Brats In A Blanket With Beer Mustard Cheese Sauce Recipe by Tasty image

These brats are simmered in a pale ale beer and onion broth for extra flavor, then wrapped with sauerkraut in cozy pretzel blankets that are crunchy on the outside and chewy and tender on the inside. Serve them with a super easy-to-make beer mustard cheese sauce for dipping!

½ stick unsalted butter, divided
½ medium yellow onion, thinly sliced
6 bratwurst sausages
24 oz pilsner-style beer
¼ cup baking soda
16 oz premade pizza dough
2 tablespoons all purpose flour, plus more for dusting
6 tablespoons sauerkraut, plus more for serving
2 large egg yolks, beaten
1 tablespoon flaky sea salt
1 cup whole milk
2 tablespoons heavy cream
2 tablespoons worcestershire sauce
½ teaspoon McCormick® Garlic Powder
1 pinch McCormick® cayenne pepper
2 tablespoons whole grain mustard
1 teaspoon kosher salt
4 oz sharp cheddar cheese, grated

Steps:

  • Preheat the oven to 450°F (220°C).
  • In a large pot, melt 2 tablespoons of butter over medium-high heat. Add the onion and sauté for 2-3 minutes, until beginning to soften. Add the bratwurst to the pot and pour in the beer. Bring to a boil, then cover and cook for 8-10 minutes, until the bratwurst are white and firm, but not completely cooked through. Transfer the sausages to a paper towel-lined plate and set aside. Reserve ½ cup of the beer and discard the rest.
  • Bring a large pot of water to a boil over high heat. Once boiling, add the baking soda and stir to dissolve.
  • Line a baking sheet with parchment paper.
  • While the water is boiling, roll out the pizza dough on a lightly floured surface to a 10 x 6-inch (25 x 15 cm) rectangle, about ¼ inch (6 mm) thick. Cut the dough in half horizontally, then cut each half into 3 triangles.
  • Set a dough in front of you with the short end at the bottom and roll out to flatten slightly. Place a sausage at the bottom of the triangle and scoop a heaping tablespoon of sauerkraut above the sausage. Pull the bottom edge of the dough over the sausage and sauerkraut, tucking snugly, then roll up and over the tip of the triangle to seal. Repeat with remaining dough, bratwurst, and sauerkraut.
  • Working in batches of 2-3, carefully drop the wrapped bratwurst into the boiling water for 20-30 seconds. Use a slotted spoon to remove the bratwurst and transfer to the prepared baking sheet.
  • Let the dough dry out for about 5 minutes, then brush with the egg yolks and sprinkle generously with flaky sea salt.
  • Bake for 20-25 minutes, turning halfway through, until the dough is deep golden brown and the bratwurst begins to brown.
  • While the bratwurst are baking, make the cheese sauce: In a medium saucepan, melt the remaining 2 tablespoons butter over medium heat. Whisk in the flour and cook for 2-3 minutes, until golden brown. Whisk in the reserved beer, milk, and cream until smooth. Add the Worcestershire sauce, garlic powder, cayenne, mustard, and kosher salt. Cook until the sauce is bubbling and thick, whisking occasionally to prevent burning, 2-4 minutes.
  • Whisk in the cheddar cheese and cook for 2-3 minutes, until completely melted and smooth. Transfer the sauce to a serving bowl.
  • Serve the hot bratwurst in a blanket and cheese sauce immediately, along with additional sauerkraut if desired.

1 package (5 count) Johnsonville Original Brats
1 bottle of your favorite beer
1 sweet Vidalia onion, sliced
1 Tablespoon butter
1 Tablespoon butter
1 Tablespoon all purpose flour
1/2 cup milk
1/4 cup beer
1 cup shredded cheddar cheese
1/2 teaspoon horseradish
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
5 pieces bacon, cooked and crumbled
1 Tablespoon fresh minced chives
Buns for serving

Steps:

  • Melt 1 Tablespoon butter in a large skillet over medium heat. Add sliced onion and brats; cook approximately 10 minutes, turning occasionally to brown all sides.
  • Add beer to pan, reserving 1/4 cup for the sauce. Reduce heat to medium-low and simmer for about 15 minutes, until beer has reduced and brats are no longer pink inside.
  • Prepare beer cheese sauce by melting 1 Tablespoon butter in a small saucepan. Stir in flour and seasonings and cook, stirring, 1-2 minutes. Add milk and beer all at once. Remove from heat and stir in shredded cheese and horseradish.
  • Place brats in buns, then top with beer cheese sauce, crumbled bacon, and minced chives.

