BLOODY EYEBALL PUNCH

Bloody Eyeball Punch image

Provided by Anne Burrell

Categories     beverage

Time 8h10m

Yield 8 to 10 servings

Number Of Ingredients 6

About 15 preserved dark cherries, such as Amarena or Luxardo
One 20-ounce can lychees, juices reserved
One 750-milliliter bottle prosecco, or other dry sparkling wine, chilled
One 325-milliliter bottle vodka, chilled
1 quart dark cherry juice, chilled
Gummy worms, for serving, optional

Steps:

  • Stuff the cherries into the holes of the lychees, using a toothpick to keep them in place if necessary. Place each stuffed lychee on a sheet pan or in a freezer-safe casserole dish. Freeze for at least 8 hours and up to overnight.
  • Mix the prosecco, vodka and cherry juice together in a large punch bowl. Taste and add the reserved lychee juice as needed for sweetness. Remove the toothpicks from the frozen lychees. Add the "eyeballs" to the punch and serve with a gummy worm draped over the rim of each glass, if desired.

BLUEBERRY RICKETY EYEBALL PUNCH

Blueberry Rickety Eyeball Punch image

This punch--a spookified version of a classic rickey--is a refreshing drink for kids after trick-or-treating. Add some gin, and it's an equally refreshing after-dark cocktail for adults.

Provided by Food Network Kitchen

Categories     beverage

Time 1h10m

Yield 6 to 8 servings

Number Of Ingredients 7

12 to 24 fresh blueberries
12 canned lychees in syrup, drained, plus 5 to 6 tablespoons syrup from the can
3 cups blueberry juice cocktail
1/3 cup freshly squeezed lime juice (about 4 limes)
2 cups sparkling water
Ice
3/4 cup gin, optional

Steps:

  • Stick 1 to 2 blueberries, depending on their size, into the cavity of each lychee. Place on a foil-lined baking sheet and freeze, about 1 hour. (Wait until the "eyeballs" thaw a bit before eating, so that you don't choke on them.) Stir together 5 tablespoons of the lychee syrup, the blueberry juice and lime juice in a bowl or pitcher until combined. Stir in the sparkling water and add the lychee eyeballs. If it is a bit tart for your taste, add the remaining tablespoon syrup. Serve in tall glasses over ice, spooning the lychee eyeballs into the glasses as you pour. For a grown-up twist, stir in the gin before adding the sparkling water. Enjoy!

HALLOWEEN MOCKTAIL PUNCH

Halloween mocktail punch image

Serve this ghoulish fruit punch at a Halloween party for kids (or big kids). Stir the purple punch and lychee 'eyeballs' and frozen 'hands' will be revealed

Provided by Lulu Grimes

Categories     Drink

Time 10m

Yield Serves 14-15

Number Of Ingredients 7

425g can lychees
225g jar cocktail cherries
15 raisins
1 litre carton blueberry, blackberry or purple grape juice , chilled
1 litre carton cherry or cranberry juice , chilled
1litre sparkling water , chilled
2 pairs powder-free disposable gloves

Steps:

  • Rinse the disposable gloves and fill each with water. Tie a knot in the top of each as you would a balloon, or use a tight bag clip to hold the opening closed. Freeze overnight.
  • Drain the lychees and cocktail cherries, reserving the juices in a jug. Push a raisin into one end of each cherry, then push the cherries into the lychees to make 'eyeballs'.
  • Tip all of the juices, plus the reserved lychee and cherry juices, into a large bowl with the 'eyeballs'. Carefully peel the gloves from the ice hands, add to the punch, then top up with the sparkling water.

  • Prepare the eyeballs. Place a blueberry in the middle of each lychee. If desired, place two on a skewer to make a set of eyes. Keep refrigerated until ready to serve or use as ice cubes (highly recommended). To do that, lay the assembled eyeballs in a single layer on a tray and freeze for about 1-2 hours or until solid. Keep them in a freezer-proof container until ready to serve.
  • It's recommended to freeze the juice bottles and rum in the freezer for a few hours before serving. Shortly before serving, mix all the punch ingredients together. Keep chilled until ready to serve.
