JAMAICAN BROWN STEW CHICKEN

I've been wanting to make this for a while since I love any kind of braised or stewed chicken recipes, especially ones that have similar ingredients as jerk chicken. While I might make a few adjustments next time, this really did come out amazingly well. Serve over steamed rice with green peas and garnish with fresh thyme.

1 tablespoon minced habanero pepper
2 tablespoons fresh thyme leaves, chopped
4 cloves garlic, minced
2 teaspoons minced fresh ginger root
½ cup sliced green onions, divided
2 tablespoons packed dark brown sugar
1 teaspoon freshly ground black pepper
2 teaspoons kosher salt
1 teaspoon smoked paprika
½ teaspoon ground allspice
1 tablespoon cider vinegar
8 (5 ounce) bone-in, skin-on chicken thighs
3 tablespoons olive oil, divided
1 large yellow onion, diced
1 pinch kosher salt
1 tablespoon brown sugar
4 cups chicken broth
⅓ cup ketchup
2 each bay leaves
1 cup sliced carrot
1 cup bell peppers, mini sweet peppers

Steps:

  • Place habanero, thyme, garlic, ginger, light parts of green onions, brown sugar, black pepper, kosher salt, smoked paprika, allspice, and vinegar for marinade into a large mixing bowl and whisk to combine.
  • Make 2 slices into the skin side of each thigh, perpendicular to the bone, about 1 inch apart, cutting all the way down to the bone. Add chicken thighs to the marinade and toss thoroughly until evenly coated. Place a piece of plastic wrap over the chicken and transfer to the refrigerator, 12 hours or overnight. If possible, toss several times during the marinating time.
  • Remove the chicken from the marinade. Scrape off any chunks of marinade from chicken into the bowl and reserve for later.
  • Heat 2 tablespoons oil in a large, deep, heavy-bottomed skillet or Dutch oven over medium-high heat until almost smoking hot. Add chicken and brown well on both sides, about 5 minutes, working in batches if necessary. Once all the chicken is browned, remove to the marinade bowl and reserve.
  • Heat the same pan over medium-high heat. Add onion and a pinch of salt; saute in the fat until golden brown, 3 to 5 minutes. Add 1 tablespoon brown sugar and cook until everything caramelizes and turns a dark brown, 3 to 5 minutes more.
  • Carefully add chicken broth, ketchup, and bay leaves to the pan; bring to a boil. Add carrots, bell peppers, browned chicken thighs, and reserved marinade.
  • Reduce the heat to medium-low and simmer, stirring occasionally, until the chicken is tender and no longer pink in the centers, and the sauce has reduced and thickened, 1 to 1 1/2 hours, skimming the excess fat that comes to the top and basting the chicken with the sauce occasionally. Taste and adjust seasoning. Toss in reserved sliced green onions. Serve immediately.

4 boneless chicken breast halves
2 tablespoons olive oil
1 shallots or 1 scallion, minced
1 cup dry breadcrumbs
3 tablespoons parsley, chopped
1/4 teaspoon thyme
1/8 teaspoon rosemary, crumbled
1 egg yolk

Steps:

  • Place chicken breasts between two sheets of wax paper and pound lightly with a mallet or other heavy flat object to flatten to 1/4 inch thick.
  • Heat 1 teaspoons oil in a heavy nonstick skillet over medium low heat. Saute‚ shallot 1-2 minutes or until softened. Transfer shallot to a bowl and set aside.
  • Stir next 4 ingredients and salt and pepper to taste into bowl with shallot. Add 1/2 teaspoons oil and egg yolk and lightly toss.
  • Heat remaining oil in same skillet over medium high heat. Saute‚ chicken 3 minutes per side. Turn on broiler. Place chicken breasts on an ovenproof platter. Press a portion of crumb mixture onto one side of each chicken breast until breadcrumb mixture is 1/4 inch thick. Place chicken on broiler pan, crumb side up, and broil 1 minute or until golden. Serve crumb side up.

