BEET SALAD WITH ROASTED FENNEL, BLOOD ORANGE AND GORGONZOLA VINAIGRETTE

Steps:
- . Preheat the oven to 400°F and rub the beets with olive oil and salt. Wrap the beets in foil and roast until tender, about 45 minutes. Cool, peel the beets, and slice.
- Trim and core the fennel (reserving the fronds) and halve. Drizzle with olive oil, salt, and pepper and roast for the last 30 minutes the beets are cooking until tender and caramelized. Slice the fennel into thin slices.
- . Heat the sugar in an even layer in a skillet to make a caramel. Let the sugar caramelize until a deep golden brown. Stir in the walnuts and then pour on a parchment-lined tray immediately. Sprinkle with salt and let cool completely. Once cool, chop the walnuts.
- . Combine the olive oil, balsamic, Dijon, gorgonzola, salt, and pepper in a shaker. Shake until emulsified.
- . Arrange the sliced beets, fennel, blood oranges, and Cara Cara on top of mixed greens. Drizzle with the vinaigrette and top with the caramelized walnuts and fennel fronds.

- Preheat oven to 400°F. Place all beets in 9x9x2-inch metal pan. Drizzle 3 tablespoons oil over; sprinkle with salt and pepper and toss to coat. Cover pan with foil and roast beets until tender, about 1 1/2 hours. Uncover and cool completely. Peel beets, cut into 1/2-inch cubes, and place in large bowl, each color on opposite side; sprinkle with salt and pepper. Do ahead Can be made 1 day ahead. Cover and chill. Bring to room temperature before using.
- Cut all peel and pith off oranges. Working over medium bowl to catch orange juice, cut between membranes, releasing segments. Add 1 cup orange segments, fennel, mint, parsley, hazelnuts, and shallot to bowl with beets. Transfer 2 teaspoons orange juice to small bowl; whisk in vinegar and remaining 2 tablespoons olive oil. Season dressing to taste with salt and white pepper. Stir into beet mixture.
- Mound salad on large platter. Drain remaining orange segments; arrange on salad. Sprinkle with cheese.

- Trim 6 medium beets; reserve the greens. Rub the beets with olive oil; season with salt and pepper. Wrap individually in foil and roast at 350 degrees F until tender, 1 to 1 1/2 hours; let cool. Peel and cut into wedges. Cook the beet greens in boiling water, 3 minutes; drain, squeeze out the excess water and chop. - Preheat the oven to 425 degrees.
- To roast the beets: Place the beets, 1 tablespoon olive oil, 1/4 teaspoon salt and 1/8 teaspoon pepper in a roasting pan and cook until the beets are tender, about 40 minutes. When they are cool enough to handle, remove the skins and slice the beets.
- Place the beets in a medium-sized mixing bowl and toss with the remaining 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper.
- To make the Walnut Gorgonzola Dressing: Place a large skillet over medium-high heat and, when it is hot, add the extra-virgin olive oil. Add the walnuts and cook until they are browned, about 2 to 3 minutes. Transfer to a small mixing bowl and when the walnuts have cooled to room temperature, add the onion, basil, vinegar and salt.
- Place the Gorgonzola cheese and cream in a blender or food processor fitted with a steel blade and process until smooth. Transfer to the bowl with the walnuts and mix to combine.
- Divide the arugula between 4 to 6 plates and top with equal amounts of beets. Serve immediately with a large dollop of Walnut Gorgonzola Dressing.

- If you can roast the beet, I'd recommend you do - peel, dice in approx 3/4in/2cm pieces and roast the pieces tossed in a little olive oil until tender, around 45-60mins, at 400F/200C (a little lower is fine). Allow to cool. I would do this if I was already using the oven for other things, and fine to do a day or two ahead, but it's probably not worth the effort otherwise.
- Place the arugula on two plates and lay the beetroot and orange on top and scatter over the cranberries and pistachios.