2-1/4 cups frozen pepper and onion stir-fry blend

  • In a large skillet, saute bratwurst for 1 minute. Add stir-fry blend; cook 3-5 minutes longer or until vegetables are tender. Set aside and keep warm., In a large bowl, combine cheese and flour. In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. 1 cup onion, minced
1 cup celery, minced
1 cup carrot, sliced
1/4 cup flour
1 lb potato, peeled and diced
6 cups chicken stock
1 (12 ounce) can beer
1/2 teaspoon mustard powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon red cayenne pepper
1/2 cup half-and-half (or milk)
1/4 teaspoon Worcestershire sauce
2 cups grated sharp cheddar cheese
3 bratwursts, cooked and sliced

Steps:

  • Heat olive oil in soup pot over medium heat.
  • Add onion, celery and carrots.
  • Cook about 15 minutes or until tender, stirring every so often to keep from sticking.
  • Stir in flour, cook about 1 minute.
  • Add potatoes, stock and beer.
  • Bring to a boil and cook 10- 15 minutes or until potatoes are tender.
  • Add mustard powder, granulated garlic, salt and peppers.
  • Combine milk and Worcestershire sauce in a small bowl.
  • Stir into soup.
  • Remove soup from heat.
  • Add cheese, stirring until cheese is melted and smooth.
  • Remove 2 cups of vegetables with some liquid and add to a blender or food processor.
  • Puree.
  • Stir back into the soup to give it nice body.
  • Return to low heat and add sliced, cooked bratwurst.
  • Cook until bratwurst is warm- about 5 minutes.

This is our family's way of making beer brats! We love them this way and they are even better re-grilled the next day! Depending on how much you drink while you are prepping you may need more or less beer!

3 (12 ounce) cans beer
5 uncooked bratwursts (we like Johnsonville best)
1/8 cup yellow mustard
1/8 cup stone ground mustard
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 medium onion, cut into rings about 1/3 of an inch thick
sauerkraut (optional)
1 large red bell pepper (cut in rings the same size as the onions)
5 hot dog buns or 5 hoagie rolls

Steps:

  • Get a large grill safe dish (we use the reynolds disposable roasters), place the onions, red bell peppers (if using) and brats in the bottom.
  • Mix the two mustards, Worcestershire sauce and brown sugar together and dump this mixture over the brats and onions etc.
  • Stir until the onions and brats are evenly coated.
  • Pour enough beer into the dish to cover the brats and onion, then give it a slight stir to mix the mustard mixture with the beer.
  • Put in fridge and let sit at least 30 minutes, but an hour or two is much better. When marinating time is up, remove and let come to room temperature.
  • Pre heat your grill to medium high heat.
  • Place the container directly on the grate and cook the brats in the beer mixture for 10-15 minutes, until the beer is steamy and hot. Remove from heat. But do not discard yet.
  • Turn the grill down to medium heat (or however you like your brats grilled).
  • Remove the onions and brats from the beer mixture. Then place the brats on one side of the grill and the onions on the other.
  • Grill brats and onions, turning occasionally until done. Each time you turn, baste with the remaining beer mixture. The onions should be somewhat caramelized and soft.
  • Discard the remaining beer mixture and serve on buns or hoagies with sauerkraut and other condiments as desired.

Steps:

  • In a large skillet, brown the bratwurst on both sides over medium high heat.

  • Remove beer cheese from heat.
  • Cover a large plate with a layer of tortilla chips. Top with beer cheese.
  • Slice bratwurst and arrange over nachos and add desired amount of nacho fixings.
  • Repeat with another layer of chips and fixings.
