- Preheat oven to 350 degrees. Place tortillas on a baking sheet and top each with a tablespoon of jam, spreading it almost to the edge. Bake until tortilla is crisp, about 10 minutes. Remove and cool to room temperature.
- Spoon 1/4 cup of ricotta over each tortilla, spreading it almost to the edge. Divide the berries among the tortillas, making alternating rows of raspberries, blackberries, strawberries, and blueberries. Brush tops with remaining jam. Serve immediately, cutting into wedges like a pizza.

- In a bowl, combine flour and confectioners' sugar. Cut in butter until crumbly. Stir in pecans. Press into an ungreased 12-in. pizza pan. Bake at 350° for 12-14 minutes or until crust is set and edges are lightly browned. , Meanwhile, in a bowl, beat cream cheese, egg and sugar until smooth. Spread over crust. Bake 8-10 minutes longer or until set. Cool to room temperature., For topping, process mixed berries and sugar in a blender or food processor until blended. In a saucepan, combine cornstarch and water until smooth. Add mixed berry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Set mixture aside to cool, stirring frequently., Spread berry mixture over the cream cheese layer. Arrange fresh fruit on top. Refrigerate for at least 2 hours before slicing.

- Unroll crescent roll dough and place in a 15x10x1-in. baking pan coated with cooking spray. Press onto the bottom and 1 in. up the sides of pan to form a crust; seal seams and perforations. Bake at 375° for 8-10 minutes or until golden. Cool completely., In a large bowl, beat cream cheese until smooth. Beat in the preserves and confectioners' sugar; spread over crust. FRUIT PIZZA WITH SUMMER BERRIES
This colorful dessert pizza gets the most out of fresh berries: the juice from mashed blackberries naturally tints the purple frosting and a trio of blueberries, raspberries and blackberries are the perfect toppings.

- For the pizza dough: Whisk together the flour, baking powder and salt in a medium bowl.
- Beat together the sugar and butter on medium-low speed in a stand mixer fitted with a paddle attachment until light and creamy. Beat in the lemon zest, vanilla and egg. Increase the speed to medium and add the flour mixture in 2 batches, scraping down the sides of the bowl as necessary, and beat until just incorporated.
- Divide the dough in half and pat each piece into a disk. Wrap separately with plastic wrap and freeze for 45 minutes.
- Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment and dust it with flour. Roll one of the discs into a round that is approximately 1/4 inch thick and 6 1/2 inches across. Put a plate or inverted bowl of a similar size on top of the dough and cut off any excess dough to create a clean edge. Transfer to a lightly-floured work surface.
- Dust the baking sheet again with flour and repeat with the second disc. Brush off the baking sheet and arrange the 2 dough rounds on it. Bake until lightly browned around the edges, about 15 minutes. Cool completely on the baking sheet.
- Meanwhile, make the frosting: Beat together the cream cheese, yogurt and honey on medium speed in a stand mixer fitted with a paddle attachment until thick and smooth. Mash the blackberries in a small bowl. Strain through a fine mesh sieve; you should have about 2 tablespoons of juice (see Cook's Note). Add the juice to the cream cheese mixture and beat until the frosting is purple with no white streaks. Frost the 2 cooled "pizza" rounds. Refrigerate until ready to serve.
- Decorate each pizza with blueberries, raspberries and blackberries. Sprinkle each with coconut. Slice each pizza into 4 pieces.

GRILLED MIXED BERRY CHEESECAKE PIZZA

- In a small bowl, combine the warm water, honey and yeast. Allow to sit for 10 minutes to proof the yeast. It should be foamy.
- In a large bowl, combine the flour, salt, olive oil and the yeast mixture. Stir with a wooden spoon until the dough begins to come together. Transfer to a lightly floured work surface and knead by hand until a soft smooth dough forms, about 5 to 8 minutes. Form the dough into a ball and place inside a lightly greased large bowl. Cover loosely with plastic wrap and a damp kitchen towel and allow to rest until doubled in size, for 2 hours.
- Meanwhile, in a large bowl, cream together the cream cheese and 1/2 cup sugar on high for about 3 minutes. Stir in the vanilla and 1 tablespoon lemon juice until well combined. Chill in the fridge until ready to use.
- In a separate bowl, toss together the sliced strawberries, raspberries, blueberries, remaining 1/4 cup sugar, and the remaining tablespoon of lemon juice. Allow to sit at room temperature to macerate until ready to use.
- Once the dough has risen, gently punch it down and then transfer to a lightly floured work surface. Cut into three even pieces and form into balls. Keep them covered with a kitchen towel.
- Working with one at a time, roll out into a rectangle or a circle. Brush the surface evenly with olive oil.
- Preheat a large stovetop grill pan or an outdoor grill over medium heat. Once hot, carefully place the pizza dough onto the grill, oil side down. Then brush the top side with oil as well. Cook until the dough begins to puff up slightly and grill marks form, about 5 to 8 minutes. Carefully flip over and continue to grill on the second side for about 3 to 5 minutes. Transfer to a baking sheet and then continue grilling the rest of the pizza dough.
- Spread the grilled pizza dough with the cream cheese mixture and then add the crumbled graham crackers. Spoon the berries over the top and garnish with fresh mint. Slice and serve immediately.

We threw this together for a baby shower that we had for our Director of Nursing - we made three of them. They were delicous and all were different! Update 08/05/06 forgot to mention that I didn't figure time for the dough to bake, add an extra 20 minutes.
