SPICE RUBBED PORK ROAST IN BEER GRAVY



Spice Rubbed Pork Roast in Beer Gravy image

I tried this when we were bored with 'boring pork' and 'boring gravy'. The rub has a kick and the gravy was a hit with the kids!

2 tablespoons butter
2 cloves garlic, minced
2 teaspoons ground black pepper
1 teaspoon dried oregano
½ teaspoon garlic powder
½ teaspoon red pepper flakes
½ teaspoon dried thyme
½ teaspoon dry mustard
1 pinch dried marjoram
1 pinch dried basil
1 (3 pound) boneless, center-cut pork loin roast
1 ½ teaspoons salt
16 ounces beer
3 tablespoons all-purpose flour
1 tablespoon garlic salt
½ teaspoon onion powder

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Melt butter in a skillet over medium-low heat. Cook and stir minced garlic, pepper, oregano, garlic powder, red pepper flakes, dried thyme, mustard, marjoram, and basil in hot butter until fragrant, thick, and easy to spread, 2 to 3 minutes.
  • Place pork in a roasting pan. Spread garlic mixture over the top of the roast and season with salt. Pour beer into bottom of the roasting pan and cover pan with aluminum foil.
  • Roast in the preheated oven for 45 minutes. Remove aluminum foil and continue to cook for 1 hour. Increase temperature to 425 degrees F (220 degrees C) and cook until pork is slightly pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Remove roast to a plate to rest and tent with aluminum foil. Place roasting pan over medium-low heat and whisk flour, garlic salt, and onion powder into the pan drippings. Cook and whisk until gravy thickens, about 5 minutes. Serve roast with gravy.

2 medium onions, thinly sliced
fresh sage, 5-6 leaves, finely chopped
fresh thyme, leaves of a few sprigs
2 tbsp butter
2 tbsp brown sugar
2 tbsp flour
12 oz dark, malty beer (porter, stout, brown ale, Dunkel lager, amber lagers)
1 cup beef stock

Steps:

  • In a sauce pan over medium heat melt the butter.
  • Add the thinly sliced onions, brown sugar, salt and pepper, sage and thyme and mix well.
  • Cook until the onions are translucent and are beginning to caramelize.
  • Add the flour and stir to incorporate, about one minute.
  • Add the beer, stir and let reduce for a couple of minutes.
  • Add the beef stock, stir and let reduce.
  • In about 7-10 minutes the gravy will have thickened enough. Remove from the heat and transfer to a suitable container.

2 teaspoons garlic, minced
1 tablespoon soy sauce
2 tablespoons brown sugar, packed
1/4 teaspoon ground allspice
1/4 teaspoon cayenne
1/2 teaspoon salt
4 lbs pork shoulder
2 1/2 cups beer
2 bay leaves
6 cups sliced onions, tightly packed
2 tablespoons cornstarch, dissolved in
3 tablespoons water

Steps:

  • Combine the first 6 ingredients in a small bowl to make a paste.
  • Rub into the roast.
  • Pour the beer into a pressure cooker and add the bay leaves.
  • Set the rack in place.
  • Place half of the onions on the rack and set the pork on top.
  • Spread the remaining onions over top.
  • Lock the lid in place and bring to high pressure over high heat.
  • Adjust the heat to maintain high pressure and cook for one hour.
  • Let the pressure drop naturally or use a quick release method.
  • Remove lid.
  • If you cooked the pork at high pressure for the entire hour, your roast will be done.
  • Remove meat to platter and let set for 15 minutes, covered with foil.
  • Remove rack and bay leaves.
  • If there is more than 2 cups of liquid, boil over high heat to reduce.
  • There should be 2 cups of liquid to make the gravy.
  • Whisk in cornstarch and cook until gravy thickens.
  • Carve the meat and serve the onion gravy mixture over top.

