  • Bring 1/2 cup each honey and water to a simmer, whisking to dissolve the honey. Let cool completely. For each cocktail, combine 2 ounces gin, 3/4 ounce fresh lemon juice and 3/4 ounce of the honey syrup in an ice-filled shaker. Shake and strain into a glass; garnish with a strip of lemon peel.

1/2 cup honey

Steps:

  • Vigorously shake the gin, simple syrup and lemon juice over ice, and strain into a chilled cocktail glass. Garnish with the lemon peel.
  • In a small saucepan over medium heat the honey and 1/2 cup water until incorporated and dissolved. Cool to room temperature before using.

2 tsp honey
50ml dry gin
25ml lemon juice
ice
lemon zest strip, to serve

Steps:

  • Put the honey in a small jug or cup and add 1 tsp freshly boiled water. Stir well until smooth and the honey is nicely thinned down.
  • Pour the honey mixture into a cocktail shaker along with the gin, lemon juice and a large handful of ice. Shake until the outside of the shaker feels very cold.
  • Double strain into a cocktail glass or a coupe and garnish with a curled strip of lemon zest - you can do this by wrapping it tightly around a spoon handle.
