Steps:
- Preheat the oven to 350ºF. Coat an 8" x 8" baking dish with vegetable oil spray. Set aside.
- To prepare the berries: In a mixing bowl, combine the sugar and the cornstarch. Stir to mix. Add the berries. Toss to combine. Transfer to the baking dish. Wipe the bowl clean with a paper towel.
- To prepare the crust: In the bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Stir with a fork or pastry blender. Add the Better Butter or spread. Cut into the dry ingredients until the pieces are the size of peas. Add the milk and stir quickly just to moisten. Dollop over the berries, leaving some bare patches.
- Bake for about 40 minutes, or until the topping is golden and the fruit is bubbling. Let stand for 10 minutes before serving.
BERRY COBBLER FOR TWO
I just bought a cookbook "Small Batch Baking" and this was the second thing I tried. My ramekins are 7 oz each. I used frozen raspberries because that's what I had, even though the recipe calls for mixed berries I think any frozen fruit could be subbed. If you think your berries are tart adjust sugar to your tastes. This is also super easy to double or triple. I'm single and just don't need a bunch of leftover dessert sitting around trying to get my attention!:)

- Let sit for 15 minutes to cool.
- Serve with whipped cream or ice cream.
VERY BERRY SUGAR COOKIE COBBLER
A cobbler that is as easy as it gets, using frozen berries, canned apple pie filling and a topping of refrigerated sugar cookie dough. To make it the ultimate, serve with vanilla ice cream or whipped cream.

BERRY BREAKFAST COBBLER
A simple and delicious breakfast option. Very filling and great for after that morning workout. For more crunch, some pecans and almonds can be ground in a food processor with almond oil and then added to the cobbler.

- In a large bowl, gently fold the berries, sugar, cornstarch, lemon juice, and vanilla extract together until thoroughly combined. Spread filling evenly into prepared pan.
- Whisk the flour, sugar, baking powder, and salt together in a large bowl. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles coarse meal (pea-sized crumbs). A pastry cutter makes this step very easy and quick! You could also use a food processor, too. While slowly stirring, slowly drizzle in 1/2 cup buttermilk. Mix until evenly combined. Take handfuls of dough and gently flatten out. Place dough all over the top of the berry filling. There’s no special trick to this– just flatten the dough in sections and cover most of the berries.
- Brush the top of the biscuit dough with 1 Tablespoon of buttermilk, then sprinkle with coarse sugar. These two are optional, but both help achieve a shiny, crunchy, golden brown crust.
