1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
1-1/2 cups frozen unsweetened mixed berries
1/2 cup plain Greek-style yogurt

Steps:

  • Add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Cool 5 min.
  • Pour gelatin into blender. Add remaining ingredients; blend until smooth.
  • Pour into 8 paper or plastic cups. Freeze 2 hours or until gelatin is almost firm. Insert wooden pop stick or plastic spoon in center of each cup.
  • Freeze 3 hours or until firm. Remove pops from cups before serving.

  • Blend berries, yogurt and honey or agave syrup in a food processor for 20 seconds, until it comes together to a smooth ice-cream texture. Scoop into bowls and serve.

Keep your sweet tooth at bay this summer with these four-ingredient swirly berry yogurt pops.

1 cup fresh blueberries
1/4 cup honey, divided
1 cup fresh strawberries, hulled
2 cups vanilla yogurt (coconut milk is best, regular, Greek, soy, or almond will work, too), divided

Steps:

  • In the blender, combine blueberries and 2 tablespoons of honey. Pulse until mostly smooth (some chunks are fine). Transfer to a bowl, and clean the blender.
  • Repeat the process with the strawberries and the remaining honey. Transfer to a second bowl.
  • Add 1 cup of the yogurt to each of the two bowls (1 cup into the strawberries, 1 cup into the blueberries). Stir each bowl until somewhat combined. You'll want it to be a bit swirly, so don't overly mix.
  • Layer the two mixtures in pop molds, alternating and swirling to get the desired marble effect. Add in the stick (the yogurt should be thick enough to keep the stick upright).
  • Freeze 3-4 hours until frozen solid. Run the mold briefly under warm water to loosen pops for easy removal.

1 cup mixed fresh berries
1/4 cup water

  • Fill each cup with about 1/4 cup yogurt. Place berries, water and sugar in a food processor; pulse until berries are finely chopped. Spoon 1-1/2 tablespoons berry mixture into each cup.   • Combine all the ingredients in a blender and puree until the mixture is smooth. Pour the mixture into 8 freezer pop molds. Freeze for at least 4 hours and up to 2 days.

Pour the berries onto the prepared baking sheet and arrange the berries in a single layer. Roast for 30 minutes, stirring halfway, or long enough for the berry juices to thicken but not burn (watch the edges in particular).
  • While the fruit is roasting, blend together the Greek yogurt and lemon juice in a medium bowl. Mix in honey to taste, until it is barely sweet enough for your liking (keep in mind that the berries will be very sweet). Add more lemon juice if you want tart popsicles.
  • Let the berries cool for at least ten minutes, then scrape the berries and all of their juices into the bowl of yogurt. Use a big spoon to gently fold the mixture together (for a marbled effect, do not mix thoroughly).
  • Use the spoon to transfer the yogurt blend into the popsicle mould and insert popsicle sticks. Freeze for at least four hours. When you’re ready to pop out the popsicles, run warm water around the outsides of the moulds for about ten seconds and gently remove the popsicles. Enjoy immediately.

  • Use a spoon or q-tip to dip in popsicles to swirl color around. Add popsicle sticks, leaving 2 inches or so for a handle. Freeze for at least 6 hours to set. Before serving, defrost for about 10-15 minutes, then serve immediately.
