CARBONNADE FLAMANDE (BEEF AND BEER STEW)

2 pounds chuck roast (trimmed and cut into stew cubes)
2 11.2oz bottles of Flemish Sour Ale
4 slices of bacon (diced)
3 medium onions (sliced)
3 cloves of garlic
2 tablespoons olive oil
3 tablespoons all-purpose flour
1 1/2 cups beef broth
2 bay leaves
4 springs of fresh thyme
1 tablespoon dark brown sugar
1 tablespoon whole grain mustard
1 Cup chopped parsley plus more to garnish
Salt and pepper to taste

Steps:

  • Marinate the beef with the beer, the garlic, the bay leaves and a pinch of salt for at least two hours, or overnight.
  • Drain the beef and reserve the marinade. Pat dry the beef with paper towels.
  • In a dutch oven, heat the olive oil until pipping hot. Fry the beef in batches, until golden brown on all sides, about 10 minutes. Remove the beef cubes and reserve.
  • In the same dutch oven, fry the bacon until golden and crisp. Reserve with the beef.
  • Add the onions, a pinch of salt and fry in the bacon grease, until caramelized (around 10 minutes).
  • Add the flour and cook for about 2 minutes until the flour is cooked and the onions are coated.
  • Add the beef broth and scrape the bits stuck in the bottom. Add the reserved marinade, the beef, the bacon and the thyme.
  • Cook for 1.5 hours.
  • Add the brown sugar, the parsley, some fresh pepper and the mustard. Cook for 30 minutes.
  • Sprinkle some fresh parsley on top and serve with fries.

This recipe was found in Robin Robertson's Vegan Planet. My hubby is a brewer, so I naturally gravitated toward this recipe. I think this recipe would be equally as good with sliced portabello mushrooms. It's all about the sauce, which is thick and delicious. The carmelized onions are what makes this so tasty, in my opinion. The note says to serve it over noodles and to wash it down with more of the beer that you use in the stew. I served it over mashed potatoes and a side of steamed broccoli and used (and drank) oatmeal stout. Yum.

3 tablespoons olive oil
1 lb seitan, cut into thin strips
1 large yellow onion, chopped
1 tablespoon light brown sugar or 1 tablespoon natural artificial sweetener
2 tablespoons unbleached all-purpose flour
1 cup dark beer
1 tablespoon molasses
2 teaspoons Dijon mustard
2 teaspoons white wine vinegar
1 teaspoon dried thyme, crumbled
1 bay leaf
1 cup vegetable stock
salt & freshly ground black pepper

Steps:

  • Heat 1 Tbsp of the oil in a large skillet over medium-high heat. Add the seitan and cook until browned on all sides, about 10 minutes, Set aside.
  • Heat remaining 2 Tbsp olive oil in a large saucepan over medium heat. Add the onion, cover, and cook until softened, about 5 minutes.
  • Stir in the brown sugar and cook, uncovered, and stirring frequently, until the onion is caramelized, about 10 minutes. Add the flour, and cook, stirring for 1 or 2 minutes to remove the raw taste.
  • Stir in the beer, molases, mustard, vinegar, thyme and bay leaf. Add the stock, and simmer, stirring occasionally, until thickened, 10 to 15 minutes.
  • Add the seitan and simmer until the flavors are blended, about 10 minutes.
  • Remove the bay leaf and adjust the seasonings with salt and pepper.
  • Serve hot and enjoy.

The beer in this recipe makes the bread rise well and gives it a malty flavor, depending on the kind of beer you use. We like using a dark beer. Try this toasted with your favorite soup or stew.

3 cups bread flour
1 package yeast
1 tablespoon sugar
1 1/2 teaspoons salt
1 tablespoon butter
10 ounces beer, flat
4 ounces grated sharp cheddar cheese
4 ounces grated monterey jack cheese

Steps:

  • Warm beer and cheese over low heat on top of stove or in microwave.
  • Cheese doesn't need to melt completely.
  • Place the warm beer/cheese mixture and butter into your bread machine.
  • Next add the flour, sugar and then the yeast in a little hole dug in the middle of the flour.
  • Finally sprinkle the salt around the edges of the flour, away from the yeast.
  • Set machine for 2 pound loaf, white bread.
  • Every machine is a little different, so please check your instructions and add the ingredients in the order recommended by the manufacturer.
  • Let this bread cool almost completely before slicing.

2 cups thin sliced onions
2 tablespoons vegetable oil
2 tablespoons minced garlic
3 tablespoons fresh gingerroot, grated
1 teaspoon salt
4 cups shredded cabbage
2 teaspoons asian chili paste, to taste
2 cups peeled grated carrots
1 1/2 cups seitan
1 teaspoon dark sesame oil
6 flour tortillas

Steps:

  • Cut the Seitan into strips 1 by 1/2 inch.
  • Preheat oven to 350°F Grease a 8 inch baking dish.
  • Saute the onions until just soft [for about 5 minutes.] Add garlic, ginger and salt and cook for a minute or two more. Add the cabbage and cook until the cabbage is limp. Stir frequently.
  • Now add the chili paste, carrots and seitan. Cook until vegetables soft and brown [about 10 minutes] If needed add water or broth to preent sticking. When you finish sprinkle the sesame oil over the vegetables and remove from heat.
  • Divide filling and place in tortillas. Roll and place seam down in baking dish. Cover tightly with foil and bake for 15 minutes or until hot. Serve ASAP.

  • Cook bacon in a large Dutch oven over medium-high heat until crisp. Remove bacon from pan, reserving drippings; set aside. Add half of beef to drippings in pan; cook 5 minutes, browning on all sides. Remove beef from pan. Repeat procedure with remaining beef.