1 ounce dark rum
1/2 ounce banana liqueur
1/2 ounce apricot liqueur
1/2 ounce coconut rum
1/4 ounce grenadine
1/4 ounce honey
1/2 ounce lemon juice
1 ounce orange juice
1 ounce pineapple juice
3 ice cubes (up to 4)

Steps:

  • In a blender, process ingredients well with a couple of ice cubes. Pour over ice in tall glass.
  • Garnish with orange slices and/or cherry.

1 cup water
1/2 cup dark brown sugar, packed
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon cornstarch
1 tablespoon water
1/4 teaspoon rum flavoring
8 chicken thighs
2 garlic cloves, crushed, minced
1/4 cup onion, grated
1/4 teaspoon salt, to taste
1/8 teaspoon pepper, to taste
1/4 cup soy sauce
1/4 teaspoon pepper sauce
1/2 cup nutmeg syrup
1/4 teaspoon ground ginger

Steps:

  • FOR THE NUTMEG SYRUP: In a saucepan, combine the 1 cup of water along with the sugar, cinnamon & nutmeg. Mix thoroughly & bring to a boil, then reduce heat & cook, stirring for 2-3 minutes.
  • In a small container combine cornstarch & water & mix thoroughly, before stirring it into the syrupy mixture, & blending well.
  • Simmer the syrup for another 5 minutes or so until thickened somewhat.
  • Remove from heat & stir in the rum flavoring, then set aside.
  • FOR THE CHICKEN: Preheat oven to 400 degrees F.
  • Place chicken thighs in a 13"x9" baking dish
  • In a small container combine garlic, onion, salt & pepper, mixing well, then spread this mixture over the chicken thighs.
  • Bake thighs for 15 minutes, then remove from oven.
  • While chicken is baking, in a bowl, combine soy sauce, pepper sauce, Nutmeg Syrup & ground ginger, mixing well.
  • After the 15 minutes of baking, remove chicken from the oven & turn the temperature down to 350 degrees F.
  • Baste the thighs with the Nutmeg Syrup mixture & return them to the oven to bake for at least 60 minutes, basting frequently.
  • Serve hot with additional syrup mixture, if desired.

4 boneless skinless chicken breasts
1/8 teaspoon salt, to taste
1/8 teaspoon black pepper, to taste
2 ounces unsalted butter
1 tablespoon vegetable oil
3/4 cup wine vinegar
1/2 cup onion, chopped
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Season chicken breasts with salt & pepper, to taste.
  • Heat a large skillet over medium heat then add oil & butter.
  • Add chicken & brown on one side, about 8 minutes, then turn over, reduce the heat & cook, covered, at least 10 minutes. Then remove breasts to a serving platter, & keep warm.
  • To the skillet add the chopped onion & cook until transluscent, about 5 minutes, then add the wine vinegar & turn heat to medium-low.
  • In a small container mix cornstarch with the tablespoon of water & mix thoroughly before adding it to the skillet, stirring to combine. Continue cooking & stirring until slightly thickened, then pour the onion mixture over the chicken breasts & serve.

2 tablespoons fresh lime juice
1 tablespoon soy sauce
1 tablespoon peanut oil
1 tablespoon hot pepper sauce
1 tablespoon fresh ginger, chopped
3 garlic cloves, coarsely chopped
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1/4 teaspoon allspice, ground
1/4 teaspoon salt
500 g chicken fillets

Steps:

  • Puree in blender lime juice, soy sauce, oil, hot pepper sauce, ginger, garlic, thyme, pepper, allspice and salt. Combine marinade with chicken in plastic food-storage bag.
  • Seal.
  • Marinate in refrigerator overnight. Place oven rack in top position.
  • Heat oven to 500°F:.
  • Drain chicken; discard marinade. Pat dry.
  • Arrange in roasting pan.
  • Roast on top rack in 500°F: oven 25 minutes for breasts, 30 minutes for thighs and drumsticks, or until instant-read thermometer registers 170°F: without touching bone.
