BERRY-OATMEAL BAKE
This breakfast bake is easy on the calories and fat and as pretty as a picture. With its berries and oat-almond topping, it's almost like a tart, sweet fruit cobbler-great with a little Greek yogurt or milk on top.

- Preheat the oven to 350 degrees F. Grease a 2-quart baking dish or 8-inch square baking pan with the butter.
- For the oatmeal: Stir together the oats, sugar and 1/8 teaspoon salt in a large bowl. Whisk together the almond milk, egg, vanilla and almond extract in a medium bowl. Pour the milk mixture into the oat mixture and stir well to combine.
- For the topping: Stir together the almonds, oats, sugar, butter, flour, cinnamon and 1/8 teaspoon salt in a medium bowl until evenly combined.
- To assemble: Pour the oatmeal into the prepared baking dish. Arrange the berries (including any juices) over the oatmeal. Sprinkle with the topping. Bake until lightly browned and just set, about 50 minutes. Let cool on a rack for 10 to 15 minutes. Serve warm with a dollop of yogurt or a splash of milk if using.

PIZZA OATMEAL
This savory oatmeal is like a warm bowl of pizza. I know not everyone will like it, but I do and I hope you do too. The toppings can be varied depending the type of 'pizza' you like and amounts can be changed to suit your taste. My version is vegetarian.

Steps:
- Prepare (slice, dice) toppings and set aside.
- Place oats in large bowl, add onions, bell peppers, mushrooms, and garlic.
- Add enough water to cover and then stir.
- Place in microwave and cook on high for about 3.5 minutes.
- Remove from microwave, add pizza sauce, and stir (if thin, heat again in microwave until desired consistency is reached).
- You can add some sweetener or sugar to the mix if you wish.
- Spread shredded mozzarella evenly over the oatmeal.
- Top with diced tomato.
- Return to microwave for 45 seconds on high, or until cheese melts.
- Allow oatmeal to cool, then enjoy!

- Spray counter lightly with non-stick cooking spray.
- Combine dinner or Texas rolls and roll into a 12-inch circle.
- Cover with plastic wrap and let rest while preparing the topping.
- Combine sugar and corn starch in a bowl, add berries and gently toss until evenly coated.
- Mix flour, brown sugar and cinnamon in a bowl.
- Cut in butter until crumbly and add oats.
- Remove plastic wrap from dough and place dough on a sprayed 12-inch pizza pan.
- Arrange berries evenly over dough.
- Sprinkle streusel over berries. Bake at 425°F 12-15 minutes or until topping and crust are browned.
- Let cool while making glaze.
- For glaze, combine sugar, almond and milk and stir until smooth.

BERRY OATMEAL MUFFINS
The fat in the muffins is just enough to make the texture right, but not too much fat. I found this recipe in BH&G magazine, and tested them. I thought they were some of the best of low fat muffins I ever made.

- Prepare muffin pan with cooking spray, or with paper baking cups. Preheat oven to 400º.
- Combine 1 1/2 Tbsps. oats and 1 1/2 Tbsps. brown sugar in a small bowl, and set aside.
- In another small bowl, gently toss blueberries with 1 tablespoons flour. Set aside.
- In a large bowl, combine remaining oats, sugar, flour, baking powder, and cinnamon.
- In a medium bowl, combine yogurt, butter, egg, and vanilla.
- Gently stir yogurt mixture into flour mixture until dry ingredients are moistened, but batter is still lumpy.
- Gently fold in blueberries.
- Fill muffin cups almost to top.
- Sprinkle reserved oats and brown sugar over muffins.
- Bake 18 to 20 minutes, or until golden brown.

VERY BERRY OATMEAL MUFFINS
Blueberries, Raspberries, Blackberries, Strawberries... Oh MY! I made this recipe when the wild raspberries were everywhere at our cottage. I have made them with each type of berry you can think of. I've also subbed the oil for applesauce, which goes quite well with strawberries. I'm making myself hungry just typing this now. :) Please let me know how many muffins this yielded for you. - Preheat oven to 350 degrees F (175 degrees C).
- Lightly grease a 7x11-inch glass baking dish with cooking spray.
- For the filling - In a large Ziploc bag put in cut up apples, lemon juice, vanilla, mix white sugar and cinnamon together then add to bag - agitated gently to mix all ingredients.
- For the crisp - In a large bowl, combine brown & white sugar, oats, flour, salt, baking soda. Pour in the melted butter. Mix until crumbly.
- Place half of crumb mixture in pan, lightly press into pan.
- Spread the apples cinnamon filling evenly over crumb mixture.
- Spread the blackberries evenly on top of the apples.
- Sprinkle with remaining crumb mixture on top of the fruit.
- Place butter quarters evenly spaced on top of crumb mixture.
- Bake in the preheated oven for 40 to 45 minutes, or until golden brown.
- Let cool, serve with vanilla ice cream for an unbeatable combination.
- Lastly - Add other fruit as the mood strikes - berries (black, Marion, Boysen, rasp), pears (skinned), peaches (skinned) or mix and match. Fruit total volume should be 3 to 3½ cups.

Irish Steel Cut oatmeal is what I use in this recipe not the quick cooking You can use what oatmeal you enjoy just adjust the water to oatmeal ratio. - Mix 2 T. flour, the granulated sugar, lemon juice, and 1/4 t. nutmeg in mixing bowl. Add berries and toss gently to combine. Transfer to buttered pan.