4-1/2 lb boneless pork loin roast
24 oz beer (2-12 oz cans)
5 c rough chopped onions
2 c rough chopped carrots
1 Tbsp olive oil
1 tsp Mrs. Dash garlic & herb seasoning
1/2 tsp allspice
1/2 tsp ground cloves
1 tsp fine sea salt
1/4 tsp freshly ground black pepper
1 envelope Goya ham concentrate

Steps:

  • 1. Use a heavy, and deep pot to brown the pork loin in the oil over medium-high heat, starting fat side down, about 10 minutes per side. Remove pork and keep warm.
  • 2. Add a bit more oil, if necessary. Add the onions and carrots to the pan. Cook about 10 minutes or until the onions are soft. The carrots do not have to be soft to continue.
  • 3. Stir all the spices into the beer.
  • 4. Put pork back into the pot with the veggies. Pour the beer and seasonings over the pork.
  • 5. Cover and bake at 350 degrees for about 2 to 2-1/2 hours or until pork is fork tender.
  • 6. Take pork out of the pot, cover with aluminum foil and rest for about 10 minutes.
  • 7. Meanwhile, use an immersion blender to puree the veggies into the liquid in the pot.
  • 8. I've never added any flour to thicken since the veggies make a nice thick broth with the juices & beer. Keep warm over low heat, until ready to serve.
  • 9. If you do not have an immersion blender, pour the liquid and veggies into a bowl. Put about 1/2 at a time into a food processor or blender. It will be hot so be careful and do not try to do too much at a time. Keep a towel folded over the processer/blender lid to be sure it doesn't allow hot liquid to spurt out the top.

PORK CHOPS WITH BEER AND BACON GRAVY

4 bone-in pork chops, just over 1-inch thick
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, plus a drizzle
2 thick slices smoky bacon from deli counter, diced 1/4-inch
1 medium onion, diced 1/4-inch
1 rounded tablespoon all-purpose flour
1 bottle amber to dark German beer
1/2 cup stock
Chopped parsley, for garnish

Steps:

  • Season the chops liberally with salt and pepper. Heat the extra-virgin olive oil in a skillet over medium-high heat. When the oil smokes, add the chops and cook, turning once, until caramelized and the meat is just turning firm, about 10 to 12 minutes. Remove to a platter and cover with foil, reserve.
  • Add a drizzle more oil to the pan, add bacon and brown for 2 to 3 minutes. Stir in the onions and saute over medium heat with the bacon until soft, 6 to 7 minutes. Sprinkle in flour, stir for 1 minute, then add the beer. Cook until reduced by half, 1 to 2 minutes more, then whisk in the stock. Remove from the heat and season with pepper. Pour the gravy over the chops, sprinkle with parsley and serve immediately.

2 tablespoons butter
1 large red onion, thinly sliced
2 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
2 (12ounce) bottles beer (not dark)
1/2 cup Dijon mustard
1/4 cup honey
1 (3 1/2) pound boneless pork loin, tied
2 tablespoons vegetable oil
1 tablespoon butter, room temperature
1 tablespoon all purpose flour

Steps:

  • Melt 2 tablespoons butter in heavy large saucepan over medium high heat. Add onion and saute until tender and golden brown, about 15 minutes. Add garlic, cumin, cinnamon and allspice and stir 1 minute. Add beer, mustard and honey and bring to boil (sauce will foam). Remove from heat. Puree in batches in blender until smooth. Cool to room temperature. Pour into baking dish. Add pork loin; turn to coat. Cover and refrigerate 8 hours or overnight, turning occasionally.
  • Preheat oven to 375 degrees F. Remove pork from marinade; pat dry. Reserve marinade. Heat oil in heavy large skillet over medium heat. Season pork with salt and pepper. Add to skillet and brown on all sides. Transfer to baking sheet with rim. Roast in oven for 3/4 to 1 hour or until thermometer inserted into thickest part registers 155 degrees F. Transfer pork to work surface; reserve any pan juices.
  • Combine pan juices and marinade in saucepan. Bring to boil. Reduce heat to simmer. Mix butter and flour in small bowl until smooth paste forms. Add to sauce and simmer until sauce thickens. Season to taste with salt and pepper. Cut pork into slices. Pour sauce over.

