until smooth. Add the sour cream, mashed bananas, baking soda, and salt, and stir until blended. Next mix in the flour until incorporated.
  • Fold in the walnuts, if desired.
  • Portion out 1/4 cup batter into each muffin tin and prepare crumb topping.
  • In a medium bowl combine all the crumb topping ingredients: granulated sugar, brown sugar, salt, butter, and flour. The mixture should form large crumbs. Top each muffin with an equal portion of the crumb topping.
  • Bake for 25-30 minutes, or until the muffins are set and a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for 10 minutes, and then remove and cool on a wire rack, or serve warm.

Steps:

  • Preheat the oven to 425 degrees F. Lightly brush a 12-muffin tin with butter and set aside.
  • Whisk the flour, baking soda, brown sugar, and cinnamon together in a medium bowl; set aside.
  • Whisk the banana, oil, milk, eggs, salt, and vanilla in a large measuring cup with a spout or another bowl.
  • Make a small well in the center of the dry ingredients. Pour wet ingredients into the center; then stir with a wooden spoon until the dry ingredients are moistened but still lumpy. Spray 2 medium size loaf pans with vegetable spray and line the bottom of the pans with parch paper. Pour mixture into two medium size loaf pans. Sprinkle 2 or 3 teaspoons of raw sugar evenly over the batter in each pan. Banana bread will bake for one hour and 5-10 minutes. Test with a toothpick for doneness.
  • Preheat the oven to 350 degrees. Follow the instructions above, but scoop the batter into muffin tins with paper cups (sprinkle 1 teaspoon of raw sugar onto each muffin) and bake them for about 34-36 minutes in muffin tins.
