A fellow teacher shared this recipe with me. We have several great cooks on our teaching staff, and each of us takes turns bringing special treats to the lounge. These moist, chewy cookies with a pleasant orange flavor are a favorite.-Susan Warren, North Manchester, Indiana

Number Of Ingredients 9

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg, room temperature
1 tablespoon grated orange zest
2-1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups vanilla or white chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg and orange zest. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in vanilla chips., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 10-12 minutes. Remove to wire racks to cool.

1/2 cup low-fat plain yogurt
1/2 cup raspberry sorbet
1/2 cup 100 percent cranberry juice

This is your basic smoothie recipe, jazzed a little with the addition of a whole orange instead of merely juice. The almonds are delicious but you can omit them if desired. Chilling time is essential if you want a real ice cream-like thicky.

Number Of Ingredients 6

1 large ripe banana, frozen
1/2 cup strawberry, frozen
1/4 cup raspberries, frozen (or use 3/4 cup of the classic "fieldberry" mix ( strawberries, blackberries, raspberries and blueber)
1 very ripe orange, peeled and extra pithe removed
1/3 cup soymilk (I used unsweetened)
3 -4 tablespoons slivered almonds or 3 -4 tablespoons sliced almonds

Steps:

  • Break or cut the banana into smaller chunks. Put it with the berries and orange into the FOOD PROCESSOR. Smoothies take forever in a blender!
  • Blend for 1-2 minutes, till very creamy. Add the milk, more or less if you want, and blend until well combined.
  • Pour into a big mug, scraping down the food processor with one of those great silicon spatulas :-) Transfer to the freezer for 15-30 minutes. Or, if you like your smoothies a bit meltier, eat now! It's already very thick.
  • Before eating, sprinkle with almond slivers or slices. This is a flavorsome, crunchy touch that to me really makes this special. Enjoy!

1/2 cup orange-colored white chocolate* or use white chocolate and add candy food coloring
1 teaspoon orange oil
2 1/2 cups sugar
1/2 cup water
1/4 teaspoon salt
1/2 cup light corn syrup
2 egg whites, room temperature
1 teaspoon vanilla extract
1/2 cup finely chopped pecans

Steps:

  • Prepare orange pieces: In a double boiler over simmering water, melt the orange-colored white chocolate. When smooth and melted, remove from over double boiler and add orange oil (orange extract may also be used). Pour onto a cookie sheet lined with aluminum foil and spread evenly. When cool, chop into medium small pieces. Set aside.
  • Combine sugar, water, salt, and corn syrup in a 3-quart saucepan; cook over low heat stirring gently until sugar is dissolved. Turn heat up to medium and place lid on pan for 2 to 3 minutes to wash down sugar crystals. Uncover and continuing cooking without stirring until candy thermometer reaches hard ball stage (260 degrees F).
  • Beat egg whites until stiff peaks form, just before sugar mixture is ready. Pour hot sugar mixture over egg whites in a thin stream while mixer is at high speed. Add vanilla and continue beating until candy starts to loose its gloss and hold its shape. Add nuts and orange pieces. Drop by rounded spoonfuls onto waxed paper.

12 large egg whites
1 cup all-purpose flour
1-3/4 cups sugar, divided
1-1/2 teaspoons cream of tartar
1/2 teaspoon salt
1 teaspoon almond extract
1 teaspoon vanilla extract
1 teaspoon grated orange zest
1 teaspoon orange extract
6 drops red food coloring, optional
6 drops yellow food coloring, optional

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Sift flour and 3/4 cup sugar together twice; set aside. , Add the cream of tartar, salt and almond and vanilla extracts to egg whites; beat on medium speed until soft peaks form. Gradually add remaining sugar, about 2 tablespoons at a time, beating on high until stiff glossy peaks form and sugar is dissolved. Gradually fold in flour mixture, about 1/2 cup at a time., Gently spoon half of batter into an ungreased 10-in. tube pan. To the remaining batter, stir in the orange zest, orange extract and, if desired, food colorings. Gently spoon orange batter over white batter. Cut through both layers with a knife to swirl the orange and remove air pockets., Bake on the lowest oven rack at 375° for 30-35 minutes or until lightly browned and entire top appears dry. Immediately invert pan; cool completely, about 1 hour., Run a knife around side and center tube of pan. Remove cake to a serving plate.