1/2-1 teaspoon whole cloves
4 lbs pork loin, bone-in rib end
1/2 teaspoon pepper
2 tablespoons vegetable oil
4 medium onions, chopped fine or sliced
1 teaspoon cumin or 1 teaspoon caraway seed
2 cups chicken stock (or 1 c stock & 1 c white wine)
1 (5 1/2 ounce) can tomato paste
2 tablespoons cider vinegar
4 garlic cloves, minced
2 bay leaves
1/2 teaspoon salt
1/4 cup cornstarch
1/4 cup water
1/4 cup fresh parsley, minced (optional)

Steps:

  • Stick cloves into pork, sprinkle with pepper.
  • In a large skillet, heat half the oil on medium -high and brown pork on all sides (10 mins).
  • Move pork to the crock-pot. Pour off fat in pan.
  • ONION GRAVY; heat the rest of the oil in the skillet, saute onions and cumin seeds until golden.
  • Add stock, (wine), tomato paste, vinegar, garlic, bay leaves and salt. Mix thoroughly, and bring to a boil. Scrape into crock pot.
  • Cook on low until pork is tender - about 6 hours.
  • Transfer pork to a plate, tent with foil.
  • Skim off any fat from the gravy. Whisk cornstarch with water and stir into gravy. Increase heat to high and cook, covered until thickened, about 15 minutes.
  • Discard bay leaves. If you would like a smoother gravy, use a stick mixer and give the gravy a wiz! Stir in the parsley (optional).
  • Serve pork with gravy. Goes great with mashed potatoes!

1 bone-in pork shoulder roast (5 to 6 lb)
10 cloves garlic, cut lengthwise in half
5 teaspoons Cajun seasoning
2 tablespoons vegetable oil
3 medium onions, halved lengthwise, sliced
3 stalks celery, chopped
1 3/4 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
3 tablespoons Gold Medal™ all-purpose flour
5 tablespoons cold water
Fresh thyme sprigs, if desired

Steps:

  • Heat oven to 325°F. Make 20 small, deep cuts in pork roast; insert garlic cloves in cuts. Tie roast with kitchen string, securing at 2-inch intervals. Rub Cajun seasoning over pork.
  • In large heavy skillet, heat oil over high heat. Add pork; cook 2 minutes on all sides or until browned. Remove from skillet. Add onions and celery to skillet; cook over medium heat 5 to 8 minutes, stirring frequently, until tender. Place onion mixture in ungreased roasting pan; top with pork. Add broth to pan. Cover loosely with heavy-duty foil.
  • Roast about 2 hours or until meat thermometer inserted into center of pork reads 145°F. Remove pork from pan to platter; cover with foil and let stand at least 3 minutes.
  • Pour pan drippings through strainer into 2-cup measuring cup. Discard solids. Add broth or water to measure 2 cups, if necessary. In 2-quart saucepan, mix flour and cold water with whisk. Stir in pan drippings. Cook over medium-high heat 6 to 7 minutes, stirring frequently, until thickened. Serve pork with gravy. Sprinkle with thyme sprigs.

This is my family's favorite way to have roast pork. I change the seasonings slightly a lot. I have been watching them lately in order to post so here it is. Time spent sitting wih rub on is not included.

1 (3 -5 lb) pork loin
1/8 cup brown sugar
1 tablespoon dry mustard
1 tablespoon salt (I use Seasoning Salt)
1 tablespoon sage
1 tablespoon thyme
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup beef stock
2 tablespoons Worcestershire sauce
1 teaspoon Dijon mustard
1 tablespoon soya sauce
1/2 cup port wine or 1/2 cup sherry wine
2 large vidalia onions or 4 ordianry sized onions
1 cup beef stock or 1 cup chicken stock
1/4 cup port wine or 1/4 cup sherry wine
1 tablespoon cornstarch

Steps:

  • Mix all the dry seasonings in a small bowl.
  • Pierce the meat all over with a fork.
  • Rub with seasoning.
  • Let stand at room temperature for 2 - 4 hours.
  • Spray a roasting pan with cooking spray for ease of cleanup.
  • Thinly slice onions and spread out in bottom of pan.
  • Place roast on top of onions.
  • Mix 1 cup beef stock, 2 tbsp Worcestershire sauce, 1 tsp dijon mustard, 1 tbsp soya sauce, and 1/2 cup port, or sherry in 2 cup measuring cup.
  • Drizzle a little of the liquid over onions.
  • Keep adding small amounts of liquid to pan every 1/2 hour or so to keep onions moist but allow them to get carmelized.
  • Roast @ 350F until internal temperature of 165F is reached.
  • Remove meat from pan and tent with foil to allow juices to settle.
  • Transfer pan drippings and onions to a sauce pan.
  • Mix cornstarch with stock and add with port.
  • Cook and stir till nicely thickened.
  • Serve sauce over meat.
  • Great on mashed potatoes.
