1 (19 ounce) can royal anne cherries in heavy syrup, syrup reserved
1 pint strawberry, halved
1 pint blackberry
1 1/2 tablespoons kirsch

Steps:

  • Measure out ½ cup of reserved syrup from cherries.
  • Place berries in a large bowl.
  • Pour reserved syrup and kirsch over fruit and toss gently. Cover and refrigerate until ready to serve.

1 stick unsalted butter, room temperature, plus more for pan
1 3/4 cups unbleached all-purpose flour
1 3/4 teaspoons baking powder
3/4 teaspoon kosher salt
1/3 cup granulated sugar
2/3 cup packed light-brown sugar
2 large eggs, room temperature
4 teaspoons bourbon, such as Maker's Mark
2/3 cup whole milk, room temperature
1 cup raspberries
1 cup blueberries
Fine sanding sugar, for sprinkling

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-2-inch round cake pan. Line with parchment; butter parchment. Whisk together flour, baking powder and salt.
  • Beat butter with granulated and brown sugars on medium-high speed until light and creamy. Add eggs, one at a time, beating to combine after each addition. Beat in bourbon. Add flour mixture in three batches, alternatingwith milk and beginning and ending with flour; beat until combined. Transfer batter to prepared pan. Sprinkle top with berries, pressing some down into batter. Sprinkle generously with sanding sugar. Bake until edges begin to pull away from pan and top springs back when lightly touched, 50 minutes to 1 hour.
  • Let cool in pan 20 minutes. Turn out onto a wire rack carefully (cake is quite fragile when warm); remove parchment. Turn cake top-side up; let cool completely, about 1 hour.

1 pound strawberries, hulled and halved or quartered if large
1 cup raspberries (4 ounces)
1 cup blackberries (4 ounces)
1 cup blueberries (5 ounces)
1/4 cup fresh mint leaves, torn

Steps:

  • In a medium bowl, whisk together sugar and liqueur. Gently fold in strawberries, raspberries, blackberries, blueberries, and mint. Serve immediately (or cover and refrigerate, up to 4 hours).

1 1/2 pounds cherries, pitted
3 tablespoons all-purpose flour
Pinch of salt
1/4 cup granulated sugar
4 large eggs
2 large egg yolks
1 cup milk
1 cup heavy cream
1 vanilla bean, split and scraped
3 tablespoons kirsch
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 375 degrees. Butter a 10-inch porcelain tart dish, and fill with cherries. Set aside.
  • Sift flour and salt together into a large bowl. Add sugar. Gradually whisk in whole eggs, egg yolks, milk, and cream. Add vanilla-bean scrapings and kirsch; whisk to combine.
  • Using a sieve, strain the batter over the cherries. Bake until puffed and browned, about 45 minutes. Let cool until warm; it will sink slightly. Dust with confectioners' sugar, and serve.
